The texture is chewy (skin), soft (fat) and dense (meat). The sauce may look over the top, but it adds to the silkiness of the pieces. The "fat" is not greasy. It's puzzling how they rendered the grease. I grew up eating this dish and cook it too. This dish by far is the best I've had. Service is fantastic; helpful and attentive.
