We were looking for a place to eat dinner on Christmas Eve after attending the candlelight service at City Church Boulder (legit church, btw) and chose this spot based on the Google reviews my junior high daughter found online. And...WOW am I glad she found this place! Phenomenal Vietnamese cuisine! Fresh, authentic and a great variety on the menu. Our family has traveled in Vietnam for over a decade so we're pretty picky when it comes to Vietnamese food. Boulder Pho definitely checks all the boxes as the real deal. We had a variety of appetizers and entrees. All of which we scarfed down so fast that we didn't get pictures of. Here's the rundown: Appetizers: Vietnamese Spring Rolls - fresh & delicious! Pork Dumplings - fried PERFECTLY & so tasty. Pork was seasoned so well & the dumpling was crisp. A small outdoor corner mall-ish with lots of other eateries, yet Boulder Pho had a particular inviting ambiance; brightly lit, full walled glass entrance - it beckons - I walked in for some take out. Lovely place, service was prompt and unassuming -"take your time!" "You have a massive menu, another smile met my eyes, "take your time!" Came from SoCal and it was at the point in the trip where it's Viet food or it's over. We found this pho place and it looked pretty trustworthy compared to other places I found. I got the Small Rare Steak and Tripe Pho. The portions were perfect and enough to get me full. The meat was tender and the trip wasn't crazily chewy. I wish there was more trip in it though! The broth was a bit light in flavor and a bit oily, but not something that ruins the taste of the meal. Good Pho, but we paid extra for the Kobe beef and it wasn't more tender than the regular beef. The pho broth was decent. The women's bathroom had no toilet paper and I let the woman at the register know and it was not replaced. The Vietnamese egg rolls were good, but they served them with a sweet sauce rather than a sweet fish sauce. Vermicelli bowl is 10/10. Everything is right in the bowl from vermicelli to pork, beef and spring rolls (especially their spring rolls, you should other extra for your bowl). Their fish sauce is perfectly made. Pho is good but it didn't blow me away. The meat is good, but the broth and noodles are standard. It's enough to satisfy your craving though. This high quality is rare even in big Vietnamese hub such as Orange County, CA or Houston, TX. The light spring roll with the flavor bomb peanut sauce just goes so well together. They should sell that peanut sauce lol ;) I got the combination pho which is Steak, brisket, tendon, tripe and meatball. You have to order a medium or large bowl if you choose this and my husband got the Steak and Brisket. I'll be honest the tendon felt pretty uncooked and hard and stiff so I took it out. However, I ordered the grilled shrimp noodle bowl and to my surprise a portion of the shell was left on the shrimp I could have choked on the shell and brought it to the waitress attention who didn't speak a word of English! During our visit to Boulder, we stopped by to try the local pho. The space was large with ample seating indoors. The staff were very attentive and welcoming. We ordered the large combination pho with an extra order of Kobe beef. Proportions were generous and the ingredients were very fresh! The broth was delicious, and it warmed the soul. My mom was craving pho after being sick for a while. Boys and I decided to take her out and try this place. When we arrived, the place was full. They were able to clear up a table for us. Everyone had pho even though their menu had more dishes aside from pho. It must've been a pho night for everyone. Lol I had the rare steak and beef balls pho. I love hole in the wall pho places - and I never expect more from the decor or lighting or even the service. I've had some amazing pho in dingy environments. However, this looks like a place where the management and staff has kinda let it go. Worst part of the meal was when the servers sprayed the table next to ours with an extremely strong chemical smelling cleaner spray, which was very close to our food and from then on the veggies tasted like chemical cleaner, which caused me to feel ill and stop eating. Was in the neighborhood and was craving some pho so swing by here on a whim. Pho broth was good and flavorful on its own. Tried the sugarcane drink and it wasn't worth it. Fresh sugarcane tastes and is colored different. I was super excited to try this restaurant because it's so popular. However the first time experience wasn't what I expected. I will try them again in hopes this was a one off, but on this visit... The flavors of their pho broth are savory; however the broth was room temperature warm not hot and the