Coal fired pizza is always a hit or a miss because they have a tendency to get burnt pretty easily but this was cooked perfectly. The service was good and we were easily able to find seating. You order at the register and they bring the food out to you. They have a few outdoor seats in front of the restaurant which was nice because I brought my dog with me. First time trying New Haven style pizza and it did not disappoint! I'm usually not the biggest fan of coal-fired pizza because I don't love too much char but the crust and dough was delicious and not too charred. The sausage was one of my favorite sausages I've had on a pizza because it had so much flavor. I'm not sure what was unique about the cheese but it tasted so fresh compared to a lot of other cheeses I've had on pizza. The prices were actually really good - when we ordered the pizza I wasn't expecting it to be so big based on the price. The service was really good too. This place was just a few steps away from being absolutely amazing. A few of the wait staff were a little pushy, (probably to turn tables faster). The seating areas were very congested and not extremely clean. The pizza crust was fantastic soft interior with a slight crisp edge. The fresh mozzarella was pretty good. This place claims to offer the real deal of New Haven-style pizza, a distinctive merging of Italian and American stylings that periodically pops up outside of Connecticut. While their online menu had slices on order, they told me that was only for lunch, so I just went ahead and ordered a whole pizza. It came with lemon slices, and when I asked whether this was typical of New Haven (which I know it is not because I've been there), I got the answer that it was just their chef's genuine innovation. I have nothing against it. Their sauce has a slight astringent flavor, and while I thought the crust could stand to be a bit more charred (sorry to all the locals who can't stand this), I liked the contrasting lemon note. I ordered a tomato pie, which does come with a light dusting of pecorino cheese but definitely puts the tomato flavor front and center and makes for a lighter pizza than the American pizzas that often use cheese to excess. They didn't have a lot of menu options; not a lot for special diets and nothing in the way of salads, and I eventually ended up heating half my pizza with a plastic cup of water in a dimly lit space. This is the best pizza crust around. Tiny little hole I. The wall, they sell pizza by the slice or a whole pie. Nothing supper fancy just good food. Next time I for sure want to try the garlic knots. Disclaimer: rating pizza quality and giving a LOT of leniency on service due to how new this place is. The pizza was great. You can tell it's New Haven inspired, but not a 1:1 ratio. Vibe feels like it's a college town pizza joint. Wide beer selection. The waitress was very nice but this place needs to figure out a ticketing system or a better way to keep up with their orders. We waited 40 minutes for our pizza and during that time they messed up one table's pizza and delivered the wrong pizza to two different tables. I wish this wasn't a negative review, but unfortunately the pizza was terrible. I was shocked when they served us pizza burnt to crisp as if it was acceptable. I was even more shocked to see the numerous reviews echoing the same sentiment. They should be ashamed of themselves taking people's hard-earned money, and serving them blackened pizza. The pizza was so burnt that I couldn't even taste the toppings. Someone on Reddit coined it "cremation pizza" and it is no exaggeration. Where is the integrity? I have to say being born and raised in New Haven CT, I had high hopes for this pizza. Seeing how New Haven is considered the pizza capital I am probably a tough critical for my recent visit to New Haven Pizza in Knoxville. Service was good. Its a small place. Self serve water, with no accessible ice. It was rather warm inside seating area small and nothing to brag about. The pizza came out, the sauce was basically tomato and black pepper without any herbs. It was missing oregano and basil. The cheese was sliced so coverage on a pie was minimal, similar to a margarita style pizza. There was a nice char on the crust but the intensity of the peppery sauce took away from the overall bite. We ordered cheesey bread, it looked great with full shredded mozzerella cheese coverage unfortunately the added fennel took away from the flavor. My husband and I are both from New Haven Ct and grew up on crispy cheesy Italian style pizza. There is a lot of improvement needed in order to call this place a real New Haven Pizza. The coal charred oven is only part of it. If you're from New Haven then you know Pepes and Sallys which are two of the best New Haven pizza restaurants in the country. For this place to be my first introduction to Knoxville pizza, they did an amazing job. The place was super clean and we had no problem staying there for a long and enjoyable amount of time.
