Service wasn't great and the table I sat wasn't the cleanest, but the food was surprisingly good. I ordered the pan-fried salmon with lemongrass sauce on eggplant. The sauce had a great balance of sweet, sour, and savory, and the eggplant and fish were cooked perfectly. The portion was huge and heated well as leftovers. There doesn't seem to be many Asian restaurants in Boulder, so I would definitely check Chez Thuy out if you appreciate good food and don't mind a mediocre dining experience. read more

Called ahead to confirm they were indeed open ~ "Yes, [...], no reservations needed." Prompt seating upon arrival. Water service was prompt. Huge menu; we were given appropriate amount of time to review and decide upon our order. Yay! So far, so good. Vietnamese Egg Rolls appetizer arrived in a timely manner and tasted excellent! Our entrees of Chicken Vermicelli and Seafood-stuffed Tofu were superb. Huge portions. Seriously, huge. Limonate was Perfect blend of sweet and tart and house Merlot was house Merlot. Food was excellent. Price for food quality and portion was a solid value. Table service, after initial ordering, was an exercise in "flag 'em down however and whenever you can," turning what would have been a great night out into a mediocre experience. Every time I come home to Boulder to visit, this is always my first meal. I don't understand how this tradition happened but I'm not mad about it. Chez Thuy May not be the best pho or asian fusion restaurant but it definitely hits the spot when you're craving something good. The menu has something for everyone whether it's pad Thai, pho, general Tsao chicken, or curry and the price is very very reasonable. I like coming here for lunch to indulge in the lunch menu - the portion sizes are massive, the food tastes very clean and fresh and I've never ordered something that Was bad over the past five years of dining here. My go to however is their brisket pho - the broth tastes a bit watered down and not as hearty as other paces I have been to but I just douse it in oyster sauce and sriracha which solves the problem :) and plus the meat is always super good and the noodles are cooked very well so it's not a huge deal! The spring rolls are also a family favorite - they give you four per order which is massive and the rolls themselves are jam packed with veggies noodles and meat; definitely a great way to start off the meal. The only negative is that the service can be a bit cold and off-putting at times and the staff will keep you waiting or straight up prioritize their own agenda before your own...which can be a bit annoying at times. But overall the food comes out quick and it always comes out just as you would expect. Many friends have raved about this restaurant in Boulder on 28th St. close to Valmont. Tried it with a friend today. Had the General Tao's Sesame chicken. It was tempura like.. not hot like General Tao usually is. My friend had the green curry, not my favorite but she liked it. We sat in the corner at 11:45 am and the place became packed by noon! Over the years, I've always enjoyed going to the restaurant, but now I discovered that Their takeout is pretty efficient and I find I can get one of their dishes and eat for two days. May be the best Boulder can do at this point. From weaker to stronger - The tofu dishes - though large, were way way way too sweet. Get a sugar high, then low, after eating the food! Yikes. The pho bowls were huge as well, though the broth wasn't as rich or tasty as it could be. The pieces of tendon were decently soft and tender. The broth was too salty. The appetizer was the best - some sort of leaf (sesame?) surrounding a Thai sausage. A bit dense as a piece of meat, but decently flavored. Chez Thuy has a huge selection of Viet food, but I can only vouch for their pho, bun bo hue, and pork eggrolls. First of all, the portions were ginormous. The waitress said there were 3 eggrolls in an order, but they were super long and equivalent to 6 short egg rolls. None of us were able to finish our bowls of soup, even though they tasted good and authentic (however, they do have vegetarian and lobster pho on the menu, which is not traditional and shouldn't be called pho at all, but I digress). Pho was pricey if you want more than one cut of meat (tai was $12.95, dac biet was $15.95). Bun bo hue only had brisket (no option for pig knuckle or pig blood here) and the basic accompaniments. I also wish they used thicker noodles for bun bo. As for drinks, I would not get their Thai iced tea again. It had waaayy too much condensed milk, and we couldn't drink it until the ice melted. Went here for years and had 1 issue with my sweet and sour chicken being half broccoli. Instead of correcting it or offering a new order they lectured me about checking a deep friend order before I leave and defending giving me half broccoli instead of chicken when I never asked for broccoli. Really upsetting to have to leave this review. I left a positive review before and I don't regret it however customer service is really overshadowing their great food. Maybe not so great anymore actually... I order takeout and I noticed a hair in my food after I ate about half of my dinner. I was really grossed out and I called asking for a refund, they were really suspicious about it and kept asking questions about the hair. I even offered to send a picture. Came here tonight, what a mistake