We discovered GILD while on the hunt for tacos in Missoula, and left having experienced so much more than that - like beer and flan! They were out of the two tacos we really wanted (al pastor and chorizo), but the chicken tacos were super tender and flavorful. The lengua was also super tender, but lacked as much flavor as the chicken. Unique hot sauces were a plus, but the salsa is where it's at. But the star of the show was the chocolate flan with agave whip and caramel sauce. The three combined created a magical combination that we've never tasted in a dessert before and alone will bring us back go GILD. They had several of their own beers and some guest taps too. They had a nice variety of house beers that tended to be styles that pair well with tacos, the best of which was the Mexican-style marzen. Service was super helpful and friendly, and they do a drawing contest for their beers that nets you some sweet perks if you win. Innovative, delicious, and reasonably priced tacos combined with an impressive selection of microbrewery beers. Don't be deterred by the small # of indoor tables, because there is a cool upstairs section. A few sidewalk tables is a nice touch! Our table tried nearly every taco, the tuna tostada, and corn appetizer. We were all impressed by the flavor combinations. Two kids can split the quesadilla, but the salsa verde is adult grade taste and temperature. Best tacos and cheese quesadilla I've ever had. And I live in Los Angeles, this place does it SO MUCH BETTER (say whaaattt???!!!) There's something to be said about quality over quantity. LA has the quantity down but quality....that's another story. Missoula has incredible access to better quality meats overall than LA and in general, better quality ingredients all around and the taste of their tacos and quesadillas really shows this. The meat in both tasted so clean and pure and exceptionally flavorful at the same time. That never happens with tacos in LA, you get garbage protein, heck not even the expensive fancy taco places' meat quality is as good as this place's. I also love that they make their own huckleberry hot sauce which was exceptionally wonderful on everything. Their quesadilla is on a different plane of existence all on its own. They crunch up the edges where the cheese spills out so it's almost like a cheese chip and MY GOD is it heavenly. I've never seen that technique for a quesadilla but now I want every place to do that. It's such a satisfying cheese crunch and the inside is perfectly gooey. I usually hate adding meat to my quesadilla but like I said, their meat quality is second to none, I highly recommend adding it. I also want to note, that their cheese tastes incredibly clean and not greasy. LA's low-quality tacos are overhyped using poor-quality garbage meat, honestly, why do I want this??? Gild's version of a taco gives me all the same satisfaction, it's still got that meat juice, and just the right amount of fats, but all those things are just better quality and taste so much cleaner. You won't be running to the bathroom after eating here and honestly, the prices are extremely fair for the quality you get. A special note to their brews, I love their take on beer flavors which are different from the typical breweries we tried around town, like their Earl Grey beer which was my favorite. This place is a must stop, try the menu, try the beer, and don't leave Missoula until you do. We ate here every day during our stay and gosh, I still miss it and I still think of that quesadilla. Gild is one of the best, if not THE best, place to get take-out during the COVID-19 pandemic. They have an easy to use website to place your order and they bring the food out to you when it is ready. As contact-free as it can be! For me, the food is really where it's at here at Gild. They make pretty much everything from scratch and it shows. The chicken burrito is one of the best burritos I've eaten in my life and I used to live in San Diego. Everything here has multiple dimensions of flavor and is not what you would expect (but in a good way). When I go out to eat I want to get something I couldn't make at home and Gild hits that mark! While I've never had the pleasure of dining in at this brewery, the seating and atmosphere look really fun. Hopefully someday soon I will have that opportunity. read more

Went here on a Sunday afternoon. It wasn't too busy. It was the first time there. They offer beer in what look like skinny, 12 ounce glasses. They had no TVs to watch sports, which is, sadly, common in Missoula. The menu was woeful. Not much to choose from, and what they did serve was virtually unrecognizable from anything I'm used to in the city. The chips and salsa were passable. I had the supreme quesadilla, which contained smoked cabbage and caramelized onions. It left me with an aftertaste that lasted longer than any stick of gum on the market. The flan was good, but I couldn't eliminate the taste of the misnamed quesadilla at all. I guess if you take broccoli and asparagus and throw in some grilled bananas, and then slapped a tortilla around it, you could call it a quesadilla, too. Dog friendly establishments are my fav! Gold has seating out front for people with pups! We saw a burrito come out that looked yummy and shareable. We got the burrito and added Carne Asada and started with a basket of chips and salsa Verde. My husband is a connoisseur of Carne Asada burritos, and so I was nervous that he wasn't going to like it. My wife and I have been going to Gild since they opened. We were even invited to sample potential dishes prior to their opening. We enjoy the food (though the quality seems inconsistent at times), the beer is good, and the atmosphere is nice. What can be hit or miss for us is the staff. I would say probably 90% of the time the service is great and the servers are friendly. One particular server has been rude to ourselves and others we've witnessed on more than one occasion, and that's the reason for the lower rating. read more

She helped us discover the tastiest taco ever (beef with Salsa Macha). OMG! What an incredible blend of flavors and the black garlic sauce on their chips must be sampled. The Gild is hands down the best Mexican restaurant in Missoula. I grew up eating Mexican food on Buford HWY in Atlanta, as well as my mom's kitchen, and this place is the only restaurant in town that comes close to those experiences for me. I've eaten here almost once a week since they opened and never had a bad meal, truly. Everyone is super friendly and their Houseplant Jungle beer is the stuff dreams are made of, mine anyway. My husband, daughter and I always end up ordering half the menu, particularly the quesadillas and al pastor taco, and never leave disappointed. This place helped get us through Covid, with their to-go meal kits and, more importantly, to-go beers. They seriously brought their A-game to keeping their customers safe. If you visit, make sure to try all of their salsas and get dessert. If you have children, we think sitting upstairs is more comfortable for little ones. read more
