Overall, the food is excellent, and the service is outstanding. Fable just opened for dinner about a month ago, taking over the spot where the wonderful (original) Arable once existed. Like Arable, this is a mid-range, upper-end restaurant for the area. As much as we loved Arable, I think Fable is superior! We ate with another couple last night, and except for one item that didn't quite hit the mark, the other food was outstanding. We started with the Market Empandas ($14), which change every few days. Tonight, there were two on a plate: Brisket with Mole and a vegetarian version. The Brisket was very lovely, as was the mole, although I thought there wasn't enough Mole for the one Empanda. What fell short was the pie crust, which was heavy and doughy; not bad, but not great. Since Fable is 'known" for Empanadas, I may have to give them one more chance, but the two I had tonight were iffy due to the dough. Then everything got wonderful! My wife ordered the special, Cioppino, one of our Favorites, along with Bouillabaisse, which we order whenever we see it on the menu. This version was filled with fish and shrimp, a lovely base, and outstanding Focaccia. One of our friends and I had the "Forever Pork" ($34): Trilogy pork shoulder, creamy cheddar polenta, and braised collard greens. We were told it is braised for 24 hours (then overnight, whatever, it was all delicious). Moist, tender, super flavorful; I would order this often! Our other friend had the Fried Chicken and Biscuits ($28), Chicharron crisped airline chicken breast, old bay biscuit, hot honey, and southern braised greens. I got a bite of the chicken, and it was wonderful, crispy, a fried chicken lover's dream come true. For dessert, we split a Basque Cheese Cake and an apple crisp. The cheesecake was good (the one I make from Cooks Illustrated is a bit better (grin), the apple crisp was outstanding and unusual. Small pieces of apple, caramelized with great spices and served with a creamy, sweet glaze. Yum! Our server was Jake, and he was an outstanding professional in every respect. This restaurant will hopefully live on with support from the city of Santa Fe residents, who will spend 15-20 minutes driving to Eldorado; the food and service are easily good enough to justify this drive. Tourists, you too should take the lovely drive from town to Eldorado and visit Fable. Parking is easy, and the lots are large, unlike the hassle you'll find in town when parking at a restaurant that isn't even at the caliber of Fable. They also have a small market there, so you can shop and take home items for later. Please give Fable a try, and support this local gem. We will be back! read more

I'm sad to say, I fear giving Fable the review it deserves because I fear being able to get a table when I want one ever again. Our meal, our drinks, and our dessert were all simply wonderful. Now let me count the ways. We started off with drinks and my "Good News!" was wild (quite spicy but delicous). My wife had the "Pink Pony Club" and loved it equally. The appetizer was the fried green tomatoes and they were very good but not super exceptional. But then come the entrees; my cassoulet was amazing with a lovely sauce and my wife kept stuffing the chicken, biscuits, and greens far past the point she felt she could eat any more but she loved it so much. The apple crisp was a great dessert and the coffee and coffee drink were both really good too. Here's the summary. So far, I have dined here twice; 1st night I had the Fried chicken which was good but just a little dry for my liking and my partner had the burger which she said was very good and the crème brûlée for dessert was really good. 2nd night I was solo, and I had the tomato soup and the ahi-tuna and both were really good and the strawberry shortcake for dessert was very good. We're a married gay couple and EVERYONE at FABLE treats us like family. Sometimes people create their own experience, y'know? The food is FABULOUS! The staff is our favorite in all of Santa Fe--professional to the core, with a side of quirkiness just to keep things human and fun. Buyer beware. "Lunch" at this place should not be a thing. We ordered hoagy sandwiches. We listened to a suspiciously silver-tongued sales pitch, paid about $20 for each sandwich and, once they had our money, were told they only had pre-made ones in the fridge. Ooops. There was no option to get our money back. Predictably, the hoagies were soggy and the Sam's Club-style bread had one piece of mortadella and one piece of salami and some sad chopped-up cheese. To pay quite a lot for dinner and then not eat a satisfying meal due to having food allergies is disappointing. I should have known better than to try here, even though I called ahead to confirm if there are flexible options for those of us with both gluten and dairy allergies. There are not many options. My dinner partner enjoyed a very small portioned but tasty meal. It looks like a great place if you are into super rich, creative, meat-focused dishes and can eat anything. Altogether bizarre. As a gay couple celebrating a 54th anniversary, full of enthusiastic support for a new business, were served the beef steak (listed with asparagus and a duck egg), plopped only on a glop of over salted wilted frisée.
