But, as Happy Lamb Hot Pot demonstrates, things that are great in theory aren't always that way in practice, Here's how it works. The first step is to choose a soup base from about half a dozen varieties. You can have one, two or three different types in the same pot (although adding a third will cost extra). Then you choose meat: chicken, beef, lamb or pork. They also offer some premium cuts of beef for an additional fee. Once those are ordered, you visit the buffet where there's a wide selection of seafood, vegetables, sauces and even some foods that don't go into the hot pot, like chicken wings, sesame balls and fried rice. While I loved the fact that there were so many options, it quickly became apparent that some were much better than others. For example, the chicken and lamb were fine, but the non premium beef we got was not the best quality. The seafood and vegetables from the buffet were fresh and plentiful.
