Nestled in the corner of 14th and California is the Former Saint, the former site of Saint Mary's, a respite from the saloons and brothels of Denver in the 1800's. Today, it is a respite from the ordinary menu and typical dining experience of the 16th Street mall area. As you enter the large open yet intimate space, to the left is the open kitchen with fresh, local produce being prepared and chef's crafting our meals with care. To the right is the walk-in keg cooler with copper piping filling the ceiling delivering a great selection of Colorado Craft beers to the bar. As you are seated, the dining area has a beautiful mural and works of art form local artist. Although the menu is small it is eclectic in a way that brings Colorado to your palate. From Short Rib Tortalloni to Duck Confit, the menu has a variety to please discerning palates. Our meal started with the Former Saint Poutine, with local cheese curds, duck bacon and a porter poutine gravy. Although the gravy was great, the cheese curds were minimal in size and quantity, taking away that ooze of cheese that accompanies a great Poutine. As they are working out the kinks, being a new restaurant, this could be an easy fix to take them from good to great. This was the lowest rated dish with a strong 8 out of 10 knowing that rating would increase with a few minor tweaks. Dana, having had a culinary packed day, went with the Seasonal Chopped Salad with mix greens, squash, apples, candied Pepitas and a Spicy Pumpkin Vinaigrette. The layers of flavor and textures were spot on and the dressing had a subtle heat, that made a simple salad complex in flavors. This is a solid 10 out of 10 I enjoyed the Oven Roasted Elk Strip Loin. It was on a bed of cheddar cheese grits, made with southern love, a Bourbon Cherry reduction, Pistachio Pesto, and not listed, roasted whole sweet onions. The Elk was roasted to a Mid-Rare, chef's suggestion, and was the star of the plate. The Elk did not lose the natural flavor of a game meat but was prepared in a way that even those that do not appreciate Elk would fall in love with the meat. The components were not lost as the grits were delicate and the sweet onions complimented the Elk well. The pesto made the plate look good but really had no impact on the overall flavor profile no matter how you combined the elements. The Roasted Elk, as it was, is a 9 out of 10 only because the grits were plated to early and started to have the crusty exterior and the last piece of Elk was an end piece and being more well done left a gamey last bite. Those two minor adjustments and its a 10 all day. Good food and atmosphere can be ruined by bad service but that was not the case here. Our server Mike (Dan the Man), was great and was very knowledgeable of the menu. I appreciated that when he did not know the answer to the detailed questions we asked, he went to the chef and found out. At the end of the meal we spoke with Steven, the General Manager, and had a great conversation about the desire for Former Saint to be a standalone Hot Spot downtown Denver with food and service unmatched in the Area. Don't let the fact that they are in the Hyatt Regency deter you from coming. Although I only came because I was given a complimentary meal on Hyatt, I will definitely return before we head back to Chicago. Visiting the Denver area for Christmas. We are looking for a last-minute place for dinner reservations and happened upon this restaurant. Initially, I was not a fan of doing a prefix Christmas dinner, but the menu options were actually unique. Not your typical turkey or ham Christmas dinner. Started with a charcuterie board, which honestly was enough for three people. The selection of cheese with meat alone was worth the prefix price. Then onto the salad and soup that we're also healthy servings. For the main entrée, I got the Buffalo prime rib, which was cooked perfectly to my liking, and the unique compliment of cranberries with the whipped potatoes was an excellent pairing. Then finally, we come to dessert. The butter toffee was perfect. I'm not a fan of bake Alaska and nor am I a fan of peppermint ice cream, which happened to be the seasonal selection. My food was delicious and well priced, but nothing special. This is not to say that I wouldn't recommend the baby kale salad. If you like Caesar salad, this is a good option at this restaurant. It's a bit heavy on the dressing, but the fresh ingredients and generous portion help immensely. The fish and chips my coworker ordered must have been unbelievable. It smelled great, looked phenomenal, and was the first thing she mentioned that next morning. The martini is made with a local vodka. I asked to try it prior to ordering the martini. I would not recommend the vodka; however, the bartender did a great job making a dirty martini. If you're only going to have one cocktail though, I'd go with the old fashioned with cherry bitters. The sweetness only served to compliment the whiskey. That drink was my favorite part of the meal. Finally, if the weather