The roll was hot and fresh. The au jus was poured warm. Very delicious bite Tabbouleh-crisp and fresh. The perfect compliment to my French dip. Ribs- saucy and tender. Awesome serving size for the price. Osaka style pressed sushi-super fresh. Wish there were more pieces in this roll. I devoured it. Classic martini- very boozy and delightful. The goats cheese stuffed olives was a nice touch. Prosecco-never a disappointment. Crisp and refreshing. Service was superb. Our server was very personable. I've passed Hillstone countless times over the years and have heard stories of their hospitality, particularly how they pour your martini into a fresh, chilled glass before you finish it, but I wasn't rushing to visit. I had written it off as another chain, and thought I might save it for when I'm in a small U.S. city and it's the best option in town. It's been years and this option hasn't materialized, so I finally made reservations, which were surprisingly hard to book. This place is well liked and popular. I was kind of surprised by the less than warm reception we received when I walked up to the host stand. They didn't say a word, just gave me blank stare and waited for me to speak. They seemed surprised that I had a reservation and seemed ready to tell me they were fully booked. Our servers were much warmer, and were nice about recommending a particular sushi roll, telling us the specials, and yes, replacing our martini glasses. I had read about how popular and well liked their sushi rolls were. My boyfriend expressed deep skepticism when I told him this, because he thought this was a classic American restaurant and that it would be a mistake to order sushi. But walking in we saw a large neon sign advertising their sushi and I pointed out how sushi was not only the first section of the menu but the largest one. When the server recommended the coconut shrimp roll, we decided to go for it. It was decidedly fine. It was wrapped in rice paper, which masked the fact that the rice was mushy and too sweet. My entree, which was the trout topped with crispy rock shrimp sounded delightful but was so salty to the point of being inedible that I didn't even finish it. My boyfriend thought his french dip sandwich was fine but not good enough to be memorable, and he also didn't finish it. The best bite I had was the spinach artichoke dip, which I have no notes on. The space is beautiful and we appreciated little details like that all the liquor bottles at the bar face the diners in the dining room so you can glance over at the bar and see what the selection is. And of course the martini glass trick was charming and I've read that many other restaurants have replicated this practice. I understand that people enjoy a place like Hillstone, a reliable place that maintains consistency, but the food was far too mediocre for this price point for me to justify return visits. read more

Very busy and hard to get a seat at the bar. Tables are all reserved well ahead of time. We started with the spinach dip which was fantastic. Rich, great cheese flavor, spinach was ample and tasty too. Would definitely recommend Got the fench dip for my meal. The beef was thinly cut and definitely on the rarer side. I don't normally like rare, but because it was so thinly cut, none of it was chewy or awkward to eat. Great flavor to the sandwich and the au jus was rich and flavorful. Only nit for me is the fries are too thin and didn't have a ton of flavor, but there was so much other food I didn't need the fries anyway. read more

