I was excited to find a cafe that serves Japanese soufflé pancakes nearby, so went to check it out this week! Hanabusa cafe is located in a small plaza, but parking wasn't hard, maybe because I went on a weekday. Cafe decor is cute and feminine (baby pink and white color scheme). They have signs everywhere warning that pancakes take 25 minutes to make, which I found to be fairly accurate, so do be warned! I ordered an original soufflé pancake, and a latte to drink while waiting for the pancake. The latte was only okay, but was good to have something to drink while waiting since it takes so long. The pancakes were pretty yummy. Not as good as other soufflé pancakes I've had, but good. The whipped cream that came along with it was also good, but not amazing. I do wish there was some sort of syrup served alongside it. I wasn't a huge fan of the plate arrangement, maybe a little too cutesy for me? Service is not really interactive or personal. They take your order at the counter, and you go pick it up when it's ready. Overall, this cafe was only okay for me. I have Yelp bookmarked this place for a very long time. However did not have a chance to come. Came for Mother's Day brunch. Pleasantly surprised as some Yelp reviews were low stars. I finally got the chance to try Hanabusa! I arrived around noon, and surprisingly, it wasn't busy at all. After placing my order, they informed me that it would take about 20 minutes to prepare the pancakes. I didn't mind the wait. I ordered the Ube Pancakes. The pancakes were delicious and fluffy and light. However, I found the ube flavor to be a bit subtle; I was hoping for a stronger ube taste, but it didn't quite stand out as much as I anticipated. If I'm ever in the South Bay I'll come here for fluffy Japanese pancakes now that Gram pancakes in the city closed. The décor is very light with a lot of whites and pastel pinks and there are a lot of windows so the café is always bringing in sunshine. Flowers decorate all the tables which is a nice touch. I got the chocolate pancake which was good, I love chocolate everything but I'd like to also try the strawberry and matcha because you get to drizzle that sauce on. The presentation of their pancakes was pretty but for a place that cares a lot about aesthetics I wasn't impressed that they served their drinks in paper cups. The tableware is aesthetically pleasing with the matte pink plates and gold utensils. The table tops are marble-esque with a cute potted plant resting on the side. This was my first time trying Japanese soufflé pancakes. They are tremendously different from American pancakes, being much thicker in size, but significantly fluffier/lighter in taste. Only difference between the matcha and original soufflé pancake is the side of matcha sauce. Eating the pancakes got boring towards the end because you're just eating pancakes and fruit, they really needed some sort of protein or extra twist. The wait time for this restaurant is very long, the estimate is ~25mins for your pancakes to be ready, but that can go up drastically depending on how busy they are. It's one of the places where you walk in, order, they give you a number and your food is brought out in about 15-20 minutes. It's not super expensive and the pancakes are pretty damn tasty. This was my first time trying souffle pancakes, despite wanting to try them for years. Some friends recommended this place so we went all together. The shop is super aesthetic and great for small groups. Pretty much just counter service - you get a buzzer and you pick up your order. The pancakes are made to order, but it takes 25 minutes. They do offer card games to keep you entertained during the wait though. I've heard that some fluffy pancakes deflate if you don't eat them fast enough, but it doesn't seem like an issue here. I didn't dig into my plate until 10 minutes later since one of my friends was still waiting for his order. I ordered the matcha pancakes and it's basically just the regular fluffy pancakes with a pour-over matcha topping on the side. It would've been cool to have actual green matcha pancakes though. The pancakes came loaded with whipped cream and the strawberries weren't the sweetest but were a great contrast to the pancakes and sweet matcha topping. I finally made it to Hanabusa after years of watching it in the neighborhood! We went for Mother's Day, right at opening since I was worried it would be crowded. Found a table right away and put our order in at the counter. The food: I loved it! I got the Ube pancakes (seasonal) but our group tried all 5 options on the menu: ube, matcha, strawberry, plain and chocolate. The Ube is