is nice, I suggest you sit outside. I recently got to try their food for the first time under an usual circumstance, while visiting the city for an annual conference for PAs and PA students. It's just as well because of side of their open kitchen is completely visible to passersby through a gigantic glass window facing the front entrance to the building, and I had secretly wondered if their food would be any good. I was with a company of 6, and long story short, the plan was to put our orders in person and pick them up when they're ready. Little did we know that the wonderful staff brought our orders up as hand-delivered them, which earns them a bonus point. I got the scallop dish and a coconut and chocolate ganache cake. Scallop was juicy and came with unusual veggies, and my only wish was for a little more food. The dessert came with a tiny scoop of ice cream (coffee flavour, in my case), and all in all I was content with the meal, although one person was missing their dessert. Would I go back? While visiting from the foodie mecca of SF for work I decided to venture down to the hotel restaurant and it did not disappoint. From the wine, beet salad, chicken entree to the chocolate Milton dessert everything was fantastic. The service was attentive, informative and most importantly friendly. When it comes to a Downtown Denver restaurant, this place represents CO in the upmost fashion. Their bar is stocked with all CO wells, the tap has all CO handles, and the menu has locally sourced CO meat. Not only did I have an incredible/friendly experience, but this restaurant builds local brands and economy with style. It is an excellent place for both residents and non residents. I took my girlfriend for a date, and man was it a win if you know what I mean!! ;) The food was excellent. To start we had the Sea Bass and the Wagyu Tartare.... Wow! We then chose with the lamb and duck and could not have been happier with the temperature and sides. Around us were signature dishes as well as intriguing surprises for the more adventurous. The plating was so inviting that any Instagram foodie would love the photo shoot. Overall with the drinks, food, and staff - I will be making this place a regular in my rotation. Mahina at the bar is wonderful! I walked up to the bar and she greeted me with a warm smile and I felt welcome in a fancy hotel in workout clothes. She offered to let me sample some wines. I ended up choosing a nice clean crisp sauv blanc from right here in Colorado. She was very knowledgeable of all the wines and I truly enjoyed chatting at the bar with her. The restaurant is right catty corner to the convention center and the area is super clean and safe which is a plus these days in Downtown Denver. I didn't eat here but saw a lot of food coming out and getting delivered to tables and it looked good. Great location. Great bartender! I will definitely be back to chat with Mahina and have some more wine while I'm here visiting Denver. If you're in the area come sit on the patio and people watch and sip some vino. I couldn't decide between 2 and 3 stars. At the end, given the price, I had to drop it to 2. The restaurant is inside of the Hyatt and the appearance of it if very high end, modern, comfortable. The food is priced accordingly without merit. The service was the worst of it all. We ordered the cracker jacks app and the poutine fries. Skip both. The jacks were fine but nothing worth $4 or recommending to a friend. The fries were ok for plain fries and gravy, but for $9 and the promise of "cheese curds" as traditional poutine has (they came with a tiny dusting of regular cheese)... regret. Main courses were the short rib and ribeye ($32 ribeye was like half an inch thick which was disappointing), both decent but nowhere near worth the price. Biggest issue? Our server (Esther) did the bareeeee minimum if that. Our waters were constantly empty, after our entrees came she never once checked on us. 20 minutes go by.... nothing. When she finally came back and we asked for a box, she forgot.. shocking.. as she stood with a coworker goofing off. My bf had to track her down and ask for one. Some friends and I have been going to this unexpectedly excellent hotel restaurant for 2 years now. It is across the street from Colo. Convention Center, close to Denver Performing Arts Center and it opens early enough for a an early dinner before performance or post performance dinner. The space is open, airy, contemporary but still warm feeling. Copper pipes running from the glass chilling room at ceiling height to the taps is sculptural and functional, the fact that these high-up, high maintenance features are spotlessly shining and the open and glassed kitchen area are also spotless are reassuring. But it is the food that makes Former Saint a return to spot. The duck two-ways, confit/broiled is perfect the presentation and accompanying items changing seasonally. Another posting on hear shows elk loin with pesto, last weekend I had elk tenderloin so simple - two inch-and-half medallions