We arrived on Friday and wanted something quick. The rooftop bar was packed and didn't have any availability until Sunday. The food was enough to get by but nothing outstanding especially for the hotel price. At best the experience was 5/10 But , this mornings coffee was the absolute worst -10/10 , we ordered 3 coffees before our flight 3 iced lattes , 2 whole milk/ caramel, 1 oat milk vanilla. They sent out hot coffees , which wasn't bad but when they read them off they said 2%, and whole milk. When we said something - they just switched the drinks into ice cups and said it was the right order. I hopped on the trusty Yelp app and came across Cobre Kitchen + Cocktails. I walked over and discovered that this bar/restaurant was inside the Canopy Hilton hotel. Ambiance (3.5/5): Enter the hotel, make a left, and you'll hit Cobre. There aren't any doors so it's part of the lobby area in the corner. I sat at the bar. Contemporary decor. Very much your typical, nice hotel bar. Service (4.5/5): There were two bartenders working and not a lot of customers so that made things easier but my bartender did a good job taking care of me. He wasn't friendly but he was efficient at his job. Food (N/A): Only drinks for me on this visit. Drinks (3.5/5): During happy hour, all cocktails are $2 off. While not a huge discount, they do have a nice list of 12 or so craft cocktails. I tried two and both were hits. One was a gin-based cocktail (Stone Fruit Collins) which was refreshing. The other was a vodka-based cocktail. This one was more on the sweet side. Solid all-around. If you're looking for some nice cocktails, this makes for a nice selection. Being it was his first time trying the newer breakfast item. Offering an assortment of pastries. We added a Cinnamon Roll. The Cinnamon Roll came out first! It was cold and dry. I think the server did say it was left over from the day before? You would think those were made fresh daily or just not served if its not appetizing. Next the Avocado Toast! The best thing that hit the table. It looked so pretty. It was delicious. Gigi was the next best thing. She was the hostess on that morning. She was attentive and helpful. What a great attitude! They were not busy on a Saturday night- apparently word is out that this place isn't worth going to. It took 10 minutes to get water. We actually got cocktails well before water. I feel like it is the norm to serve water as soon as people sit down. We had to ask 3 times. We were going to start with the calamari. It was frozen, soggy and inedible. The sauce was worse. It was clear it was dumped out of a jar. The thicker sauce was separated from the water. And they didn't even bother to warm it up!!! It was service totally cold. I've had the pleasure of dining here for both dinner and breakfast, both of which were very tasty! The menu offerings have a Mexican and/or Asian twist which was done really well. They are knowledgeable about celiac/ gluten free options which is helpful. The chilaquiles at breakfast and the ramen at dinner were both fantastic. Service is always friendly, but can be a bit slow on the patio. On Friday evenings they sometimes have live music and the Architectural details of the interior are modern and stunning making it a great place to hang out. They are dog friendly, so we come here often just for cocktails and to vibe. They serve local press coffee and make a stellar espresso martini best enjoyed in one of the large comfortable couches. Even if you're not staying at the hotel, this place has a lot to offer! read more

Decent food but horrible service. We met some friends at Cobre for dinner back in November as it looked trendy and food looked great. We were quickly greeted by our server, but then he seemed to be MIA for quite some time throughout the meal. We ordered drinks and my friend's order was wrong. It took 20mins before our server came back and we asked about fixing the order. I took her drink and he brought her a new one. A bit irritating that we were still charged for the drink. I get that we drank it, but the server offered for us to keep it or he'd just toss it. So with that being said we assumed it meant he'd take it off the bill since it was served in error (and took a looong time to get her what she actually ordered). The food was okay. My husband ordered a pasta dish and the portion was much smaller than expected especially for the price. I had the fried chicken sandwich which included a chicken breast that was half the size of the bun. Our friends' said their dishes were okay but nothing spectacular. It took forever to get our bill so we just paid and left. No, we didn't ask for a manager to discuss the drink issue as it seemed that staff was lacking and honestly didn't care about customers. We got our fave server, Andrew, by chance as we had reservations for Az Restaurant Week. Each course had great options and neither of us were disappointed. I have been wanting to check out Cobre Kitchen + Cocktails for the longest time. A few months ago they were part of Arizona Restaurant Week but I was not able to attend. I recently decided to pop in for just some drinks. Hey, it's the holidays! First off, I love that this is located in the hotel lobby. It's airy, bright, spacious, and welcoming. The decor and design aesthetic are just right for their location in Old Town Scottsdale (honestly, Canopy by Hilton got one of the BEST spots here!). Because the space is so large, there are plenty of tables but my eyes immediately went to the bar seating. And I am SO glad that it did because that's where I met Sherdes! She not only introduced the menu to me but told me about some of the restaurant's upcoming plans and events (definitely follow them on social media as more will be happening here). As someone who used to live in Asia, I have a high regard for the quality of hotel F&B options. From the sounds of it, Cobre Kitchen is following that trend. The menu has recently been overhauled and the menu is focused on healthy options with locally-sourced ingredients (while Hilton is an enormous chain this location is franchise-owned). Cobre isn't a restaurant that is only going to be dominated by tourists. It is a destination restaurant for those of us living here. The cocktail menu is extensive with a lot of creative options. One of my go-to drinks is a Negroni and Cobre's version is the Remixed Negroni (gin, aperol, lillet blanc, squeezed lime, simple syrup). Perfectly blended and crafted! The titles of the other drinks are interesting, too ("The Curtain Call" LOL). While most visitors to the hotel are bound for the rooftop, I have to be honest that I would actually prefer to hang out in Cobre. The rooftop is a great place to grab a drink, take a selfie with Camelback Mountain in the background, and that's about it. Cobre has a warm energy where you could stay awhile. I will definitely be back next time to dive into the food! As a native New Mexican, one thing that caught my eye was a New York strip steak with New Mexico green chile butter. Say no more! read more