my fried rice was brought out hardened and cold, looked like maggots like it's been sitting out a long time. I didn't trust the food after that and asked for it all to be removed from the bill I didn't want to eat there anymore. The super rude waitress refused and still charged me and forced me to pay for unfit for consumption food. I didn't even eat any of the food. The restaurant definitely has family vibes and it's a comfy place to come sit down, especially on a colder day. I've eaten at a lot of pho spots and this is the only one that has black pepper in their broth. I know it's simple but it's so delicious. All the garnish like the basil looked very fresh and was a good gauge into the restaurant's quality control. Summer rolls definitely hit the spot as well. I only ordered food here once but it will not be the last time and here is why. A friend of mine recommended me this place and I decided to order take out. I order 3 plates and an appetizer, I arrive to pick the order and they already have the food ready for me as expected. But the surprise arrived when I got home. I got 3 completely different plates, a rice bowl and no appetizer. It was obvious they have handed me the wrong bag. When I called them to explain the situation they immediately handed the phone to the manager on duty and he was also surprised. Apparently the other person that got my order had not called yet. They offered me to come back and get my original order but by that time I had already put the kids to bed and was hoping to dine quietly and not get into my car again, nor wait any longer to eat. Took over 20 minutes to even get water, way over an hour to get food. We ate, no drinks and took us two hours from time we sat. They've never cared but the food used to be good. Noodle Basket was cold, zucchini, green beans and shrimp-cold. Didn't want to take a chance of waiting any more. The Soft Noodle plate was better, although the sauces seemed the same and too sweet. Busser was nice and attentive. Server never asked if ok. Had to chase him down to get our bill! Used to eat here a lot when we lived here. Disappointed. Now understand why only 3 stars. read more

So, the first time I came here in the mid 90s, I now realize that I was comparing it to Chinese and other less authentic/less healthy Asian places & I didn't really like the foods i didn't come back for years & I regret that choice. I have become more in tune with healthy eating and authentically clean tasting food. For probably the last 12 years we get takeout here regularly .. and the whole family absolutely loves it!!! The staff are very practical & the food is outstanding & the portion sizes are generous. Most dishes are, to some other reviewer's dismay, high in fresh, quality veggies & they taste delicious! We love the curry dishes (which come with brown or white rice), we love the veggie Pad Thai with tofu and lots of vegetables in it. Ordered some take out for the first time this week and was a bit disappointed. The restaurant wa recommended by a friend who hadn't been there in a while. I ordered a pad Thai and panang curry. The fellow who took the call had a little trouble getting the order straight but it was repeated three times, so I felt it was likely to be correct. However, when I paid and looked at the order, the Panang curry was yellow and didn't smell right. The girl behind the counter said it was yellow curry and that they didn't have panang curry. Okay - so why didn't the person who answered the phone say that? Lack of command of the English language I guess. It's not a crime, but then hire a kid to take orders instead. I told them I wasn't taking the order and would take a red curry instead. They took it back but what I got in replacement tasted like a yellow curry dish with some red curry sauce stirred in. It wasn't tasty. The pad Thai was fine, but I'm not likely to go back there. read more

I have been trying to find the best pho in Boulder, and I will say this - Chez Thuy's pho wasn't bad. It might be be the best in Boulder... but I was so turned off by the service, I don't think I'll return. I think it's basic for a customer to be greeted after entering the establishment. Nothing. The bartender saw that I entered (aka we had direct eye contact) and ignored me. I then awkwardly stood around the bar area (there's no other space, really) and then after 5 minutes or so, flagged down a waiter. Apparently, I was supposed to line up in *this* area next to the bar... and because I can't read minds and didn't know to do this, ended up waiting longer for a table. The table service in itself was barely above decent and I was glad to eat and get out of there. The pho: pretty good broth. They added some extra sesame seedy/ lemongrass flavored seeds on top which gave it a little twist - not bad. With that said, a medium pho entree plus tip cost me nearly $20, which is more than I've ever spent on one bowl of pho. If I'm recalling correctly, there are only two sizes - medium and large. Super amazing food and beautiful restaurant... the worst service i've EVER received and that's unfortunately not an exaggeration. It started with me and my friend randomly picking a vietnamese restaurant to go after our hike. With hungry bellies I was looking forward to eating at Chez Thuy. I walked in and everything looked super promising. Beautiful family "vibe" restaurant with lush plants and cultural