If you don't know, My Vegan - ER is a thriving gem on Colorado Blvd, not to far from that groovy Trader Joe's and other local favorites. It's got a cool cornerside entrance off Argus Drive giving it a residential meets city blend in a trendy plaza parking lot. The dishes are 10/10 for dine in, but apparently just as amazing for takeout! My special someone and I take turns making dinner, but he was very much tired from a long work day so we said hey let's order out and we settled on My Vegan and we're really glad we did. Their Pad Thai is an instant and flavorful favorite of my guys and while many of their appetizers, such as the Impossible Fries, Fried Tofu, Vegetable Dumplings and Soy Chicken Drumstick (w/ Buffallo or BBQ please) to name a few also called out to me... I settled on their epic Supreme Fried Rice A delicious blend of fried brown rice, soy shrimp, soy chicken, soy beef, tofu, onions, peas, scallions, garlic, tomatoes and carrots. All the portions here are big - so much so we both had leftovers for lunch the next day (which hold up great). We ordered very simple dishes, Pad Thai, fried rice, and vegan rolls. I hate to be so negative, but the fried rice was much too spicy to eat. Plus it was soft and spongy rather than fried like Chinese or Japanese. We ended up throwing it away and I hate wasting food! The pad Thai was so ordinary and bland.