perfectly medium-rare surrounded but not touching a Demi glacé with blackberries, roasted ruby yams, flash sautéed spinach and huge fresh plumb blackberries. The best elk, and maybe the best red meat I've ever had, fork tender, no adornment just superior grade meat. The tables and booths are spacious and spaciously spaced. Wine, craft cocktails and beer selection sufficiently broad for many tastes, including wines by the glass. Desserts are interesting and twists on classics - they vary by season. The front areas and bar areas can be noisy or by contemporary standards energized, but the space is large enough to choose the noise volume. I have not tried breakfast or lunch. I was staying at the Denver Hyatt Regency Convention Center and decided to order food for pick up. I chose the fried fish and fries. It was served hot and looked beautiful. The fish was a nice thick cut. But, it lacked salt and spice. It was crusted with some type of potato chips. That was unique and very crunchy. The fries were hard and didn't seem like fresh potatoes. I would pass on this choice. If you don't salt fish before breading it and frying it, it's very hard to add that needed salt later. It needs to be in the meat. read more

I really like the brass piping above the bar area and the open kitchen viewing, and I heard the restaurant wasn't always this spacious. The reuben sandwich was crispy on the outside and the meat was tasty, I wish the mustard was a little more spicy, but it was good sandwich and the fries were rightfully portioned. We were surprised on how the bas was presented. I thought we were getting the fish hot, but came out in raw slices. The avocado mousse and torched grapefruit created an interesting pallet of flavors. A saint is a person who is recognized as having an exceptional degree of holiness or likeness...and this restaurant definitely stands true to that! Former Saint is gorgeous and thoughtfully laid out! It gives a nod to all things Colorado (past & present) while being vibrant, energetic and trendy! The entrance, whether its through the hotel or street side welcomes you with a pleasant sneak peek of their beer cooler where all that delicious liquid hops is stored. The variety is endless and you can count on the majority of it being local! But lets get to my favorite part....THE FOOD!! The menu is adventurous, the presentation and the twists on dishes are creative and inspiring to say the least. There is something for everyone on this dinner menu and out of the six dishes we tried (not including dessert)...not one of them disappointed! My dinner companion and I strategically laid out our approach (over a lovely glass of Paul Dolan Zinfandel) to select a well rounded sampling of what the menu offered. We started with a few small plates from the "Communal" section of the menu..the Colorado Striped Bass Crudo, the Elote Croquettes, the Crispy Quail and Waffles and the Roasted Bone Marrow were all so delicious. The Crudo was so refreshing with a slight citrus flavor accompanied with an avocado mousse which paired so nicely. The Elote Croquettes and the Quail and Waffles were super creative, crispy and cooked perfectly. It was the Bone Marrow though that had me and my mouth doing the happy dance and singing its praises all the way to our next bite and perfectly paired Zinfandel sip! The Bone Marrow dish accomplishes the ultimate balance between sweet, savory, delicious fattiness, and crispy all in one bite and easily one of the BEST that this diner has ever had! For our entrees, we selected two from the "Main Order" section of the menu, we both agreed to share which were the Stout Braised Short Rib Tortelloni and the Oven Roasted Elk Strip Loin. The Tortelloni dish was placed in front of me and the Elk was placed in front of my friend. The Tortelloni was gorgeous and fragrant and the gigantic size of each hand made pasta made this dish worth its value! As soon as I took that first bite I immediately regretted making the deal to share this dish because it was everything I had dreamed of ....a savory sauce, short ribs, pasta, ricotta cheese and mushrooms....my stomach had now joined in on the happy dance. I reluctantly switched dishes so that i could share my experience with my friend and have her join in my joy but to my surprise she was already doing her own celebration...the Elk was cooked to perfection and was so hearty and tasty! It sat atop a fluffy pile of smoked cheddar grits and a bourbon cherry reduction sauce surrounded the entire masterpiece and it was a masterpiece! Although we were beyond satisfied at this point in the meal we thought it would be a "sin" to pass on dessert and so we didn't - Ha! We ordered two to share... the Torta De Santiago and the Spiced Brown Betty ... both were served perfectly and the presentation was gorgeous. The Torta De Santiago in particular was my favorite out of the two...the cookie was perfectly prepared with a crisp outer layer and a lovely chewy inside...the fresh cranberry coulis and the intriguing fresh tarragon