decor. This is the type of thing I love. Accompanying the ambiance, I was also thoroughly delighted at how many vegetarian and i'm assuming vegan options they had. I (a vegan) had too many options to choose from, while typically I usually have one option at most restaurants. We ordered our food while one of our servers came up and asked us what we wanted. We had two servers, one man who was mostly refilling our water and checking on us often, and another woman who just took our order, ticket, and checked once. I ordered the taro stuffed tofu, and tried to ask a question about the coconut sauce that came with it. The server ignored me so I just thought she didn't hear me, and I went on and ordered that sauce anyways (there was 2 sauce options). No big deal. The rice came and then the food, it was super delicious. we both enjoyed our food, and the ambiance other than a 'very matter of fact' server, again no big deal. While the male server checked in with us for water refills, I asked him if there was free refills on the rice. He said there was, so I asked for some more. After some time had passed without extra rice and we were mostly done eating, the woman came and gave us our ticket, some togo boxes, and rang it up. Again I am pretty easy going and just thought our female server was just matter of fact and blunt, not a big deal. The guy server came by and by that time we had our leftovers packed up and were in the process of paying. so I asked if I can just get the extra rice togo. We finished signing our receipt, had our stuff and were heading out the door when the woman stopped us rather rudely and asked if we paid for the rice. Since the man told me it was free rice, I was kinda surprised. I said no I didn't pay for it and she said 'you have to pay for it, its $2.18'. I un-enthusiastically agreed of course and pulled out my card. She had to ring me up at the bar since we were literally walking out the door. She then said it was because its "togo" which is why I have to pay. Super confusing since I probably could've put it into a box myself. I didn't mention that the guy said it was free because it looked like they were arguing about it before she approached us, and he also seemed like he was new. I don't know if that's true or not but I thought I didn't want to "make a scene" anyways. Over all she was just acting as if we were trying to steal it the way she approached us and stopped us in the middle of the restaurant.... all over a $2 box of rice lol. I literally have rice at home that I would've much rather ate then having to deal with all this crazy rice drama haha. The situation was pretty embarrassing and really turned me off of the restaurant, which is disappointing because I loved everything else. Looking back and talking about it with my friend I think I should've said something but I already felt very "unappreciated" by the female server. She overall just gave me the feeling that I was a burden to her, don't get me wrong i'm not one of those people that expects servers to kiss up to me at all. I consider myself to be very understanding and tolerant. But my experience was actually the worst i've ever been treated in a restaurant, so I can't deny that. I gave a 20% tip on the original ticket before I had to be rung up again for the $2 rice. My friend jokingly said I should've tipped less or told the server to take the box of rice out of the tip haha. I thought that was funny, but i'm generally a push over in these situations, so of course I didn't. Over all it's just a bummer especially since a situation like that can ruin the experience and good food. Don't let the mixed reviews fool you about this place - it is REALLY good. We went here for dinner our first night in Boulder. The place is packed, line out the door, obviously for a good reason. They are super efficient, and will get you seated promptly. They run a tight ship! We ordered the shrimp spring/summer rolls, vegetarian dumplings, and I had the pad thai. The shrimp summer rolls with peanut sauce were SO fresh and DELICIOUS. Really light and airy rolls, perfectly cooked shrimp with fresh cilantro and greens. The pad thai was massive. Could have actually split this among four people. It's a Vietnamese take on pad thai, but nonetheless, was delicious. The peanut sauce is very cooked through the egg noodles, unlike other places where it's just a light toss. My husband and mother-in-law got the pho. They didn't speak throughout eating, because there were just amazed by all the flavors and how perfect the beef/duck was. We will definitely go back if we're ever back in Boulder! read more

A friend recommended this place one time and we decided to try it for dinner. I saw it was labeled as Vietnamese and I was excited for delicious, flavorful soups. We got the combination soup and the green curry with chicken. The menu has probably 100 choices in it, which can be very overwhelming. The inside decor is alright, but nothing I would write home about. The soup was massive and while the meat inside was good, the broth lacked all flavor. The duck meat was the highlight, but the noodles weren't that great and overall it was underwhelming. The green curry had a lot of veggies and chicken in it. The sauce had decent flavor with some spice, but it wasn't something I would go back for. Overall I felt like it lacked fresh ingredients and flavor. I likely wouldn't return. read more