You know this place is good when both my husband and I both wanted to come here for our birthdays this year! Definitely recommend a reservation and don't be late. Follow the dress code too. We had a great time. I ordered the guac and Caesar salad has an appetizer. Those croutons have me in a chokehold. I also got the salmon with broccoli and we shared the brownie for dessert. My husband got the Caesar salad and 2 entrees- the streak and the roast beef sandwich. He loved both. Bill totaled $260 and we tipped well. Service was great and staff was so nice. Oh how I love this restaurant. I came here with my wife once for her birthday and loved it so much I came for my birthday. The staff here from the front desk to the servers are very nice and we were seated after waiting like 5-10 minutes even with a reservation. I already knew what I wanted which was their very popular USDA Prime famous French dip sandwich. I ordered their Caesar salad as my appetizer which did not disappoint when you look at the empty plate I left them for my entree I ordered 2, the French dip sandwich and their steak frites which I ordered the 1st time i was here. When I tell you the sandwich was AMAZING. I don't think I said one word while eating it because it was that good. The steak frites again did not disappoint. My wife ordered the pan roasted Scottish salmon which she says is by far the best salmon she's had and she orders salmon almost any chance she gets, so that's saying something. Also I had an old fashioned manhattan in a chilled glass which the servers come by every once in a while and swap my drink to a new chilled glass to keep my drink cold. 10 out of 10 restaurant for me and will continue to come here. A family favorite steakhouse! Ordered their signature Hawaiian ribeyes, knife and fork ribs, and spinach artichoke dip as an appetizer. Would recommend all of these dishes to try. FYI the steaks are marinated (not dry rub) which gives it a sweeter flavor in my opinion (and why we love it). Service today was top notch! Lisa was our server, and she always brought a cold glass for cocktails, water, and plates before we had to ask. Hillstone does have a policy of accommodating tables of 4 or smaller. So, truly wish this would change in the future. In the meantime, will still keep coming back for the great food, service and jazz-filled ambiance. Make a reservation if you can! I made a reservation for a really bad time (3:15) cuz nothing else was available ever... and when I saw how bad traffic was called to reschedule (literally 5 min. Later) and was threatened with a $50 charge if I didn't make it. Asked if I could move for the next day and was met with this horrible attitude by both the hostess and then manager? In such a way that I decided to grab a cab and run not to enrage them... My experience turned out fine once I was inside but getting in, made me NEVER want to come back. hillstone is a new york classic. you know what you're getting - the food is so consistent and definitely lives up to the hype. portions are large and can definitely be split. my favorite of the sushi is the coconut shrimp - it's SO good?? of the mains - i weirdly LOVE the veggie burger (and i'm not a vegetarian). the off menu chicken sandwich is what all the people rave about. the french dip is good but i've had better other places. if there's one thing hillstone does exquisitely, it's the martinis. they switch out your glass mid-drink so that your glass is always cold... now THAT'S service. the ambiance is sexy dinner vibes. dimly lit. the bar is always a scene. waitress/waiters are always doing the most but if you don't have a reservation, the hostess is not very nice. you can't wait for a table with a group of 3 - needs to be 2 or 4. such a weird rule read more

Great vibes with attentive service and varied menu options, almost feels like an upscale girl dinner. The martinis are re-poured into chilled glasses, which was greatly appreciated. We shared the Ahi Tuna Salad, Artichoke Dip, Deviled Eggs, and the French Dip. The Ahi Tuna was so delicious and savory with the lingering sesame oil taste and the mango chunks were refreshing. But I enjoyed the French Dip the most - super soft pieces of the roast beef melt on your mouth and pairs deliciously with the au jus and horseradish. We love this chain--seriously, it never misses. From Boston (still not over Houston's closing), to San Francisco and Napa, it's always been our go-to, and this location might be one of the best yet. The service was incredible--they went above and beyond in every way and made the whole experience feel special. My wife and I actually made the trip from Boston to NYC just to eat here, and it was 100% worth it. The food is consistently amazing no matter the location or year. The spinach and artichoke dip is a must-order, the ribs are unreal, and the sushi, California burger, and Asian noodle salad are all top-tier. Yes, it's busy--but that just adds to the energy. I went to Hillstone on Park Avenue for lunch today around 2:30P and was turned away from sitting at the bar because I was wearing a tank top. Meanwhile, a woman approximately 10 feet away was seated at the bar wearing a black tank top. I pointed it out to the host and she said the policy is only for men. What made the interaction even more uncomfortable was that the hostess automatically categorized me as a man in order to apply this policy, without ever asking how I identify. I could be non-binary or identify differently, yet a gender-specific dress code was applied to me based solely on her perception of my gender. I completely understand restaurants having a dress code, but having different rules for essentially the same clothing based on whether the guest is a man or a woman felt discriminatory and outdated. It was an incredibly disappointing experience, especially to be turned away at the door while seeing the policy applied differently right in front of me. It's 2026 in NYC, Hillstone needs to get with the times. read more

