Gaskins does not take reservations for parties less than 7 people. We called when we were ten minutes away to get idea of the wait on a December Saturday evening around 8pm. The estimation was 30-35 minutes. We arrived and we're seated about 15 later. We started with oysters (terrific!), burrata (huge grains of salt crystals over powered this dish) and shared the burger (strangely overlooked shell with underdone center), lentils (by far the best dish on the menu!), and shrimp and grits (extremely difficult to eat because they were fully cooked with shells, legs, etc on). Disappointed! Can't make a reservation unless it's for 7 people. Our friend went earlier to snag a table, we we're 5 minutes late and they bumped her from the table. You cannot order your appetizers unless you're ordering your entre at the same time. So if you want to just chill for a minute, order some bites and look at main course, that's a big "no"! What a find. A great restaurant in an out of the way place. The food was delicious and the service was excellent. Extremely friendly and knowledge wait staff. Our server was able to help select a wine and offered my wife a taste to help make her selection. I had a wonderful gazpacho to start with just the right amount of cilantro - enough to make the flavors stand out but not too much to overpower the taste of the fresh tomatoes and cucumbers. My wife had a kale salad with two types of beets and sunflower seeds with a tangy vinaigrette dressing. The beets were both thinly sliced and cubed and both were cooked to perfection. Since we shared our dishes, they served the piave on the side. The piave tasted like a young parmigiano reggiano. For our main courses, my wife enjoyed summer squash and falafel salad with baba ganoush, while I had fish and chips - a nice piece of cooked-just-right beer battered pollack and a huge mound of tasty fries with house-made ketchup. My only disappointment was the Cole slaw - it was too bland for my taste. We sat out on the back deck among the potted herbs and plants. The main dining room was extremely loud, but looked like the place to be in town. For a Monday night, it was surprisingly busy. If you're anywhere near Hudson, take a short drive to this place. Dined here on a Saturday night with a group of 6. We arrived at 6:20 and waited 45 minutes for a table while having drinks outside. Once seated, we found the room to be extremely noisy....so much so that we really couldn't hear everyone in the group... just the people we sat next to, so it was not conducive at all to an evening out with a group. The food was OK. Small portions, but when we left and were able to hear each other, we found that most of us found the dishes ordered to be tasty. We ordered 5 different things between the 6 of us. Excellent food but so @#$@#$ noisy. Sitting 1-2 feet away from my fiance and I couldn't hear her, she couldn't hear me. If they don't soundproof the main room a bit it's not worth driving to. Oh, i wanted to like this place. I wanted to LOVE this place: we've been waiting for a good restaurant, any restaurant, in Germantown for years. I heard good things after they opened, then less-good things, then good things again. We finally decided to give it a try, despite the sparse and uninspired menu posted online (tomato salad is fantastic, but in August in Columbia County, you're eating local organic tomatoes every meal- thanks, not what I want to pay someone else to 'make')- a friend told us that there were plenty of specials, and we counted on those to broaden the range of choices. It's a pretty room, though as several others have mentioned, deafeningly loud. It might have been a really nice room ten years ago, but now it looks like every other place that serves local, thoughtful, etc. Grey walls, bare bulbs, wood stuff, marble, yadda yadda. I love the booths. We were given menus, informed of the one special (rabbit something- there was another rabbit dish on the menu). Vegetarian options seemed punitive- pasta with tomato and corn or some kind of grain/chickpea thing. (note to all restaurants: a meat-free pasta dish does not count as a vegetarian offering- if that is the best you can come up with, you are only demonstrating the limited abilities of your kitchen, and your contempt for people who choose, for a meal or a lifetime, to not eat meat.) Only one seafood offering- mussels and clams. Water is served- the first thing i taste and it's weirdly flat, almost soapy tasting. Husband thinks it's just soft water, but if so they should get it treated, or chill it at least...it's terrible, and had i been offered bottled i probably would have ordered it. But it wasn't offered, and i order a cocktail. it's green, and