While that's no longer the case, the space still pays tribute to its roots -- shelves lined with kitchen knick-knacks, butcher-block counters, and a display of local provisions that hint at its past. Chef-owner Karen Bell leads the way here, and you can feel her touch throughout -- from the creative menu to the casual-elegant vibe. The décor blends exposed brick and warm wood with soft light and a friendly hum from the open kitchen. Our server, Matthew R., had only been with Bavette a couple of weeks, but his background in restaurant management showed. He was knowledgeable, attentive, and offered great suggestions. Before our sandwiches arrived, we shared a cup of pork and tomatillo pozole topped with cabbage slaw and a dollop of sour cream. It was piping hot, bright, and deeply flavorful -- the kind of starter that makes you stop talking for a minute just to enjoy the next spoonful. Having read rave reviews of the Korean steak au jus, I nearly ordered it, but Matthew suggested the roast-beef with cheddar since I'm not a big lunch eater. Excellent call. The sandwich was divine -- tender, flavorful beef layered with melted cheddar on a crisp, perfectly toasted roll. The beef-fat fries had great depth of flavor, though I'd love them even more if they were twice-cooked for that extra crunch. Being more of a gin or vodka drinker, I couldn't resist the Gin Old Fashioned on the cocktail list. It was delicious -- smooth, aromatic, and balanced enough that I happily ordered a second. I can say this place serves delicious doner kebab on fresh housemade bread on par with what I tasted in Germany. Doner Kebab can be ordered as Classic on their housemade bread, as a Wrap, as a Bowl, or as a Donerdilla (quesadilla with Doner using their wrap), and you can choose beef or chicken. They have a couple of side dishes, including fries and loaded fries, plus fountain drinks and bottled drinks. The dining room seats about 20 people. I visited twice, so far. First visit was for dine-in about 2 weeks ago, but there were large orders ahead of me, so my wait time reached a point where I asked them to switch my order to carry-out, and I ate it over 90 minutes later after my appointment. After 90 minutes, the doner kebab was still delicious even without reheating it. Ofcourse the fries became soggy as expected but seasoning was really good. I went back over this past weekend for dine-in. Wait time was only about 15 minutes, and this time the fries were perfectly crisp and still had the great seasoning blend, plus a tasty garlic sauce for dipping. They do not have ketchup for fries, and I like that. They have 3 sauces to choose from: garlic, herb, and spicy. The Classic Doner Kebeb was even better eaten fresh, but flavors were about the same as my carry-out sandwich eaten "cold," which speaks to the consistency. Be patient in your visit because it is a small team of 2 taking and prepping orders, and there may be call-in orders or large orders ahead of you. I had no problem eating this delicious food in such a clean well maintained restaurant, staffed by a very friendly person. We had the wraps. I have absolutely no complaints at all about eating here. When it was my turn to exit I was told I had to pay for an hour of parking even though we were only over by a few seconds!! When I explained that I had been in line for 5 minutes, the attendant said that the same thing had happened to other customers before me and that there was nothing he could do about it. I would agree if I had shown up one minute late and there was no line to leave. Other than the parking situation, I enjoyed my short visit to the market.
