The roll that has shrimp tempura didn't have any ends/tails on it and tasted like it it could've been cooked days/weeks ago, tasted like the inside of a fridge. Everything was extremely fishy and old. I called up to let the Owner know, but he didn't seem to care or worry about the food safety. Do not recommend. Edit to respond to owner: I want to note that the tone of your response here is very different from how the conversation went on the phone. It feels like you're trying to present things more carefully now, which was not my experience during our call. After speaking with you on the phone, I did not feel that my concerns about the fish were taken seriously. I eat sushi 2-3 times a week, and I have never encountered fish with that kind of taste before. Additionally, the shrimp tempura did not seem fresh - it was soggy and had an off taste, almost like it had been sitting in a refrigerator. When food is bad enough that someone has to spit it out, that's a clear sign it isn't fresh.

We happened upon Ensō no Sato and saw how full the restaurant was and took a chance at getting a table or a bar seat. Luck was with us and we were seated at the bar. Within minutes, almost every seat in the restaurant was full and we settled in to peruse the menu and order some drinks. The bartender who doubled as our server was warm and friendly. She explained things on the menu and gave us some recommendations. All the while she was making drinks for the full establishment. With so many new things for us to try, we decided on a few different rolls and appetizers. Some of the rolls were pretty standard in price, while other specialty rolls were pricier. The presentation of the food was very nice and the freshness of each dish made for an enjoyable meal. Standouts were the scallop and crab roll and the shrimp dumplings. It seems sometimes when ordering dumplings they have been previously frozen- not so here- on the smaller side but packed with flavor. Another surprise was the matcha IPA beer I ordered. It was served nice and cold and although I am a traditionalist when it comes to beer, I found that the green color did not take away from the taste or experience. Plates came and went and we enjoyed a great meal together. And while the restaurant was full, we could enjoy a conversation without raising our voices. On a future trip we would love to try the omakase at a separate bar up toward the front where chefs were making beautiful meals while onlookers eagerly awaited some new tastes. I've never had a restaurant try to charge for hot sauce before, especially after spending that much on an order. Unfortunately, this was also disappointing given that the quality of the food especially the sushi has noticeably declined over the past few months. At this point, I'll gladly spend my money somewhere else. It's not about the cost of the hot sauce; it's about the overall experience and feeling like a regular customer is being nickel-and-dimed while the quality has gone downhill.