infused gelato (which PS is a must in everyone's life) is what takes this simple dish to the next level! This restaurant really hit all the marks that make a good restaurant GREAT, the ambiance and decor is stunning, the service and friendliness of the staff is on point, and the food was truly perfection at its finest! I asked for a box, since I had asked for it to go. The woman who brought be my lunch (not the same person who took my order), was apologetic and went back to put it in a box for me. A manager brought it to me, and was quite rude and off putting. When I finally sat down to eat, I was disappointed that there was no ketchup. I had ordered my burger medium rare. It came it well done. The burger comes with bacon. Mine had none. Luckily, the fries were fine, after I salted them (they were under seasoned, but well cooked). I came for brunch at 10:30. We were given breakfast menus but they didn't take our orders until almost 11:30, then the waiter came back and said that they were no longer serving breakfast. Upset, my mother (on mother's day) got up and asked the chef directly, to please make our breakfast meals. The lunch menu was awful, there were only a few choices and they were very heavy meals of steak and fish, no one wanted any of the lunch menu. The chef agreed to make the meals even though it would take awhile because he had to go get all the ingredients from the back (). I've never seen a place on Sunday stop serving brunch at 11:00! Finally at about noon our food came. Our "country potatoes" were literally just whole potatoes cooked with a little salt. I don't know what country the chef is from but that's not country potatoes. The selections were pretty limited. If you wanted a sandwich was short rib sliders, hamburger, or muffuletta. I opted for the muffuletta as I thought that would be a bit fresher tasting. I got it to my room and was shocked to find it dripping with grease and melted cheese. I have had this is New Orleans and that is NOT how muffuletta is served. The meat was twice as large as the bun it was on and greasy. The cheese was like a thick cream. The olive spread was gooey with the grease and the cheese. Yuk!. I ate a few bites and tossed the rest. The fries were good (so 2 stars for that). I wasn't willing to test fate with any of their other dishes. A hotel like the Hyatt Regency needs to find a better restaurant than this. The customer service here was awful. We stayed in the hotel for an event and on a Sunday late morning we checked out and headed downstairs for lunch. We settled on "Former Saint" and stood at the hostess stand. Waited about 20 mins while staff hustled and bustled back and forth in a nearly-empty restaurant towards the end of the breakfast hours. The staff member who reluctantly greeted us informed us that we were too late for breakfast as though we'd done something wrong, while looking at my companion head to toe with a nasty expression on her face. We told her lunch was fine, and she handed us some menus to look at. We were confused because she then moved on to some other folks who were standing behind us. We were very hungry and needed to get on the road after checking out of our hotel rooms so we tried to get her attention again, and she (reluctantly) seated us. We looked at the menu and just started cracking up. This is one of those places that takes themselves far too seriously and the menu read like a parody. As we sat there giggling to ourselves for another 20 mins we realized the food was probably going to be as lousy as the service and just got up and walked out. Normally I would ask for a new one but I didn't have time to wait another hour and I was with 6 others who all ordered one of the burgers and they were all very wrongly cooked. After speaking with the manager he offered a 25% discount. We didn't think that was adequate so he asked us what we would suggest. We told him it was up to him to tell us based on our complaints about the food and the service. He said he would go work on it. Our checks came and we all got a 25% discount and a 20% gratuity charge. So in essence I was forced to pay full price minus 5% for a burger that I sent back because I could not eat and chose to not have replaced. I will be back at the Hyatt for another week again next year, but I will not give this restaurant another cent of my money ever again. read more

The holistic approach to the restaurant is not only impressive, but refreshing. From the name to the menu to the delivery, they thoroughly paid attention to every detail, and see if you can pick up on the subtle nuances. My favorite part is they will offer you a large warm coat to check out their cooled tap room. The beer then flows through chilled lines within their stylish copper piping right down to the glass, then you get the rest. The food was incredible. The service was fun. And the date went incredible ;) which can be attributed to the above mentions. The sea bass and the beef wagyu tartare were absolutely a must try! Pair with a nice Oregon red!
