I love love LOVE Evolve Distilling! I think this is my favorite place to have drinks because it checks all the boxes for me: delicious craft drinks, nice but relaxed ambiance, and great service. This was formerly Citrus Grove before it was taken over by the current owners. I enjoyed Citrus Grove just as much, and I am happy that Evolve doesn't make me miss it. My favorite drinks are their take on the White Russian and their White Hokkaido. The White Russian is special because they add pistachio, and it's just fantastic! The White Hokkaido is the matcha version, so instead of the coffee liquor, they use matcha, and it's delightful! They often have live jazz, which makes the place fun, though often on jazz nights, they require advance reservations or ticket purchase. Other nights are more quiet and perfect for a relaxed outing. They don't have any food, but there are often food vendors at the brewery across the way, and you can bring your own. I also enjoy that I can bring my dog with me, since I often visit after drinks at the brewery or the ciderie next door (both of which are dog-friendly). read more

All were solid, but I think I have to give it to the Hugo. Direct, refreshing, and the perfect cocktail for a warm sunny day. The service was fantastic! The employees were warm and friendly, and very helpful and helping us choose our liquors for tasting. My husband and I each did a tasting of four different liquors. Couple of them were just OK, but there were a few that had interesting and enjoyable flavor profiles. We ended up buying a few bottles. We particularly enjoyed the single malt and the Mount Baldy gin. The ambience is a typical distillery interior. Found out about Evolve Distilling through Lucky's Coffee Roasters and I am super glad that i was able to find about this place. Unfortunately haven't had the full experience yet... but i came in looking to buy the coffee liqueur on a day they weren't open. They were still nice enough to let me in and welcomed me with open arms and allowed me to purchase the liqueur (which ABSOLUTELY deserves the gold medal). Originally went to Claremont Craft Ales and was drawn in by the live music playing at Evolve Distilling. We ordered a couple of nightcaps which ended up as more than a few. The bartender Zach was great and really highlighted the whole experience with a custom orange creamsicle cocktail. Popped in on Dec 1st 2023 and had a flight of their distilled spirits, all nice and smooth. Had the Mt Baldy Gin which was subtle with the expected conifer-esque botanicals, but not overpowering! As the bar-keep says, it reminds you of being in the mountain forest. The Orangecello liqueur was a delight as was "Persephine's" rye, which again was so smooth. There is so much more on the menu, I'll have to come back to check them all out. They offer bottles for sale of your favorites. The tasting room and bar are nicely laid out and relaxing. Apple maps didn't seem to know the exact location, but it is in the same building as IronBark (tasty dry ciders) but just to the East. Evolve is NOT in the same building as Claremont craft Ales (all three establishments are in the same business park and all stones throw from each other). There were two food trucks if one was hungry. With spirits, you shouldn't be guzzling, but instead sipping and enjoying. If you are coming alone, the bartender will keep you company! read more

Stoped by Saturday with some friends. Greeted by friendly staff and owner. 6 different cocktails were served that were beyond great. We left with three bottles to go. Awesome relaxing atmosphere. The Gins were my favorite and all ultra premium but priced fairly. Coconut rum was probably the biggest surprise for me. Who knew a coconut rum could be great. I'll be back. read more