a little subtle but tastes good and looks beautiful. The matcha is the least sweet and has a decently strong matcha flavor so make sure you like that. The strawberry has the strongest flavor and is VERY sweet! I did not taste the chocolate but my son said it tasted like just Nutella scooped on top - he liked it. My other son said the plain is good - esp. if you don't want any of those other flavors, just whipped cream on top. What else you need to know: There's only 4 options of pancakes on the menu (plus maybe seasonal). Plus some drinks (I got a latte). There's no other food, or savory options. You'll pay $15-17 for 3 pancakes + sauce and fruit. They open at 9 and close after lunch or when they run out of food - or early if it's a holiday (like Easter or Mother's Day). There's no reservations, and the pancakes could take up to 30 minutes - we brought Uno to play while we waited, but it only ended up being 10 minutes, I think because we were among the first people there in the morning. My coworkers and I came on a Sunday afternoon, a very quiet plaza with plenty of parking and quite an empty cafe (a bit dreary so a cute cafe date was called for). There was only one other table aside form us, there was barley a wait before our orders were received; basically once we sat down and set the table up/got comfy, the orders were ready. Service wise we didn't really take much from it as the only interaction was ordering and grabbing our plates, simple and sweet. We had to bus our own tables and there was a drop off area that was very clearly labeled. Since there was 5 of us and we only wanted a snack, just to give the jiggly pancakes a taste test - we got 3 orders: original, strawberry and matcha. The fruits on the plates were a bit of a hit or miss. Strawberries were very tart, worked well with the sweet pancake, the blueberries were the perfect pop of sweet, and the bananas just didn't seem as ripe. As for the pancakes, it was much more eggy that expected. I did try the jiggly pancake in Japan once (Happy Pancake or something in Ikebukuro) and this was no where near the fluffy or lightness in sweetness to me. The pancakes here were also a little on the dry side (didn't see syrup available), the fluffy whipped cream and strawberry cream/syrup was very much needed. I did like the strong flavor of matcha cream (to pour on the side), it wasn't too overwhelmingly strong but the flavor was prominent. Final Thoughts: This seems like a nice place to chat with friends over a dessert or even get some work done with a snack (free Wifi if I remember correctly). First time back in years and I've actually come to like this place even more. The vibe has definitely changed: the first time I was here, the owner was there and there was a bit more of a feeling of ownership back then. When I came this time, it was primarily young 18-20 something's running the place and jumping between songs from an anime to kpop. Another review mentioned the interior isn't as cute anymore and yes, the pastel furniture is aging. They are going to be due for a makeover any day. However, I actually am upping them to 5 stars. Pancakes have improved with time and a seasonal flavor is a fun new edition. I loved the taro flavor and the fruit included is always so fresh. My pancake was a little underdone so I had a few bites of fluffy egg white and not fully formed batter, but that's pretty common with this kind of pancake so I don't dock points on that. Admittedly I probably would avoid a long wait for this place because they only serve pancakes so I'd be worried I'd get hungry again soon after (sweets never keep me full for long). Fun place to take people to indulge on your sweet tooth! And a great spot to catch up with someone; just don't show up too hungry because the pancakes can take AT LEAST 25 minutes, but sometimes longer (I came in an hour after opening and no one was there so my order was the first and it took closer to 35 minutes) I have a huge sweet tooth and love these kinds of pancakes so that's what makes this place 5 stars for me. I was devastated when the first soufflé pancake shop I went to in the South Bay closed down. Thankfully Hanabusa opened 15 mins. away! This shop has pink and white decor, plenty of tables and seats, and white plates with goldware! Careful at the tables though. They're not heavy / really light to move. I really liked the food here! I got the strawberry soufflé and the chocolate soufflé. I think the strawberry was definitely better though. We also got the coffee and flavored milks. The coffee is pretty average and was a little small. The flavored milks were surprisingly good! You don't