I don't know what changes the restaurant made after the previous reviews or if they were simply off base in the first place; but my family and I actually enjoyed Cobre Kitchen! And to be honest - it was a lucky mistake on the part of my eldest who made a decision to go for a walk-in at a local pizza chain at 7pm on Saturday. Yeah, an hour-long wait. We decided to skip and have dinner at Cobre (not aware of the reviews until I started to check in)... And well - the food was delicious. My wife had the Fried Calamari, my eldest had the Grill NY Strip Steak while I had the Elote Kernals and the Grilled Cheese. We were glad to have dropped by... If we had dinner in town, we would have dealt with the line, the crowd, the noise, and, food choices that I may have not enjoyed as much as Cobre (I would know - I have tried the other place before, albeit in a different location). A hearty amount... Plus, good service from the staff makes for a satisfying family evening. Ended with a vanilla ice cream and a Cappucino. read more

Delicious. We had the coffee spice rubbed tenderloin and ny strip steak, both grilled to medium. The tenderloin was perfectly done with pink in the middle, melt in your mouth perfection, and a slightly Smokey/spicey exterior from the rub. The NY strip was sliced to serve, tender, well seasoned, and coated with an incredibly delicious herbed butter that added to the already yummy strip. The vegetables for both dishes were expertly cooked, and the au gratin served with the tenderloin had an amazing depth of flavor. We did have the calamari with was ok. Just a little salty but the accompanying sauce helped to balance the taste. For an added bonus, the restaurant and hotel decor were a treat for the eyes. Mid century modern meets south west class. We checked out this place for AZ Restaurant Week. The service was great and our waiter was super informative. He stated that the menu was picked from dishes that will be on their fall menu (which was kind of cool). We did the shrimp "ravioli" to start which was cooked perfectly but slightly subtle on the flavor for me but my friend said "I will dream about this shrimp!" For the main course I had the chorizo pasta. I wish the chorizo flavor was more present but the sauce and veggies all mixed well. My friend got the salmon, which I think was the best - amazing sauce, charred just right, and the rice added the perfect blend. We also got the steak, which was a perfect medium rare cook and my friend really enjoyed the dish. We finished off with the waffle bites, which we all enjoyed but we also super full. To drink we had a Dessert Drop, sweet and tart, and a perfect sipping drink through the course. I would say the food and service is better than 3 stars but the ambiance of the restaurant, being right up front in the hotel lobby by the front desk and seeing guests come and go, really down played how good the restaurant is. A very nice relaxing bar in the lobby of the canopy hotel. A welcome break to the busy old town vibe. The shining star of the bar is the server Aidan. He has made our stay infinitely better. Ambiance was very open. The hostess was rude and our server was really nice and knowledgeable but could tell he was tired/overworked. The food portions were super small for the prices and they're alcohol selection was not great. They didn't have Macallans or Buffalo Trace or Chambord. The espresso martini was very tasty though. We ordered the chorizo pasta and it was so salty that we had to return it. I ordered the ramen and enjoyed it. We told the hostess and put it on our reservation that we were celebrating a birthday and there was no acknowledgement. I came here for the first time and had a great experience! I loved the atmosphere. Our waiter was super friendly and funny (I wish I remembered his name). He had a very "chill vibe". The cocktails were amazing and I really liked the chilled shrimp we ordered. I appreciated the southwest decor. What was strange is that I made a reservation at open table and they reached out to me about a "no show policy" thinking that I didn't come. But I did! And my group of 4 had a great time. I would not recommend this place. They need to figure out their systems and food. We went during restaurant week to try out new places. Unfortunately this was a complete fail!!! Soup was cold. The Caesar salad is definitely not a Caesar! Ravioli was also cold. Sea bass wasn't too bad but comes as two thin pieces- not to par with sea bass at other restaurants in the area. Server was nice but the service was sub par. Even the manager was struggling. They are new so maybe just need to get in the flow. Definitely disappointing. Tyler the bartender is amazing though which is why I gave them 2 stars since we had the pleasure to enjoy a cocktail at the bar before dinner. Ambiance is Immaculate and cozy, food is original and full of flavor. The menu offers unique recipes from scratch and certainly far from ordinary. This is not your typical hotel Restaurant, they impress me every time. John at the bar is overwhelmingly welcoming and there Basin and Range cocktail will knock your socks off (literally) but my favorite cocktail is there Pirate Jenny.
