    Korean food culture, steeped in tradition and community, is one of the few Asian culinary traditions that effortlessly incorporates Western influences. The fusion of typical European and American dairy as well as meat products with Korean ingredients and spices has created exciting and delicious combinations. Perhaps one of the easiest associations one can make when thinking of Korean food is kimchi, but there is so much more to Korean food and Korean cuisine than just this side dish of fermented vegetables. The Garden State is home to some of the most vibrant Korean enclaves in the country, namely in Bergen County: Fort Lee, Palisades Park, Leonia, and onward. Located on a busy Broad Avenue in Palisade Park (K-town), some of my Yelp friends decided on a light dinner at Halmae (translates to grandmother) Noodle prior to our elite event. Upon entering this cozy establishment as first-timers, we were greeted by the staff and got a table immediately. The menu features noodle soups, dumplings, and kimchi fried rice. We decided on an order of Jjin Mandu 찐만두 (steamed dumplings) of Chinese chives and beef & shrimp as well as Chicken Sokkeum Bap 치킨 볶음밥 (chicken fried rice) for sharing. Side dishes consisted of a small cabbage salad with a mango dressing, and some super fresh banchan (반찬) of kimchi and kimchi daikon started our meal. We washed them down with hot barley tea. Every dish we tried reflected the care and quality put into their food. It was a perfect balance of tangy, spicy, and savory flavors at an affordable price with a healthy portion. From the moment we walked in, the staff was welcoming and attentive and made the entire dining experience seamless. Halmae Noodles exceeded all expectations.

    Had Halmae Noodle bookmarked for the longest time after seeing that they have dakgaejang! My fiance & I made the trek here from Long Island and it was definitely worth the trip. The restaurant is unassuming from the outside, but their noodles soups are incredible. We ordered the dakgaejang kalguksu, clam kalguksu, and the kanpung mandu. I've been looking for a good dakgaejang after my favorite place in Queens closed, and this was solid. It maybe could have used a pinch of salt, but the broth itself was flavorful and toppings & noodle portions were generous. The noodles here are definitely handmade - the texture is excellent. I also really liked my fiance's clam kalguksu. One thing's for sure - they don't skimp on anything here. The kanpung mandu was just okay. I would probably just order the steamed next time. Service here was great and really welcoming. Our banchan dishes and water/tea never ran empty since they came by to check on us often. Would definitely come back to the next time I'm in the area!

    4.5 stars overall but 5 stars for their guksu noodle dishes, which are must-orders of this restaurant, especially if you're craving a warm, comforting meal. The restaurant specializes in homemade hand cut noodles and offers other dishes as well, but I'd probably only really come here when I'm craving their noodle soups. I tried the clam guksu and it was delicious! It came with plentiful amounts of clams and the noodles were the perfect, chewy consistency. I found a tiny bit of sand in a clam or two, so just be aware of that. It didn't bother me too much as it was only in a few. I also tried the seafood pancake which was large and great for sharing. The staff here were very sweet and friendly and often came around to ask about banchan refills. Will definitely be back when I'm craving noodle soups!

    One of the iconic hand-pulled Korean noodles, brimming with succulent fresh clams, paired alongside bold and sizzling kimchi pork fried rice. Both are absolute staples in Palisade Park. The only catch? It's a tiny, bustling spot with just a handful of tables--so expect legendary long lines. Patient foodies happily wait 30 minutes or more for a seat. If you've got the time and an adventurous palate, this place is pure magic.

    Love that you can combine both regular 칼국수 noodles and 수제비 cut noodles! It's a no frills spot with very simple side dishes and large portions, so come hungry! There's a slight discount with cash payment but they take card as well.

    Food was OK but it wasn't 4 or 5 star worthy. Dduk Bbokki uses rice cake that is very soft and cake-y, typically type if mostly rice is used instead of mixing in wheat for that slight chewy and cleaner texture. Not really my type. Dumpling had a good crunch but blend. Need a lot of soy sauce. The noodles were ok, but the summer only cold buck wheat noodles had soup that was way too much kimchi flavor than anything.

