I'm all about the atmosphere of a place and Chimayo is amazing! The decor was one of a kind. The tables up stairs are romantic and cozy. I just loved the look of this restaurant!! The food was good as well. I'd highly recommend the Duck Enchilada as a starter! The tortilla soup, was very good and a little spicy. We also had the trout fajita which was good. OK just wanted to state that the food was amazing. The service was amazing. What ruined the entire experience was the restaurant seated us in the downstairs area with huge groups of families. We were a party of 2. One particular group of families....had no control of their kids. That particular group had screaming kids and when we were leaving the restaurant we approached the hostess stand and stated that we thought that couples should be put in a quieter area. There was no remorse and they said we're sorry but that's the best they could do. Manuel was a wonderful waiter. He answered all of our questions about the sauces, veggies, how the meat should be cooked. Three of us had the elk entree. Manuel suggested we get it medium rare. Was delicious. Even the flash fried pasta accent was good. The others had ceviche, scallops and halibut. All hit the palate right on. For dessert we shared a chocolate cake with ice cream and nuts. 1 star is for the food. The service was fantastic. For the money it just wasn't what we were expecting. The chicken nachos were 2 over grilled pieces of chicken with a side of cheese nachos. The elk missed the mark. Sesame seeds should be on a piece of seared tuna not elk....just my 2 cents....and I'll admit that I read elk and black pepper but missed the sesame seeds in the description. Not the restaurants fault but none the less I didn't enjoy it. Also, the bread and green sauce just don't mesh. The sauce are more suited to nacho chips or plantains not bread. The fondue wasn't like any fondue I've experienced.....impossibly stringy and hard to eat. Rarely ever do I skip out on a yelp review, but two years ago when I first tried Chimayo I did. It was neither exceptional nor disastrous so my incentive to write about it was small. Fast forward to the present, and I'm back, not expecting much but now ready to try and conjure up something more than just a lost experience in the recesses of my mind. With that out of the way, let's begin. It's located smack on main street, so some of the best real estate in the city. The restaurant itself is beautiful. Its got accents of traditional Spanish romanticism with modern Park City flair. You have an upstairs which is airy and bright, and a downstairs more dim and cozy, the latter being ideal for date night. Now...let's discuss food. The concept is cool. A mix between Spanish, American and Southwest. Comfort dishes redefined with more exotic meats and fusion flavors. For starters bread for the table, calamari and a goat cheese and mozzarella chile relleno. The bread is served with a tomatillo sauce, strongly favoring cilantro. Very good. Calamari is tricky because I'm a bit lukewarm on it, but in this case it was delicious and again paired with interesting sauces. Sauce seems to be a rather strong point of these dishes, except in the case of the relleno which I found to be downright bland. There wasn't a tangy flavor to the goat cheese whatsoever, and as far as I'm concerned it was the only "bad" dish we tried. Dinner was fantastic. Between us we had the nacho chicken, duck enchiladas, ribs and elk. I'm not a fan of elk myself and therefore I feel I can not review it in an unbiased way. All meats were cooked perfectly, particularly ribs which just fell off the bone. The vegetables on all plates were so good, that if I could replicate the recipe perfectly I would never have to actively pursue upping my vegetable intake again. Fresh, fragrant and very much southwestern inspired. Some of the most funky plating I've ever seen too on the ribs. Oh, and while a lot of more upscale establishments have a tendency to reduce portions, the sizes here are quite large. Made me wonder why I had been so hesitant to come back to Chimayo in the first place. Ended dinner with fondue (although I heard the chocolate cake is delicious) Which came with warm churros and strawberries, bananas and pineapple. Not much to complain about here. It's melted chocolate, so even when it's bad it's good. And cute ceramic cups for frothy and flavorful cappuccinos to top it off. This was a great meal. For me, Riverhorse on Main still remains the top on Main Street. But Chimayo has gone from easily forgotten to a real contender in my heart. read more

We decided to try Chimayo on 12/12/17 since we got a gift certificate for any of the Bill White restaurants here in Park City. The food is kind of modern twist on Hispanic cuisine. Complimentary bread comes with a herby aioli. The bread is actually very good and one should try to avoid eating the whole basket as the entrees are of good size. We started with a spinach salad with goat cheese, bacon and caramelized pecans with a citrus vinegarette. The salad was very good. My wife had the Branzino and I had trout fajitas. The trout fajita was a good sized portion. We were surprised when the bill came as they were having buy one entree get one free. The down side is that it has kind of a high price point. The Branzino was forty something dollars and the trout fajita was thirty something. All in all, the food is very good and worth a try if you can spend that kind of money. read more

