We had asked the waiter about two add ons but he steered us away, saying it was too much food. Although he did suggest we add the duck fat rice (which is it's own add on) to the tofu. We really appreciated his guidance there. We left full but not uncomfortable. All the food was very good there were no misses, but the local fish with preserved mustard greens and the roasted strawberry dessert were two of the best things I have eaten in many many years. Then I went back to Firstborn twice within three months. This newly listed 2025 tasting menu spot actually made me feel a little hopeful about LA fine dining again. The shiso with razor clam and beef cheek cochon, and the black cod with green Sichuan pepper mala noodles, are both full-on collisions between deep animal savoriness and sharp, vivid spice. Then dishes like roasted artichoke and morel stuffed with green peas bring the seasonality into clear focus. The menu is not huge, but every dish has a defined structure and a bold sense of movement. On paper, it reads a little mysterious and intimidating; once you eat it, everything suddenly makes perfect sense, and honestly, it gets addictive. The ingredient selection and handling are also seriously thoughtful. Take the aged duck main course. I am very much a "if there is duck on the fine dining menu, I'm ordering it" person, and I've had plenty of beautifully rich, tender duck breasts. But Firstborn's version, beyond being tender and luscious, had that Cantonese sense of "gan xiang" -- the sweet, savory aroma you get from naturally air-dried, aged meats. For a second, I had this flashback to going with my family as a kid to Xing Fu Lou in Wenquan for Lutian cured meats during winter solstice. Absurdly good. Calling it the Duck King of the West Coast does not feel excessive. On my second visit, the truffle and wild mushroom "gnudi" was also excellent. The moment it hit the table, that intense truffle aroma made me think of the deep, earthy punch of French Périgord black truffle. But then I thought, wait, where are they getting Périgord in June? Turns out they were using Australian winter truffle, perfectly in season. That sourcing logic is smart. It is not expensive for the sake of being expensive; it actually understands the flavor window. The fire-grilled lamb saddle on the second visit was just as strong. It preserved the soft, tender texture of the cut without losing that sweet, milky lamb flavor. Grilled over open flame to a rosy medium rare, the flavor, doneness, and ingredient choice all landed. To me, a great restaurant comes down to three things: concept, ingredients, and seasoning. Some fine dining places love making everything complicated, stacking seven or eight ingredients together, serving a dozen-plus courses, and by the end you feel exhausted and sleepy. Firstborn is the opposite. It is unconventional, but from amuse-bouche to dessert, every dish explains its own logic clearly. Final feeling after the meal: addictive, interesting, and absolutely worth coming back for.

I mention these things in my reviews for the sake of protecting immunocompromised people like the elderly and people sick with cancer and other illnesses. COVID-19 Vaccination Proof: This establishment currently does not require proof of vaccination. While I was eating my food in this establishment several months ago, I asked if they had any special offers and they weren't offering any at the moment. They currently don't have happy hour. They also do not allow pets in their establishment UNLESS it's a service animal. Parking: The parking lot for this establishment is kinda small and tight. Good luck with street parking if you can't find any spots in their lot. They also have valet parking for $13. Tip: Make your reservation 2 - 3 months in advance to get great seating because they get booked up very quickly. Food and Drinks: One of my close male friends and I came here to celebrate both of our birthdays. Bestia is hands down one of the best Italian restaurants here in SoCal. For drinks, my friend and I got the Poderi San Lazzaro. This is a dry red wine from the Marche region of Italy. It is known for its intense ruby color, red berry aromas, and a palate with juicy acidity, soft tannins, and a distinct saline minerality. It's a good pairing for roasted meats and grilled steak. And as for food, my friend and I ordered the roasted bone marrow, oxtail alla vaccinara, 26 oz Margaret river wagyu ribeye, and fromage blanc mousse. To note, all pastas were cooked perfectly al dente. The roasted bone marrow is a signature appetizer served over a bed of spinach gnocchetti. We got to scoop the rich marrow from the bone directly onto the pasta and mix it in table-side. The marrow coats the gnocchetti to create an emulsified, glossy sauce balanced by toasted breadcrumbs and aged balsamic. This was a life changing and mind blowing dish. The oxtail alla vaccinara is a renowned, elevated take on the classic Roman braised oxtail stew. This decadent pasta dish features tender braised meat, wide pappardelle, rich brown butter, pine nuts, and a touch of cocoa powder. The richness of the meat and brown butter is cut through with creamy dollops of burrata cheese and crunchy pine nuts. So yummy! The 26 oz Margaret river wagyu ribeye is a dish that features a massive 26 oz cut of Australian Wagyu, served with burnt onion, fermented mushroom cream, radish, and poppy seeds. This had a melt-in-your-mouth kind of texture, and savory earthiness from the mushroom and onion accompaniments. The ribeye was unmistakably rich and buttery flavor. Get this and you won't regret it. The fromage blanc mousse is a seasonal dessert. This is an incredibly airy, semi-sweet dessert that lands halfway between a light cheesecake and a ricotta. It is served with a pecan graham crust, and candied quince. It's like a fancy smancy cheesecake. Staff: Radu was very helpful, kind, friendly, and attentive to my friend and I. Love this place and will be coming back very soon. They accept credit cards. There is no credit card minimum.