    This is a fantastic spot if you're craving knife-cut noodles. We ordered a variety of dishes: Beoseot Kalguksu, 蘑菇刀切面 (Noodles Soup with Mushrooms), Maesaengi Kalguksu, 海藻面, (Noodles with Seaweed fulvescens), Deulkkae Kalguksu, 紫苏刀切面, (Noodles Soup with Wild sesame), and a Seafood and Green Onion Pancake. The portions were more than generous between the three of us. We each ended up taking half of our soup bowls home. What I appreciate is that when you order the large noodle soup, they give you a separate small dish to cool down your noodles since the soup comes straight from the stove and is incredibly hot! Each of the noodle soups stands out for its knife-cut noodles and unique, complex broths. The Mushroom Noodle Soup had a distinct umami flavor, with potatoes adding a starchy texture and a subtle heat in the seasoning. The Seaweed Noodle Soup was particularly notable for its seaweed and shredded cucumbers, which added freshness. It also had a slight kick of spice, which was a nice surprise. The Noodle Soup with Wild Sesame was the most indulgent. It had a rich, Alfredo-like sauce that coated the noodles perfectly. A touch of white pepper and ground sesame seeds gave it a lovely nutty flavor. As for my favorite, the Seafood and Green Onion Pancake was sublime. It was loaded with seafood and green onions, though I wish it had been a bit crispier. The sauce served with it was tasty, but I prefer a bit more heat. Thankfully, they provided two 2 oz containers: one with jalapeños and the other with a spicy gochugaru-based sauce so I could adjust the heat to my liking. The service was friendly, and while the place is cozy, it's best suited for smaller groups. If you're dining with more than four people, seating might be tricky.

    On a cold day this will absolutely hit the spot. The chicken kalguksu broth was so deep I emptied the whole bowl. The noodles were chewy and soaked up the broth well. My wife got the clam soup kalguksu and they did not hold back on the clams which were fresh. Highly recommend!

    Having been to Korea and many other Korean restaurants in SoCal, I have to admit that Halmae initially impressed me. For starters on a rainy day, my friend and I were craving something warm and new, hence stopping by here. Immediately as we went inside, we were greeted, orders taken, sides served. As a personal opinion, you can often tell how good food will be based on their sides, and that kimchi was GOOOOOD. The rest of their sides were noteworthy, too, but the kimchi was outstanding with the perfect balance of all flavors. We went with an order of seafood pancake and halmae guksu (#12) and yukdaejang kalguksu (#20). The seafood pancake was a tad bland, and the spicy sauce that came with it did not enhance the taste much. For a better pairing, I think a darker salty / sweet sauce might be better. The halmae guksu also left a bit to be desired, since there were maybe 3-4 servings of noodles - YES IT WAS STACKED! However, there were not many other ingredients despite how much it may look like from the top, and it felt like eating endless noodles with barely any entree. My friend's yukdaejang kalguksu (sub'd rice) was better, though. There was a good portion of meat, and the seasoning was perfect. After the meal, paying was fairly straightforward, and they did allow us to both use our own cards. Nothing beats a nice warm meal on a rainy day, and it tasted good, but it did leave a little more to be desired.

    Tucked away in Palisades Park, this hole-in-the-wall spot is clearly a local favorite and for good reason!! There is lots of street parking available nearby, but metered. My friends and I came around 2 PM on a Saturday and had to wait a little bit, and people were still coming in after we got our food! The seafood pancake was crispy, flavorful, and paired perfectly with the fresh, homemade kimchi and radish sides. We shared the Yukgaejang noodles (doubled it for just $3.99) and the portions were perfect for 3! it tasted like grandma's cooking -- just like their restaurant name! It was so comforting, the chewy noodles and the taste of the rich broth. Fried dumplings (beef and chives) were okay, but I'd skip them next time and get something else. Definitely coming back to try more noodles!!!

    Been here twice so far and can say that both times were just as satisfying! Both times me and my friends came around 2pm and there was still a few minutes wait to be seated. Service was very friendly and quick, the servers made sure we had everything we needed. The food was good especially their kalguksu which they are known for and is their specialty. The broth for both the yukgaejang and seafood kalguksu are hot and hearty, offering warm comfort on a cold day. Portions are quite generous and you can opt to get double noodles for $3.99 which I'd recommend if you want to share. We also ordered fried dumplings which were just ok, nothing special. The seafood pancake was quite good, not greasy and had a good amount of filling. Their side dishes are also quite delicious and they are quick to refill. Overall, a good restaurant if you are craving a warm bowl of noodles! Will definitely be back again.