delicious, but the tequila it allegedly contains is nowhere in evidence. One app comes out, wildly over-salted. The second, a caesar salad, is also far too salty, and monotonous beyond understanding. The combination of kale and romaine sounds good on paper, but in reality proves disastrous. The romaine is in giant hunks that need extensive cutting, the kale in thin strips: submerged under too much dressing the kale looks like nothing so much as rotten bits of lettuce. It takes half the salad before i lose the impulse to pull out the 'wilted' pieces. Mac and cheese is pretty good, if waaaay too rich, and the other entree i was told was 'thoroughly ok'. I was too discouraged to try it. Our main courses were down on the table for about 5 minutes, plates still heaped with food, when our server asked 'Do you want me to box any of this up for you?' She then tried a second time to bus our table before we had finished- someone needs to tell staff that this isn't fast food...as much as one might want it to be (and as much as the sodium content might suggest it is). Server(s) were all very cool-looking but clearly too cool to serve- completely unfamiliar with basics of service (like, don't pick your nose on the floor)- nobody asked if we wanted a second drink (yes, i did) and nobody offered us dessert or coffee when we finally let them take our plates (while i was still eating the last bites of one of the dishes). The only thing i REALLY wanted off that forlorn menu was the polenta cake, but i was too tired and thirsty and dispirited to be bothered breaking into the waitress' trance/glass of rose to ask for it. it's funny watching your server drinking a lovely cold glass of wine and wishing you could have one yourself- kind of the opposite of every thing i've ever been taught about service. What should have been at least a pleasant interlude instead left me feeling both rushed and neglected. Paradoxical, i know...like the fact that i wanted more from this place- more drinks, more water, more food, more time- and i wanted to spend more money, even though they did such a lousy job with what i did get. Realistically, I would rate Gaskins a 3.5. My boyfriend and I stopped in on a Friday night around 7, and we were seated right away. We first noticed the ambiance, which was lovely. When we sat down, there were three different women asking for our orders, so it was a bit confusing as to who our waitress initially was. We started off with cocktails - I ordered a drink and asked for vodka instead of bourbon. The waitress came back and said it was not possible. Is this a pre-mixed drink or something? My boyfriend had two of the same cocktails and they did not taste anything similar to one another. Odd! We started off with the Caesar salad, which was delicious. For entrees, I was stuck between the burger and chicken, but the waitress suggested the burger. So I ordered the burger, and my boyfriend ordered the chicken. I wish I got the chicken - the burger was a bit too dry, but the chicken was delicious with lots of flavor. Overall, I'm glad to have tried this place, but not sure I would drive out of my way to come back. read more

Another five star restaurant in The Hudson Valley! Gaskins opened on a very rainy Saturday afternoon this weekend. Packed with interesting and happy looking people. The staff were helpful, enthusiastic and efficient and not too cloyingly familiar. This chic restaurant has a well designed layout and a superb flow. The space is elegant and well proportioned. I could eat here on my own or with a large family and children. The acoustics could have been bad but were not considering how many noisy people there were enjoying themselves in the restaurant and the bar. We were last minute, afternoon walk ins and had a great table within 30 mins. Everyone we met suggested we have the snap peas sprinkled with chopped, toasted cashews. We started with them. Delicious! We ordered the special. A huge pork shank with kale. $55 for two. By far the most expensive thing on this very reasonably priced menu. The meat was tender and cooked through. A shank is my personal test for any restaurant as it is so easy to get wrong, this shank passed with flying colors. I wish Gaskins all the best! I will certainly eat here ahead of any other local establishment. In light of this amazing opening I will be revisiting my reviews of other local restaurants to determine their stars and reviews and contextualize their relevance. One certain restaurant in Tivoli had better pull its socks up if it expects to compete with this friendly and unpretentious restaurant. read more

