While in Scottsdale AZ for work, I visited Hummus Republic multiple times. How many times you might ask, enough to order over 400 falafels over the course of three months. Is this a lot? Yes. Would I do it again? Hell yeah! As a gluten free vegan I was drawn to Hummus Republic because they identify which items align with different dietary needs. After the first bowl I was hooked. What makes Hummus Republic so great? The flavors of the falafel bowl all mixed together makes for a satisfying bite. And the portion size for the price is honestly perfection, you can get yourself a hearty bowl for roughly $20. I tried a few other restaurants in the area, and to get a comparable fullness I had to spend more than $25. The staff and owners are some of the nicest people and super welcoming, not just to me as a regular, but to every person that walks in. Do I usually write reviews, nah. Did this place earn it, hell yeah. I hope I get sent back to Scottsdale soon, already missing those falafels. Kava could never! Hummus Republic in Scottsdale just set the gold standard for Mediterranean food. We ordered two shawarma bowls - one with lamb, beef, and chicken, and another with lamb, beef, and mushroom - and both were phenomenal. The flavors melded together beautifully with every bite. Chriss at the counter was super nice and helped me figure out what to order since it was my first time. I had the create your own bowl w Gyro meat and all the other sides. All is included in the price. Very flavorful and good portion size. Now oddly they had 6 different types of lemonade (fresh) but NO brewed ice tea. Secondly, the portions here are great! You get bang for buck and I drive out of the way to come to Hummus Republic. Inside of the store is extremely spacious and the vibe is chill. This was my first visit to Hummus Republic in Scottsdale, and from the moment I walked in, I could tell something was different. I later learned they're under new ownership, and it definitely shows. A young man greeted me and took the time to walk me through the entire menu and explain their scratch kitchen concept. Everything is made fresh--from the proteins and hummus to the lemonades. He was incredibly patient as he helped me build my bowl and even suggested a few ingredients I normally wouldn't have chosen. I'm so glad I trusted him because every single bite was outstanding. I don't like comparing restaurants, but if you've been to CAVA, this meal was hands down one of the best I've had in a long time. The lemon chicken was incredibly moist, flavorful, and tender--not dry or stringy like you so often get. And the hummus? Seriously...it's in a league of its own. What impressed me just as much as the food was the service. Even though it's a walk-up, fast-casual restaurant, the care, patience, and genuine hospitality I received rivaled--and honestly exceeded--what I've experienced at many full-service restaurants. That kind of customer service is rare these days, and it made the entire experience even more memorable. Halfway through my meal, I found out the young man helping me was actually the owner. A restaurant dedicated to hummus? Yep, that's it. Well, they do have other options, but hummus is the main star in its beautiful colors and variety. When you walk in, you will be peppered with questions: 'Have you been here before?'; 'Have you seen the menu?' 'Do you have any allergies?' All good questions, but it can be overwhelming. I think once they get some regulars, the challenge would be to know who the regulars are and not ask those questions, or visually look for clues from the guests to ask those questions. I had not been here before, but I did check out the menu online. I wanted a bowl with a base of spinach. There are other options, but like Popeye, I want my spinach. You can then pick and choose different types of hummus. I picked traditional and the Harissa hummus. The Harissa has some heat, but it was not spicy for me. Here are the choices of hummus Harissa Kalamata Olive Roasted Eggplant Traditional Tzatziki Zesty Feta Then pick your protein. I saw online that they had vegan beef, but this location did not. I chose the mushroom shawarma. Then comes the toppings. Wow. There are a lot. Ugh/ What a waste of $50 I'm very unhappy. Will never go back. I ordered a bowl and a wrap. The number one worst part was the lemon chicken. So crunchy inside, not uniform, not tasty, hard as a rock. I feel offended by this meal. And this is supposed to be the grand 're-opening' as if they corrected previous issues. I actually wished I hadn't eaten the food I got here. Nothing was fresh about it. The vegetables didn't seem fresh and I got chicken schwarma which had been sitting on the grill, I guess staying warm. That was probably the worst meat I've ever eaten. I couldn't even tell if it was chicken. Then the dressing in my bowl.. there wasn't even enough in the container so the girl scraped it out, which wasn't real appetizing.