    I've eaten here about 6 times over the past year. The Korean dinners are always delicious, plenteous, and reasonably priced. The staff is always friendly. On many Sundays, I had to standt in line for a table, but the wait time was never more than 15 minutes. Definitely give this place a try, don't think that you'll be disappointed!

Finding parking is quite challenging given the location on a busy commercial street, so make sure you can come earlier than meal time to have better luck. They have waiting seats OUTSIDE so yeah I suppose it's quite popular at times. 1. ATMOSPHERE (3/5) - This location is small and it's pretty straightforward place. But I still found it cozy, with decent amount of seating (I think it can handle 15-20 max) and little details like wall with wood ledges and coat hangers were a nice touch. Seating was comfortable, though we tied our down parkas around our waist as another party had hung theirs on our side of coat hangers. 2. FOOD (4/5) - We dove right in to try their famous gejang (~Korean raw crab "ceviche") and ordered two of their namesake gookbap (rice with soup) to see how they are. Here's how it went down. - Gejang (App, $20, 2/5) - I had a hunch that on a holiday perhaps I should not order this, but my craving for succulent crab flesh be damned, I went for it and unfortunately, the meat was not well-marinated as I had feared. Gejang is a dish that has to sit in the complex soy-based pickling liquid for some time... and if restaurant is too busy churning them out or if it's slow season they won't do this properly. It not only wasn't fully marinated, I think the marinade was off because the spiciness was way out of balance and was overpowering. Perhaps knowing that it didn't have enough time to marinade the kitchen put extra diced jalapenos to compensate? Because that's exactly what it tasted like - you can't fool me. I tried to salvage the dish by asking a confused-looking girl server for some sugar, but yeah, can't un-do the overpowered marinade with sprinkling of sugar. This was really unfortunate as I was looking forward to a good bite. - Ahjae Gookbap (Main, $18, 5/5) - Thankfully, their namesake gookbap was spot-on to salvage our dining. Generous slabs of succulent beef on the bone and off the bone was swimming in a hearty beef/bone broth that tasted clean and focused. Portion was good, and can I say their banchan of fish cake moochim & unfermented kimchi & ggakdugi(radish kimchi) simply ROCKS? That was some serious deliciousness and dare I say value at $18 at a day and age where hamburger costs over $10! You win at life by ordering this! 3. SERVICE (4/5) - Our server girl was attentive and food came out early on though later it was a bit hard to get her attention promptly. We found ourselves putting hands in the air, and wavin' like we don't care... for a little while. They provide gloves & metal bin for gejang which was a nice touch for people to keep their fingers clean. One thing I'd like to mention: Plastic cup they served water in was all chipped on the rim so we instead went and got water from their hot & cold water dispenser which had metal cups (as many korean restaurants do). I'd suggest them to replace all these old plastic cups with metal ones for health reasons. Overall, we were satisfied with our meal. I'd chock up the gejang mishap to it being a holiday. I hope chef was just off with the marinade that day because I am a certified gejang pro(I catch and make my own) and that balance ain't it. But I will give it another try during warmer month and we'll definitely be back to try sooyook moochim, oyster jeon & other great soup offerings.

Really flavorful and so good to have on a cold day. 3) ahjae ppyo jjim (4.5/5) - Braised prime beef meat bones in soy reduction with carrots, radish, dates, chestnut, rice cake and glass noodles. We got non-spicy. It came in a HUGE bowl. Definitely meant to be shared with a group. Took leftovers home and it was still yummy the next day mixed with knife-cut noodles I had at home.

If you're not up for Soondae Gook, their Seollung Tang (deep boiled bone broth soup w briskets and noodles; $15) is also good. Again, nothing too crazy, but homey... much of which reminds me of what my mom or grandma would cook at home. Enjoy!

The noodles have that perfect chewy texture that is incredibly refreshing on a hot summer day (though I'll still crave it in the winter, too!). Don't skip the side dishes--their dumplings and mung bean pancakes are delicious and complement the noodles perfectly. A few things to note: It's located on the second floor of a small building with several other eateries. It's self service so you order first and pay and pick up your food when your number is called. Tip is not required I am told. Parking can be a bit of a challenge as it's mostly street parking, so give yourself a few extra minutes to find a spot!