usually see that offered at other places. I just had to try an order of the chocolate pancakes, which sizewise, was perfect for sharing (but tastewise, I wanted it all to myself)... These Japanese souffle pancakes were cooked perfectly and definitely eggy in flavor, topped with sweet, thick and creamy chocolate mousse (tasted like Dreyer's brand classic chocolate ice cream, which I really like) and delicious bite-sized slices of strawberries, blueberries, and bananas (more as a decoration for plating but good enough for me). I also had an iced mocha and it was pretty good and went well with this dessert-like dish. The place was bright and modern with a decent amount of seating, mostly inside, but there was one table outside as well. Service at the counter was standard, not especially friendly or professional, but no complaints. I was quoted 25 minutes for my order to be ready, it ended up taking about 40 minutes. And there was no line to order (just one person ahead)... but that's probably cuz they had a sign on the door that said "out of pancakes/at capacity". I don't think the use of this sign on the door is good business practice. They put it up and took it down at least twice while I was there this past Sunday (within the same hour). While it was down, I was able to order pancakes, so it seems they are not really out of pancakes when they post that sign (perhaps they're just busy or want a break). If they really do run out that early in the afternoon on any given day, that's even worse... Running out of their main menu item 4-5 hours before closing time!?! I have been here previously 2 times with no luck. The first time google maps stated Hanabusa closed at 6, I arrived around 3 and there was a sign that said they closed early that day. I've been on the hunt for souffle pancakes since traveling to Hawaii. I happened to be in SJ and randomly looked it up and found this cute cafe! Lots of parking, super cute space, however; there is a clear sign that the pancake wait time can be up to 25 minutes. So do not be surprised! Update! I've been to the place now 3 times. The cute and terrific service is still there. Has the place improved to the point I can type the place is legit? Yes...and no. Yes, the place has improved because the place is more cute. I see anime flashes, even if it's that "Madoka" thing. Not only that, there are multiple K-pop touches. Another part they improved on is that today's visit had multiple American classics played, and though I didn't type this up the first go around, I did hear K-pop also. Third part: I did see little used hiragana for a note inside, いらっしゃいませ/"Welcome". The last part to bring out: the list pancakes grew a bit with strawberries. No, the place is still flawed, and I can't call the place "legit" as a result. (I had "Too Legit to Quit" pop into my head just now. Yes, I'm old.) It's not that the place doesn't try. Whether or not the pressure of perfection is there, I don't know. (I'm a Bay Area guy after all, meaning I expect my Japanese spots to be that good.) I think at this point, I can't knock them for having foods and drinks a bit pricey because Bay Area expenses. What I'm still twitching at though are the lack of an outside kana and/or kanji sign, J-pop and most importantly, the juices along with a still limited list. I know the fruit milks are there, but the juices are there for people that are not good with lactose. If there are cherry and peach pancakes (Peach Well Spring Child-san/Momoi Haruko-san likes the Bay Area), that'll be exciting. Hanabusa went from a 3 to 4 in months, but it's a weak 4. [[ Location ]] You'll pass by a bunch of residential housing before getting to the plaza that Hanabusa Café is in but their sign is clear. Since they are located in the corner spot, they have a huge sign you cannot miss when you pass the streetlight before it and they have another sign near the parking area. There seems to be a lot of parking spaces but I did go during Memorial Day Weekend 2023 so it was far less busy than usual. [[ Restaurant ]] I thought it was pretty organized with enough seating for how big the place is. Lots of pink décor and I think relatively IG worthy. [[ Service ]] Like other reviews have mentioned, the staff is relatively young (high school, college?) but I thought they were really friendly and were all working hard getting orders ready, cleaning up the café, or clearing dishes. No issues here. [[ Food ]] I decided to try out two things here: 1.) Strawberry Soufflé Pancake ($16.99) 2.) Lychee Tea ($4.99) In my opinion, the Strawberry Soufflé Pancake was really good. Although there was not a lot of jiggle to the