    Mosaic Restaurant & Bar is located in the Double Tree Inn. It's patrons comes mostly from the guest staying at the DT Inn. I ordered the Capallini Shrimp Pasta. The shrimp was cooked to perfection. Not over cooked to where the shrimp is hard and rubbery. The sauce consisted of whole cloves of garlic,mushrooms, onions and tomatoes in olive oil. The sauce was excellent. The only disappointment with this dish was the pasta (3/5). It was soft, pasty and over cooked. The pasta stayed clumped. If the pasta was cooked al dente, I would've rated this dish 5/5. I also had the Wedge salad (no pic). I ordered it without blue cheese, replaced with ranch dressing. This salad was excellent. The wedge salad came with heirloom cherry tomatoes, ample amount of bacon bits over not one wedge, but two ice berg lettuce wedges. There could've been more ranch dressing drizzled on the salad, but I still would rate this selection 5/5! I would recommend Mosaic Restaurant for the following reasons. - the food is very good. For my dish, hopefully the pasta was not intentionally over cooked. I'll give the benefit of doubt. - the price for food is actually reasonable. More reasonable than I expected. - the service was excellent. My server was attentive and caring. Mosaic Restaurant is an excellent place to eat, especially if you're staying at the Double Tree Inn.

    I enjoyed a beer at the bar, and the servers were great. Ordered a burger to go.  I cut into this! I was super disappointed.

    Stayed at The Doubletree last night. Went down to the bar for a couple drinks and to order some food to go. The bar staff was great, very nice and attentive. Ordered a burger and fries to go to eat in my room. Unfortunately after getting settled in my room I went to eat my burger and I think they forgot to cook it, it was so rare I couldn't eat it. Very disappointed.

    My work friend forwarded me an email with an invitation to Mosaic's Kick Off Summer Party located inside the Double Tree by Hilton Del Mar. This was a great indoor/outdoor event that showcases Mosiac Restaurant & Bar's delicious appetizers, finger-foods, signature drinks with plenty of gifts and raffles under the beautiful sun with a live band. My friend and I each received a beach mat, and we felt very pampered and welcomed by all the staff in Hawaiian shirts. During the event, we nibbled on sushi, crudites w/ pita bread, grilled shrimp cocktails, fried egg rolls, bacon-wrapped scallops and enjoyed the their signature blood orange margarita. The coconut margarita also looked refreshing. At one station, they also offered guests to contribute a piece of tile to add to their Mosaic community art piece! What a creative idea to bring the community together! Thank you Mary and Russell for coordinating this event, the hardworking Double Tree and Mosaic Kitche & Bar staff for throwing such a fun Summer Kick Off Party. Congratulations on your opening!

    We had just arrived and were hungry. Nothing around the area and we didn't feel like driving. So we decided to try Mosaic in the Doubletree Hotel. It's too bad how empty it was inside the facility. They can truly promote the restaurant just by being guests in the hotel. I know with Covid things have changed. But our waitress was very friendly and sweet. The one thing I did ask for was bread since I ordered pasta. The waitress said she has been asked that multiple times when patrons ask for pasta. I said to her "who serves pasta without bread". I felt it was overpriced. But, we were pleasantly surprised to see a breakfast buffet was offered the next morning which had a large selection and more patrons. Again, I believe it is all due to the marketing of the restaurant. It opens up to the pool and with so many families, they should be able to crank the business. The staff is very friendly. It has a full bar as well. Would like to see more items added to the menu for dinner.
