Let's talk about the sauce, because that's where most places fail. It isn't that sugary, paste-heavy stuff you find at standard joints. It is vibrant, bright, and tastes intensely of sun-ripened tomatoes and clean olive oil. It is remarkably fresco; striking that perfect balance where the acidity cuts through the richness of the cheese without overwhelming the palate.