actual pancake, it was soft and fluffy. I thought the pairing of the cream and jam were delicious (not too sweet, good balance) and the fruits that came with it were fresh. One order is definitely shareable between two people but for me, I think I could of ate one order all by myself. Be prepared to wait around 25-30 min after you make your order though so hopefully the person/people you brought with you are good company. They are very transparent with this as well with a sign stating that you will wait so I was expecting this already. I forgot to customize the Lychee Tea (less Ice, less sugar) so I got the normal preparation of it. I actually found it to be quite refreshing with a good strong taste of Lychee. I think if I were to adjust it, I would dial down the sweetness a tad bit but I thought the normal Lychee Tea was quite good. Hanabusa is a popular venue for Kpop events, and I attended this weekend for the BTS anniversary event. My friends and I arrived pretty early because we read that the wait time would be long. I am thankful for this restaurant's transparency about the wait time for the souffle pancakes. They regularly update the sign on the door for pancake wait time and pancake availability. We ordered pancakes and drinks a few minutes before 11, and our order was ready at 11:15, so it was actually quicker than what they told us. The interior was cute but it was pretty small and got crowded. Aesthetically it's nice for a study date, but due to the size and crowd, it might be too loud for studying activities. Now for the real deal - the food. The matcha pancakes looked appealing. It was actually regular souffle pancakes with matcha syrup on the side that you can drizzle. However, we all felt that the pancakes tasted better without the matcha. The eggy flavor of the pancakes did not taste good with the starkly bitter matcha on the side, so i just enjoyed my pancakes without the matcha. The pancakes were pleasantly fluffy and soft and i actually liked the overall egg flavor. The fruit was fresh and the regular syrup was fine. It was just a small serving for me overall. We felt the drinks we ordered were not decent. The fruit teas tasted like Kool Aid and we have had better fruit teas at other cafes, so they were not worth the price. If you attend Hanabusa, the pancakes are fine, and you will enjoy your experience if you are interested in instagram worthy interior and attractive food/plating and dont mind a wait. However, I care more about the food quality and prefer restaurants with plentiful serving sizes and a wider menu, not so much the aesthetics. This was not my cup of tea, but I appreciated the care that went into the presentation, hosting the kpop event, and the friendly service. read more

I've wanted to come here for so long and I'm so glad that I finally made the trip! This place is so cute and well decorated and the food is delicious too! They tell you when you get there that it will take minimum 25 minutes to get your order, maybe longer if it's busy, but the wait didn't feel like that long. My friend and I enjoyed our coffees before our orders were ready and it gave us plenty of time to chat and catch up! I got the strawberry pancake and it was amazing! They were so light and fluffy and the strawberry cream was incredible! I think this is the only soufflé pancake place in South Bay (please tell me I'm wrong) so I usually come here to fulfill cravings. The wait time does get long sometimes since they make it fresh and they do get busy. They advertise wait times of 25 min but I've come in before and only waited about 10 min. The pancakes are super fluffy and warm. I usually get the original and it's not crazy sweet! I got the Strawberry Shortcake cup! It took a little less than 10 min as they made it quickly. For this specific item, they said the pancakes are freshly made everyday and then stored in the fridge as the assembly is made to order. The actual souffle pancake orders take 25 min. Which is understandable as souffle pancakes do take that much time to cook. The staff here are super friendly. Don't be rude, and they will be nice back. Easy. Saw this place trending on tik tok decided to go check it out, and see what the hype was about. Not going to lie, the pancakes seemed pretty good. Drove here from san jose it took about 20-25min to get to this place. Once, i got to my destination there was not many people there. Service was fast as there was no one really waiting in line or for food. What we ordered: Regular souffle pancakes- they were "meh" they werent sweet anfd it seemed like they wefe missing soemthing Matcha soufflé pancakes- not what i expected.