meat in the pho was very tough to chew so several pieces were left in the bowl. Pho was honestly really weak, even compared to other pho places it was just bad. There was a distinct chemical smell as well, and I'm almost certain it's the generic disinfectant from restaurant depot. The wontons were actually good apart from the fact our server forgot to give us the dipping sauce for a good five minutes. I ordered the tendon and brisket pho, tendon was extremely tender however it seems like it was stored next to or with tripe as it tasted strongly of bile. Not to mention they don't tell you only get 1 slice of tendon per pho which was extremely disappointing. Beef was actually tender and soaked up the flavors of the broth wonderfully. Rice noodles were overcooked to the point of being mushy. Vegetables were a plus though they are very generous with their portions. My main thing other than the disinfectant taste being in the food was our server kept forgetting about us, and constantly was asking us what we ordered, which lead to a lot of delays in us getting our food. I get it I was a new server once however this guy was borderline unprofessional, it was a huge turn off from ever visiting this place again as it seemed like he could give less of a care about his tables. On top of insult to injury they over charged us for our receipt claiming we ordered beer, keep in mind the person I went with and I are under the legal drinking age, so the fact that was an issue is a major red flag. Whoa! Boulder Pho is legit some of the best pho I've had. Why? Let's discuss: PROs: ++ The location! Located on 28th and Valmont Boulder Pho is easy to find and, given that it's located in a strip mall, has a large shared parking lot. ++ The price! Prices are on point! For two rare steak pho (one medium and one small, spring rolls, crab cheese wontons, and a pork banh mi our bill was a mere $58! ++ The portions! Portions are large. Given the spread of food we ordered, we def had plenty of leftovers. ++ The space! It's large and modern. There's bench seating along the walls and tons of tables in varying sizes, so any group will be easily accommodated here. ++ The variety! There's a ton of offering on the menu here at Boulder Pho. I'm a sucker for rare steak pho and crab cheese wontons. My guest opted for the rare steak pho as well, but wanted to give the spring rolls a try. All of those items were completely delicious! We also ordered a banh mi to split, but I ended up taking most of that home. I wasn't terribly impressed with the banh mi. More about that later. ++ The broth! This broth is so damn flavorful. Any pho-lover knows that the broth is where it's at with pho. Boulder Pho def has that broth dialed in. ++ The beer! I love having a cold Sapporo with my pho on occasion. When they were out of my first selection, I was excited that they had my ol' faithful available. Cheers! CONs: -- The banh mi was not what I was hoping for. Most banh mi sandwiches that I have had featured a large portion of cilantro and various pickled veggies. While Boulder Pho's bahn mi had those things, it wasn't loaded. First I was excited that they were offering dine-in, which is hard to find these days in Boulder. Second, excited to see they had a wide variety menu. The Pho is what earns this little place the 4 stars. It was truly excellent with a deep flavor that you can definitely end up craving. I recommend you stay on the Pho menu. We veered off and ordered the sesame wings and fried rice and they were just average. The wings were actually so sticky that your fingers remained sticky even on the drive home. ha! Stick to Pho and this place will become a favorite. COVID Era Tip: They had what looked to be a well oiled take out process happening. As it turns out, I don't have to go all the way to Federal for good Pho!! Boulder Pho was a perfect spot for a cold boulder evening. I came here with a friend around 7pm on a Thursday, and there was no wait to be seated. The staff was super friendly and has us set with our appetizer in moments. The spring rolls with grilled beef, absolutely hit the spot. Definitely needed the sauce but that's why it comes with it I suppose? Not long after, our pho arrived. Rare steak and brisket, in a medium. The medium (plus half the app) was perfect for my hungry self. The meats were great, but next time I'll just go for pure rare steaK. That, plus the broth, were impeccable. I did add a bit of sauce and sriracha, and it was dialed in nicely. Temperature was good to dive in after a minute or so. It wasn't quite the best pho I've had, but it's dang close. And for boulder convenience it can't be beaten. The atmosphere is typical for what you'd expect, and it was warm and welcoming.