VERY excited to see and support a restaurant in Germantown. We've been twice now and will return. It looks like the core menu stays the same with a few new items added and subtracted, which is nice. A decent mix of price points and diet options, I'd love a buck off , here and there. Beautiful open space with artful details and nice views, some overlooking a grassy green. Charming + welcoming host and staff that make you feel like they truly are happy to see you. Fantastic signature cocktails, especially their take on a dark and stormy, I think it's called The Constant. Frothy and crisp--perfection! On our first visit (it was SO busy!) we had the fried chicken which was good, not great--a touch dry. The accompanying side was just a bit odd...unfortunately and unhelpfully, I can't quite remember what it was! The starter salad and side green we got (both I've forgotten the specifics of, sorry) were both...OK...it tasted like something an eccentric friend might cook, rather than seasoned chef. Just a bit on the inventive side. More recently we cheaped out a bit and chose had a burger (solid) + fries (EXCELLENT) and the kielbasa (OK) & beans (ho-hum), served with an odd assortment of parsley on top. I wasn't sure whether the undressed parsley was a (BIG) garnish or...an undressed salad. The beans where a bit heavy and earthy; my preference would have been for a bright crunchy vegetable, maybe a radish of some sort. I wish I had ordered the wood cooked muscles, which looked amazing. But, we cheaped out. People seem to love the place and be so very happy to be dining there. Looks good for small and large groups. Excellent meal - I had the soft shell crab and green goddess little gem salad ; others had the big salad or the kale salad - all great. The pappardelle dish was wonderful although the sausage was not our favorite. The chicken came with mushrooms that were out of this world. Just a great meal. The homemade chocolate ice cream was a little too fudgey for me. The drinks are a little pricey and we got carried away but almost worth the price. Service was good; we were seated at 5:15 and left 2 hours later without feeling delayed or rushed. read more

It's a pretty magical combo: rad people, killer wine list, and - holy crap, THE CARROTS! The food, and the atmosphere, is just honest and delicious. We came upstate from NYC to visit family and did not expect to find this hidden gem. The drinks were inventive and fabulous. The food- delightful. Started with the shishito peppers which were so simple but perfect. Then had the bluefish entree which was different than anything I've ever had. Never had a bad meal in this place. On our 4th visit, I had the tile fish with lentils and greens. The chef added this extra crunch of "it does not matter what" that was just the right taste sensation for tile fish which is dense and could be bland which it was not. We ordered and enjoyed the spicy fried chicken, creamy, dreamy chicken liver pate on perfectly thick, crunchy toasts with the right acidity added by dollop of grainy mustard, perfectly-cooked shrimp and cheesy grits, and a simple yet elegant beet salad with just the right amount of creme fraiche to make it sing. All I wanted was a relaxing dinner after a long day at work. I sat a small table in the Corner with a barking dog next to me. This is one of my favorite restaurants in Germantown, it is hands down the best restaurant in Germantown. My husband and I come here often and never had a bad meal! They only have a handful of items on the menu, however they change it up every so often. Recently we had the shrimp and grits, the shrimp were perfect and so fresh! They come from south Carolina and they were so sweet. We also really love the fish tacos and they have an amazing apple salad. The service is always above and beyond and the atmosphere is amazing! I would say we've had a mixed experience the four times we've eaten at Gaskins. Some dishes are excellent--all you would expect from a place that touts its fresh, locally sourced food. Last time, the fish and chips were excellent; the batter was crisp and delightful, and the fish itself was superbly delicate. Mac and cheese was fantastic. On another occasion, though, I received what looked like cigarette butts instead of fries with my burger. When all that is left are those tiny little pieces that can't help but overcook in the fryer, they shouldn't be served. They do a french press coffee, but I don't think the wait staff has been properly schooled in the method--coffee habitually comes to the table as weak as tea. My husband has a gripe about there not being salt on the table. I echo the comments of other diners about the bartender. Perennially grumpy for unknown reasons. We'll keep going and expect they'll work out some of these wrinkles. read more
