Chuchvara, Lagman, Shurpa, Achik-Chuchuk, Various Kebabs, Beef Tongue, and most importantly Cheburek. The only dish that can go wrong like a puffer fish. Underdo it and it's inedible, overdo it the same, wrong oil or too much oil and your customers will run screaming for the hills.