The bread and chutney starter was nice but i found it a little bit greasy and the flavors in the chutney kind of off... Mediterranean? South American? Greek? Salads were fine but super small (don't expect to make a meal out of it), quesadilla appetizer was way overpowered by the earthy mushroom flavors but OH MY GOD THAT QUESO FUNDITO. Granted, metaled cheese is usually pretty spectacular by the nature of the fact that its melted freakin' cheese but this one was pretty killer- bumps the food rating up to a 4 all on its own. TLDR; pretty good, defs expensive, and dont skip out on the melted cheese. read more

"Server told me that medium rare steak is supposed to be cold." First and last time customers. We've been coming to Park City for over 20 years and have known about Chimayo but never visited because it was too expensive. Because 2020 was a challenging year, we decided to make the commitment and found a reservation one month before traveling. My wife and ordered $50 steaks (flank and elk). Both steaks were served below room temperature. When we told the waiter, his response (from the chef) is that medium rare steaks are typically served cold. I'm a 40-year-old man from Texas that smokes and grills meats, of all types. His comment was beyond laughable. And the menu should've said where the meat was raised, especially for that price. The steaks came back to us brown and tough. I asked if it was microwaved and it wasn't but tasted like it. We ate it, and as we were leaving, the kitchen brought me another steak! I refused because I just ate the other steak and wasn't told another was coming. And they didn't bring one for my wife. Side note, they got my daughter's chicken taco wrong. The bread that we received before the meal was over-baked; dry and bottoms were burned. Don't waste your time. read more

My boyfriend and I are huge foodies. We live in Las Vegas so it's pretty competitive to get on our top 5 list but Chimayo managed to do so!! We came in this last Saturday night. Ordered sangria & margaritas for drinks. I LOVE sangria and theirs was amazing. Not too sweet but full of flavor. For our appetizer we had the ceviche. My boyfriend grew up on the east coast so is a huge seafood critic and was in love with the amount of seafood it came with! Crab & full size shrimp. So good!!! We also ordered the crab & corn chowder which literally had crab topped on it when it was served to us. Mouth watering for sure. Entrees consisted of the Elk & I had the Kobe & shrimp fajitas which were both to die for. Both items are difficult to find and even more difficult to master but they were SO GOOD! We finished the night with the fondu for 2 which was also great. The homemade churros were to die for. Overall the pricing may come across high (most entrees in the mid $40.00 range) BUT for the quality and amount of rare seafood and meat you are getting it's actually very reasonably priced. Was in town for a snowboarding trip with 4 friends. We were at a bar by our hotel and we're looking for food. We called for a reservation and the lady said that they were pretty busy. So she had asked how many people were in my group, I told them 5. She then asked how far away we were and I had disclosed we were at a bar on Main Street. She asked to give her a few minutes then returned with "okay, we actually have a reservation open at 6:45pm" (which was in 15 minutes). She said that from the bar, it would take us about that long to walk there. I had asked to please expect us there and that we are leaving now. Our friends and I had walked over there. So hungry, and talking about how excited we were to finally find a restaurant that accepted our reservation (we called about 3-4 different restaurants and they were all busy for about the next 2-3 hours or so. Once we arrived to this restaurant. We told the 2-3 hosts that we had just called about 15 minutes ago and had a reservation for 5 people at 6:45pm. The host looked at her system, and in a confused way had advised us that she doesn't see our reservation and she's not sure how we got a reservation 15 minutes ago through the phone since they were fully booked until 9:30pm ish. I explained I called, lady on phone mentioned there was one at 6:45pm we could have. She had then disclosed to me that ALL CALLS FOR THE RESTAURANT are routed to a CALL CENTER. They cannot seat us. We were disappointed and upset that we had walked in the freezing cold for 15 minutes for a reservation that NEVER existed. I called the "restaurants number" again and asked a few questions that confirmed, THEY DO OPERATE THROUGH A CALL CENTER. I live in the city of Chicago and was dumbfounded. Our downtown restaurants DO NOT use these "call centers" as issues like this could arise, I imagine. I'm very disappointed and angry at this establishment. NEVER coming back, to even try this place out if I ever am in Park City. read more

Fantastic food with an artful presentation. It is a bit pricey because everything is a la carte and the portions are a little on the small side. Most entrees are around $45 so expect to pay $80 a person + tax and tip for an entre, salad, bottled water and dessert. For one of the couples with us, this is their favorite restaurant, but for me, the menu is a little over the top. The duck enchiladas were delicious and was 1 of our favorite meals of the entire trip. The vegetable fajitas were sizzling hot and perfect. We would 100% come back!! Had a great dinner here and enjoyed the chef's unique menu of Mexican-inspired courses. Menu isn't extensive so picky eaters be warned. Had a really friendly server and free coat check was great! The seating is somewhere between cramped and cozy but for just the two of us it wasn't an issue. Would definitely recommend their margaritas, my wife got the mezcal one and I got the spicy one and both were great!