Food here is amazing. I usually go for the sushi, but switched it up for the yellowtail salad. INCREDIBLE. The salad has a miso dressing that I would have ordered on its own as is. The Asian Noodle salad is also amazing. There are 2 bartenders that I love. Savannah and Nicole are amazing. They are attentive and make excellent drinks. They are also very friendly! Service was pretty slow for a higher end restaurant, but the food was pretty good! The California Burger was thick, and the meat was seasoned very well. My friends really enjoyed the french dip and said it was one of the best they've ever had. The caesar salad dressing was just ok, but the croutons were really good, it was like a small bread. Without any warning or polite explanation, she approached us with an angry expression, told us to leave, and then walked away without giving us a chance to respond. I've been here for special occasions a few times, and I just realized I've never written a review! I came for a birthday lunch, and I was seated at a very comfortable table, which was more than enough room for the four of us. I've typically only been here for dinner, so it was a first for me to come here for lunch. The menu was pretty similar, although I did notice that a particular dish with ribs was missing. I tried a bunch of new dishes this time for lunch, including the spinach and artichoke dip, the crispy chicken sandwich, the French dip sandwich, and the crispy tuna "Osaka style" sushi. Everything was delicious, but I will say the French dip was quite salty, especially once you dipped it in the broth. The shoestring fries were as good as I remember. Our waitress was super nice and very talented with how she was able to carry all of our plates. They were also pretty attentive with filling up our water glasses. I would def recommend! read more

Just like my beloved South Beverly Grill in Bev Hills, Hillstone delivers consistently delicious food, great service and a cozy feel. My favorite entree is the cheeseburger. While nothing is super unique nor extravagant that's not what this place is meant to be. Hillstone executes classic American fair phenomenally. That's how I felt coming to Hillstone after I was fiending for the longest time. I started off with a Crisp Martini which was super fresh, citrusy, and nicely balanced between acidity and sweetness. What a pleasant surprise that they switch out your glass for a chilled one halfway through your drink! As for the food, we got the heavy hitters. The Osaka Style Pressed Sushi was aesthetically perfect, the seafood was fresh, and the flavor & texture profile was satisfying. If you like sushi, this will definitely be up your alley. I can't remember the last time I had Spinach & Artichoke Dip was rich from the cheese, creamy & gooey, and slightly earthy from the spinach and artichoke. Very satisfying and unbelievably hard to stop eating! For the entrees, we shared the USDA Prime Famous French Dip and Off Menu Ding's Crispy Chicken Sandwich. If I had to pick 1 of the 2, the Off Menu Ding's Crispy Chicken Sandwich is the real winner. It is "on menu" during lunch but for some reason not during dinner, so just ask for it. The crispy chicken was cooked well and had a satisfying crunch, the spicy kale slaw was super refreshing, the baby Swiss was mild in flavor, and the bread was super soft and fresh! All in all, nothing we had was groundbreaking or extraordinary but it was satisfying and worth a try if you can snag a reservation. And a baseline. Here's the shift. Then: A birthday meant a real dessert. On the house. Candles. Ceremony. Now: A free candle. Just... a candle. What am I supposed to do with that. Hold it? And the exit timing. We'd paid the bill. We were finishing the moment. A server swoops in asking if we're ordering more drinks and if not, we should move on. Not subtle. Not gracious. Just transactional. That's not hospitality. That's table management wearing a smile. Here's the thing. I still like Hillstone. Let's be fair. Best martini presentation in the business. The cold glass refresh is still elite. Soups are amazing when they're available which is a short, unpredictable window. The food, when they don't tinker, still works. Which makes the misses more maddening. The Menu Decisions That Make No Sense Why were mashed potatoes and the baked potato removed at PAS? The baked potato was glorious. Now we get a cauliflower-potato hybrid situation that tastes like compromise. Blah. Why does Santa Monica still get the good stuff? Hillstone still has mashed potatoes. Still has the cheesy bread. Still has rice and beans. PAS dropped those years ago. For what. A cost spreadsheet? Consistency used to be the brand. Now it's geographic roulette. Loyal customers don't need reinvention. They need respect. They need you to not quietly remove the things they love while charging more and hurrying them out. Hospitality is memory. Break the ritual, and people notice. When a restaurant stops honoring moments, it's not evolving. It's forgetting why people showed up in the first place." Still rooting for Hillstone. But a candle without dessert isn't a gesture. NYC is down to one Hillstone. Don't be the reason it survives. A month to get a reservation. No walk-ins. And when you finally get in? We were made to stand for 20 minutes with no update, sat at two open bar seats with drinks already ordered, and were threatened with being refused service entirely. A staff member told me to my face it was my fault (for not able to stand any longer). The manager's solution was to tell us to keep waiting standing up away from the bar or leave. We left.
