    Overall, the food is excellent, and the service is outstanding. Fable just opened for dinner about a month ago, taking over the spot where the wonderful (original) Arable once existed. Like Arable, this is a mid-range, upper-end restaurant for the area. As much as we loved Arable, I think Fable is superior! We ate with another couple last night, and except for one item that didn't quite hit the mark, the other food was outstanding. We started with the Market Empandas ($14), which change every few days. Tonight, there were two on a plate: Brisket with Mole and a vegetarian version. The Brisket was very lovely, as was the mole, although I thought there wasn't enough Mole for the one Empanda. What fell short was the pie crust, which was heavy and doughy; not bad, but not great. Since Fable is 'known" for Empanadas, I may have to give them one more chance, but the two I had tonight were iffy due to the dough. Then everything got wonderful! My wife ordered the special, Cioppino, one of our Favorites, along with Bouillabaisse, which we order whenever we see it on the menu. This version was filled with fish and shrimp, a lovely base, and outstanding Focaccia. One of our friends and I had the "Forever Pork" ($34): Trilogy pork shoulder, creamy cheddar polenta, and braised collard greens. We were told it is braised for 24 hours (then overnight, whatever, it was all delicious). Moist, tender, super flavorful; I would order this often! Our other friend had the Fried Chicken and Biscuits ($28), Chicharron crisped airline chicken breast, old bay biscuit, hot honey, and southern braised greens. I got a bite of the chicken, and it was wonderful, crispy, a fried chicken lover's dream come true. For dessert, we split a Basque Cheese Cake and an apple crisp. The cheesecake was good (the one I make from Cooks Illustrated is a bit better (grin), the apple crisp was outstanding and unusual. Small pieces of apple, caramelized with great spices and served with a creamy, sweet glaze. Yum! Our server was Jake, and he was an outstanding professional in every respect. This restaurant will hopefully live on with support from the city of Santa Fe residents, who will spend 15-20 minutes driving to Eldorado; the food and service are easily good enough to justify this drive. Tourists, you too should take the lovely drive from town to Eldorado and visit Fable. Parking is easy, and the lots are large, unlike the hassle you'll find in town when parking at a restaurant that isn't even at the caliber of Fable. They also have a small market there, so you can shop and take home items for later. Please give Fable a try, and support this local gem. We will be back!

    We had the fish special a few weeks ago and it was amazing. We had the burgers on Saturday and they were fantastic.

    In all fairness ..I live right up the road from this tavern…read more so I've left a lot of reviews But I'm gonna say their FISH and CHIPS are stellar !! served with malt vinegar Very crunchy beer battered Cod with excellent hand cut fries ! Tastes to me just like the pubs in Ireland and England Not a HUGE portion, but enough for me (the coleslaw is also delicious) I have a margarita on the side w this Weird eh ? They call these 2 places "ghost towns" which is a bit of a misnomer. I do think that Madrid and Virginia City Nevada have a similar abandoned mining town vibe that we both found charming. And with the exception of the Virginia City Hat Maker, Madrid has better art. We came in on a Friday and just before a weekend music festival was to begin with the Mine Shaft being a major participant. We missed all than, but wouldn't have minded a little early live music. We snagged a nice outdoor table on the deck and enjoyed 2 different types of delicious brisket, along with generous portion of fries. I had a local beer, while Gayle had wine. We took our time and really enjoyed our time here. Until next time....
