I went to the Hitching Post recently during a Road Tour with a world class guitar player friend and his band. I was their Roadie. I got there early as I often do, with the Motorhome, to reconnoiter and get a good parking spot. The Barkeep graciously showed me to a perfect parking spot. The food was great. I rarely write reviews, but this experience deserves every word. We stopped at Hitchin' Post Steakhouse without really knowing what to expect. What we found was one of the best meals I've had in my entire life. The atmosphere is refreshingly unpretentious--casual, comfortable, and welcoming--but the food and service rival restaurants that charge twice as much and require a dress code. The filet was hands-down the best I've ever had. Perfectly cooked, incredibly tender, and worth every bite. And somehow we even managed to make room for peach cobbler, which was phenomenal. But what truly made this evening unforgettable was Emalee. Calling her our server doesn't do her justice. Her attention to detail, kindness, warmth, and genuine care elevated the entire experience. She has that rare gift of making every guest feel like they're the most important person in the room. We later learned she was the owner's daughter, and honestly, it made perfect sense. She embodies everything hospitality should be. It happened to be my birthday, and without being asked, she brought out a candle with my dessert and made the moment feel special without being over the top. Those small acts of thoughtfulness are what people remember. I've eaten at plenty of expensive steakhouses over the years, but very few have left this kind of impression. This was five-star dining without the stuffiness. I got to enjoy one of the best meals of my life wearing jeans and a tank top. We stopped into the Hitchin' Post Steakhouse for a weekday lunch and it was perfect. We started with the garlic cheese curds which were so good and super flavorful. The Cast Iron Skillet Mac & Cheese was rich and comforting, definitely a must-try. I ordered the Grilled Ham & Cheese, which was simple but done really well, and my partner in crime went for the chicken fried steak and loved every bite. Stopped in after walking around Main Street and visiting a couple of bars. It was close to 5:00 so not crowded but that quickly changed. The noice level was high but you could still converse without screaming. Our server recommended the Cajun mushroom which were pretty good. We then ordered the steakhouse salad and the deep fried fish. I didn't really like the steak on the salad but the rest of the salad was good. The steak was tough and had no flavor so I picked around that. The fish was cooked well but I have no idea what kind of fish it was. Lol. We had a shot of tequila and whisky plus a Coke. The service was good. It seemed like every server was genuinely personable and the other diners seemed to engage well with each. The place was clean and not packed in too tight. It wasn't on our list, but with only a 5-10 minute wait, it worked as a backup. Service was quick, though not especially warm. The kitchen moved fast, too, and the food was well-prepared and tasted good. This is a very casual, country-style place, and while the location just off Main Street is convenient, the food quality didn't quite justify the price. Let me tell you, this meal was the stuff of nightmares. The steak fingers? Rancid. I took one bite and had to spit it into my napkin. I glanced at my friend, hoping I was imagining things, only to see her wide-eyed expression mirroring mine. Nope, not my imagination. The grilled veggies tasted sour--like they'd been soaking in swamp water. The fried okra was cold (not lukewarm, not room temp--cold). The mashed potatoes were the only thing we could stomach, and even they weren't hot. What in the culinary world is going on here? We kept scanning the restaurant for our server, hoping to salvage the situation, but she was nowhere to be found. When she finally did reappear, she grabbed the plate from the edge of our table without a word and walked away. I'll take some blame for not stopping her to say something, but... really? If you're a server and you see a plate pushed to the edge, untouched except for one or two bites, wouldn't you ask if something was wrong? Or offer a to-go box? Anything? Nope, nothing. We paid our bill, shook our heads, and left--still in disbelief. On the way out, I warned a group considering going in to save their money and go elsewhere. We wanted the fried mushrooms but they were out. The server also mentioned they were out of the quail eggs. We got the onion rings which were nice. We rolled into Fredericksburg in the late afternoon and after settling into our lodging, we decided to get dinner. Steak sounded good and after perusing some Yelp reviews and the local menus, we chose the Hitchin' Post. The restaurant location is not on the main drag and in a relatively unassuming building, but inside the restaurant is pretty spacious and comfortable with the dining room and bar area side by side. Although we saw a steady stream of diners headed in, we were seated quickly and our orders were taken. Dinner started with the garlic cheese curd appetizer. Served with ranch dressing, they were surprisingly delicious and at least as good as any fried curds I've eaten up in America's Dairyland. Salads came out next and were relatively unremarkable but were properly portioned and fresh. The entrees consisted of the cowboy ribeye and a filet mignon, both medium rare (the ribeye was just a touch blue but still in an acceptable range). Both were seasoned with McCormick Montreal steak spices. I like using that at home and frankly, it paired well with this incredible beef by providing a nice salty and peppery vibe without overwhelming the subtle flavors of this beef. The meat is sourced from Goodstock, part of Nolan Ryan's butchering operations and is of excellent quality, produced ethically with animal welfare in mind. The meat is flavorful, well marbled and juicy. I'm going to have to find more of this beef brand when I get back to Austin. Side dishes included green beans (good), garlic mashed potatoes (good) and a loaded baked potato (really good). Service was friendly, well-paced and attentive, despite the fact that the restaurant was pretty much slammed with the dinner rush. Prices are not inexpensive, but considering the local market as well as the quality you're getting, they're quite reasonable. Hitchin' Post is a great casual place for lunch or dinner if you're visiting Fredericksburg. Highly recommended. read more

Our experience on a Saturday night in May was great! The spot is right off Main St. and offers parking along the side, Main Street and the back. We waited less than 4 minutes for a table. Our server was attentive and quick. The restaurant was nicely decorated and pretty packed in, but you don't feel squashed. For appetizers we had fried pickles, which were good and tasteful. The entrees were a Dinner Steak and the big Chicken Fried Steak. My wife enjoyed the CFS, especially the gravy. The green beans were fresh and flavorful as a side. As for the dinner steak it was undercooked, but I'm not one to send things back. That's the one item keeping it from a 5 star review. Overall really good experience and I still was able to eat my steak. This location had sweet tea and coke products for those that look for that in reviews. My husband ordered The Doc Holiday (ribeye steak sandwich with French fries) and I had the Steakhouse Salad but I swapped out the Feta Cheese Vinaigrette for Honey Mustard Dressing on the side. The ribeye sandwich was tender and delicious. The French fries were nice and crispy and hot. The salad had a generous amount of sliced steak cooked perfectly to order.