We first started with the Sea Urchin ($28) - The sea urchin was on a bed of bay scallop's. so much flavor with a delicate sweetness. Ceviche Mixto (Shrimp and Octopus) ($23) - huge portion, perfect with their home-made hot sauce and crunchy corn tortillas. Shrimp Aguachile ($28) - raw marinated shrimp with fried shrimp heads. Ceviche made of fresh urchin and scallops, one of the best fresh urchin dishes I have ever had. Pata de Mula (raw blood clams) - 4/5 - The sauce on the clams was very good, my only "knock" is that the sauce overpowered the clams so it was hard to taste the actual clams. Spot Prawn/Scallop Aguachile - 4.5/5 - I though the scallops and the aquachile sauce were great. The spot prawns were a bit flavorless. I would order this again just with the scallops next time. Coctel Mixto - 3/5 - Maybe my least favorite dish of the meal. The taste was fine, I just thought the coctel "sauce" (more like a cold soup) was overpowering for the fresh seafood. Octopus Taco - 5/5 - The other favorite of the meal, probably the best octopus tacos I've had. Overall a great meal, and I would look forward to going back.

We special ordered a bunch of different proteins and vegetables at half portions to make a feast: Aguachile- Light refreshing starter, kanpachi perfectly marinated and great for the summer heat. Crispy potato- Phenomenally done fingerling potatoes. Whipped beans- Carnitas on top made this dish. Fried chicken tacos- Found the chicken slightly on the dry side, if there was a creamy/thicker sauce would be even better... nothing wrong with flavor, good mild heat. I did enjoy the fresh shredded cabbage and carrots, reminded me of bahn mi. Empanadas- Loved the acidity of the sauce that cut through the fattiness of the ground meat. Light shell. Crispy Squash flower- Delicate crunch, like an angelic version of a jalapeno popper. Lamb chops- Definition of "treat-yourself" luxurious meat lollipops. Celery salad- Simple dish but the lemon flavor and tartness really helped break up the richness of other dishes. Churros- Light crunch and small, petite dessert. The thin caramel sauce is addicting. Fine dining, for those special occasions or if you just want to splurge for a morale boost highly recommend this restaurant. One dish that doesn't work for me is the lamb chops, which is a shame since it's my favorite protein. I've ordered them multiple times with clear instructions on temperature and have found them overcooked and tough. The beef tostada was just ok. Whilst I loved the pickled veg on the side, the beef was underseasoned. It wasn't bad - just not up to the standard of other dishes. The vibe in the place is welcoming and the restaurant is nicely appointed. We will continue to be regulars and it's really worth trying if you haven't been yet.

The bowl arrived covered with a see-through lid to hold in the steam -- lifting it off as the steam cleared was a small but memorable touch, like a magic trick. A nice bit of theater. The noodles are stellar. Thick, chewy, and hard to find in the US -- not what you'd expect from a vegan bowl, but they absolutely nailed it. Possibly my favorite noodle of the year. The broth, however, came out lukewarm. It's a fixable mistake, but it meaningfully hurt the experience. True to the warning, it's sour -- yuzu-forward with a heavy citrus presence. It's also thicker and more viscous than a typical broth, which isn't quite right texturally, but the flavor is well above average for a vegan dish. The richest vegan broth I've had -- the tonkotsu of veganism. The toppings are an interesting collection, and they do a lot of work to keep the bowl from feeling sparse. The ginger tofu crumble almost reads as a breakfast ingredient -- good, but it makes you miss meat. The pan-fried dumplings are the standout: I bit into one and let the broth fill the pocket. A new experience, and a smart way to add substance without meat. The crispy onion gets lost in the mix, and the alfalfa sprouts fit the vibe without contributing much flavor. The presentation and commitment to bold flavors within a meatless framework are real strengths. The inventiveness reminds me of Mensho -- a genuine willingness to be different. With a properly hot, slightly thinner broth this could have been a 10. As it stands, 9/10. Innovative, delicious, and the noodles alone are worth the trip. That said -- even by LA standards -- $43.95 for a bowl and a four-piece roll is genuinely painful. Sides: Skip the spicy miso avocado rolls. I'd like to explore their rewards program and app to see if there are any good deals. We spent a lot trying the Sushi. It was delicious and nicely sweet and savory, the miso was comforting. We could have gotten out for around $25 a person but the standard experience here seems like just ramen would usually run you about $32 plus local parking per person. We ended up spending $100 for the two of us driving into DTLA for this place. Fun! But would definitely plan more of an outing in LA if I came back.
