This is my first time at this chain. I was a fan of Sanuki Udon Hanamaru, so that's my main point of reference. The biggest drop in quality is probably the noods themselves. The chewy bounciness at my favorite Japanese locations is almost physics-defying. The texture is simply divine. In comparison, this mouth feel is a cheap knock-off. The broth is not bad. The dashi is not as satisfying, but this was drinkable without being bland or too oily. I was more impressed by the fried sides. The giant potato croquette was excellent. The level of crisp and mushiness of the inside was on-point. The chicken was also nicely crispy and juicy. Of course, the fact that it was dark meat automatically gave it a head start over a lot of American fried chicken filets. The zucchini was good. The pumpkin was a bit dried out, but I think that was partly because I ate it last. Overall, this is quite authentic, from the way the noodles are prepared, to the way customers self-serve the sides. They even have a tray return. There are certain Japanese main-stays that I wanted to see, which are missing. Like, some kind of fish in the tempura line would've been nice. One of the biggest localizations is probably the veggie udon, which is violently un-Japanese looking with its carrots and broccoli and would certainly ruin the mouth feel of a smooth bowl of udon. If there's one plant root you want in an authentic veggie sanuki udon, I'd argue it should be grated daikon radish, which I don't think they have. This place was busy for a Thursday evening! If you have never been here before, the process is entirely self-service. As soon as you walk in, you see the menu. Once you've decided, you pick up a tray, and let the kitchen staff know what main dish you want. Once it is ready, you place it on your tray and move down the line where you can pick out a selection of tempura and fun drinks before paying. After that, you grab your own utensils and find a place to sit, and when you are done eating, you clean up after yourself and put everything back. I ordered the Nikutama cold, which was very good and perfect for the summer weather. We also got the shrimp tempura and the croquette, which were both fried to perfection. We have a marugame back home in HI but never went since it's in Waikiki and has a line most of the time. Also grabbed a giant Imitation Crab tempura which I haven't seen at my usual location in LA. Im happy to say that my friends and I finally made it to Marugame Udon, about a year after it first opened. For those who may be unfamiliar with Marugame, Marugame is a popular udon chain and this is their first location in Washington (their other locations are in California and Hawaii). Their Waikiki, Hawaii location, in particular, always has a line of tourists out the door and so I never got a chance to try it until now! Marugame keeps its menu fairly simple. They have 14 different udon and rice entree items including Nikutama (sweet beef with soft-boiled egg), Kitsune (tofu skin), Tonkatsu (pork), and Curry (both on rice or udon). They are best known for their NIKUTAMA UDON ($13.49 for regular size) and so that's what my friends and I ended up ordering. Marugame is a counter-style service and so you order your noodles (which they make right in front of you!) and then take your tray to go choose the tempura of your liking and pay at the end. Their tempura choices include jalapeño, shrimp, tamago, sweet potato, pumpkin, potato croquette, green bean, and chicken katsu. Each are priced individually. They also have green onion and tempura crunchies for free at the end in addition to self-serve tempura sauce and spicy pepper flakes. The NIKUTAMA UDON broth was super flavorful, sweet, savory, and umami. The noodles were cooked to perfection- chewy, slippery, smooth? and slurp-able! The beef was cut thinly, tender to chew, and really soaked up the flavors from the broth. The egg was creamy and cooked just right when stirred into the broth. The regular portion was also just right and I was definitely full by the end of it! The tempura was fantastic- nice and crunchy and not overly oily! My friends and I lucked out as we happened to get a batch of SHRIMP straight from the fryer- yum!! Between the SWEET POTATO and the kabocha PUMPKIN (both of which I love), the sweet potato was the clear winner. The pumpkin was cut too thick and was bland in taste. As far as the tempura sauce, the sauce was salty, slightly vinegary, and a little bit sweet. I like that it's served warm and that you can help yourself. The atmosphere is super casual. There is lots of seating, but the tables and chairs are packed together pretty tightly, so don't be surprised if your neighbor accidentally backs their chair into yours. The decor is very modern Japanese. Service is good and we got through the ordering line within 5-7 minutes (this was at 6pm on a Sunday). And the woman who was just putting the shrimp out, was nice enough to plop some right into our bowls! Note that you have to bus your table at the end, but there was a worker today who was clearing the bowls at the bussing station so we didn't have to clean our own bowls or sort trash from recycle. Not sure if that's normal routine or if she was just being extra nice, but it was a nice added touch to the service! Compared to U:Don (another chain in Seattle that I had multiple times throughout college), I can honestly say that Marugame is higher in quality and flavor. Easy, fast and delicious! We've had it while we were in cali and was so excited to hear it was in Seattle! Everything is clearly displayed so kids had an easy time picking what they wanted to eat. read more

Solid Udon spot. Easy parking near the Macy's Store. Bright and modern interior. The experience is almost like subway or chipotle. They make your dish in front of you and add the toppings you want and you take a tray if dining in for your bowl. I was very impressed and satisfied with my experience. I ordered the beef udon with add on soft boiled egg and wished there was a bit more beef but it was tasty. Only major con was they did not have udon spoons available and only flimsy take out spoons not made for this dish. I got frustrated and lost my manners for a moment and picked the bowl up to slurp that broth tbh. I told myself next time I will bring my own udon spoon or ask if they have any real deal ones available first instead of a rice takeout spoon.
