Sesame chicken & steamed dumplings. Both tasty!!!!!
    Amy H.

Noticed this place last week & decided to give it a try. Very pleasantly surprised! The meat in the sesame chicken was good quality & it was perfectly sauced... not over-breaded or goopy. I also enjoyed the steamed dumplings. Definitely plan on going back & trying different dishes.

Love this place! Staff is so welcoming always with a smile. Food is the best on Hendersonville Rd/Fairview is worth my drive.

    Vegetable Lo Mein

For what you intend Chinese food to be I guess this was ok. Service was fast and friendly but food was a little flavorless and a little too greasy. We got the vegetarian Lo Mein and felt like we were basically just eating bland noodles. Wished there were more veggies. Veggie spring rolls were better but still kind of bland.

Got General Tso chicken...80% of it was bread and 20% meat. Just...why? Do they think we don't notice?!

It is located in downtown Asheville so there is no immediate parking lot but there are some places nearby or street parking, The inside is very modern and there is seating both inside and outside. Our server was very friendly and service was very prompt! My family got the Lo Mein with Chicken, Chow Fun with Beef, Sautéed String Bean, Buddha Bean Curd Rolls, Crystal Shrimp Dumplings, and Spicy Chicken. I loved the Crystal Shrimp Dumplings! The wrapper was very tender and the shrimp filling was delicious. It tasted very authentic to me. I also loved the Sautéed String Bean as it had the right amount of garlicky sauce. The Lo Mein was made with thinner than usual noodles but still tasted good. I think the Chow Fun tasted a bit off. It kind of tasted a bit sweet and like drunken noodles at some points as opposed to the traditional smoky flavor that the dish has. The rice noodles that were used were also thin as opposed to the usual wider noodles. As for the Spicy Chicken, it tasted solid. I liked the slight crisp before biting into each piece and it was not really spicy. I definitely tasted the cumin (I am not a super big fan of), which is a popular flavor found in Szechuan cuisine. Overall, I think this is a nice spot for some Chinese food, especially being near the mountains which is more isolated. I would probably rate it a 3.75/5 stars if I could. I wish chicken feet were part of their dim sum menu (it is pretty small and there are no rolling carts in case anyone is wondering). I do think some flavors of the food I tasted seem to cater a bit more to the Western taste palate (my parents agree as well), but I enjoyed my time here.

When ordered from Archetype, the food comes out quickly and conveniently. That's a great set-up! When I came to eat at Gan Shan, we sat in their outdoor space, which was cute! Service was very friendly and accommodating as well. I don't know which dish I would pick next time between the General Tso's Tofu or the Gan Shan Rice Bowl because both were equally good! They do a great job with tofu here! The Gan Shan Rice Bowl had less tofu but more additions like pickled vegetables and kimchi. The General Tso's bowl had amazing flavor, and you didn't really need more than the tofu and broccoli! We also tried one of the ginger drinks, which was good, and some sake. It's a great place to come with a friend and share dishes to try more options. I will be back soon!

If you are vegan, make sure to specify no egg and I added fried tofu, which really made the ramen feel filling. I also ordered the General Tso's Tofu, which was also delicious and a well prepared classic. The interior was nicely decorated and comfortable. Service was great as well. They brought us out a Ramen with egg at first by mistake, and once they realized, they immediately took it back and remade it, which was much appreciated.
