We have seen this Bakery at the Long Beach Marina farmers market and been curious about their products and ingredients. We have a daughter and an aunt who have a lot of food restrictions, especially gluten. We were so excited to visit their brick and mortar store front and see all their delicious options and beautiful desserts. Their shop is very nice and the kitchen looks very clean. We stocked up on gluten free bread and bagels for our trip so that everyone can enjoy these high quality alternatives. We also got a few dessert options to celebrate my aunts 60th birthday! I know she will love the Lemon Ricotta Cake and Ultimate Brownie! We will be back to try the pistachio cheesecake and the berry tart! I stumbled upon Niya Bakery after seeing their signs of gluten-free and sugar free. It's a small spot without space to sit inside. Despite being a rainy day, I walked inside and had their Pecan Pie Bar. Overall, it was a tad too sweet but still very tasty. The bar itself was on the pricier end - to be expected - but the amount of pecans was generous. The bar itself also had quite some substance to it; it was dense and packed like a bar should be. I was randomly searching for keto friendly food options on yelp when I stumbled across this gem. I had been craving bread / sweets since my keto journey and this place really hit the spot. I tried their jalapeño cheddar bagel and mini bundts. The jalapeño cheddar bagel is on the spongey side but tasted like pizza to me, which I loved. I wouldn't have been able to notice that the bundts were sugar free and keto friendly either. It felt like I was having a full cheat treat/meal. The gentleman at the front was friendly. This was my first time trying a keto/no sugar bakery and I saw this was nearby me. I saw their menu and was excited to try their baked goods. Parking was plentiful so we were able to park outside the door at around 11:45! After some tough decisions, I decided on trying the ham and cheese bagel, brownie, pistachio chocolate mini Bundt cake, and the chocolate raspberry Bundt cake and it all totaled to $30 with tax. It wasn't extremely overpriced and once I got home to try it, the goods were worth it. I ended up toasting the ham and cheese bagel at home and it was delicious, tasted so similar to regular bread! The cakes were so moist and delicious, can't believe it's diabetic friendly and low sugar. There is no seating inside, so it is just a place to pick and to go. If you have any questions, the staff are nice and friendly as well. I would definitely stop by if you're near the area to try some delicious house made desserts and treats! read more

I don't even know where to begin! I happened to be in the area and hit Yelp looking for a keto bakery. This place looked very promising. When I walked in I was immediately blown away. The items on display looked amazing, like a combination of food and art. The owner, who I assume is named Niya, explained the bakery's offerings to me. I chatted with her about her business got started. I loved that she started making her own keto foods and baked goods for her own lifestyle change and got convinced by her friends to start selling her creations. She said that she is a classically trained chef, which explains why everything looked so delectable and delicate. She recommended the bagels and the pistachio cake but said that everything should be good. It was hard to not buy literally everything but I let my eyes do the choosing for me. I ended up with the following: Pistachio Vanilla Cake Chocolate Strawberry Loaf Cake Raspberry Coffee Cake Chocolate Chip Cookie Ham & Cheese Bagel Cinnamon Roll Everything was good, but that pistachio vanilla cake was exquisite. I'm pretty sure it was the best keto dessert I've ever had. The chocolate strawberry loaf cake was also really good, super moist and flavorful. Can you tell I love cake?? The raspberry filling in the coffee cake was delicious, and the bagel was nice and savory which is hard to find with keto baked goods. I chose to try this bakery based off of the positive reviews. I tried their Rocky Road brownie and Carrot Cake. I wasn't impressed at all to say the least. Not moist, dry, lacking flavor, lacking sweetness. Nice presentation, but texture and flavor wasn't there for me. The NUM Keto pastries are by far the best I've ever tried. When you're on a specific diet due to personal choice or medically required and the urge to satisfy that sweet tooth is apparent, then Fermentality or aka Niya Bakery is your go to place. We are currently on a ketogenic diet and the hardest part of a low carb diet is satisfying those sweet cravings. As Fermentality is a bit of a small place, they give you some dessert and savory keto options. We tried two of their pizza bagels which hit the spot to satisfy the bread craving. We also tried three single serving desserts. A pistachio mousse in a brownie like cake cup, the Christmas tree ginger bread cookie/cake and a raspberry cake with coconut. Also had to give their chocolate chip cookies a taste test. As expected when you go to a specialty store, the prices of items are going to be a bit pricey but at Fermentality, it's reasonable. We will definitely come back to see the many different options offered that we were told can change at times. read more

I had high hopes and was so excited to find a local gluten free bakery as my mom has celiac, but unfortunately my mom didn't enjoy any of the items I purchased from here. I bought 1 raspberry tartlet for $7, 1 box of 4 truffles for $13 and 1 box of cookies for $12. I visited the store in-person on Christas Eve Eve. Super cute little store with a lot of variety and the baker/cashier who helped me was so sweet, however..... The raspberry tartlet had no flavor and both the truffles and cookies didn't taste home made, but rather commercially made with no fresh ingredients. Nothing was tasty. Randomly found this place on yelp when searching for sugar free dessert. It was close by to where I was eating lunch so figured it was the perfect time to check it out. Tiny little place tucked away in an awkward strip of shops next door to a seedy dive bar and car wash. Be warned, parking is limited and if you park in the next parking lot over you will get approached by tweakers in the alley asking for money. This place was a nice surprise. It has both fermented items such as kimchi, cauliflower, kombucha, etc, and a wide range of homemade bakery items that are diabetic and keto friendly. Every single dessert looks sinfully delicious yet are surprisingly low calorie and only a couple of carbs. Cookies, cakes, pudding looking things, little pies, everything looked amazing. I personally bought a cookie and a pumpkin spice coffee cake. My wife got a cookie and a pumpkin pie in a jar thing. We get home, and I'm like "ok, this is really going to suck. No way this tastes good". I take a bite and I'm like "WTF". Take some more bites, let out a few more "WTF's". No joke, if you gave this to me without telling me I would assume this is a 100% full sugar unhealthy dessert item. In no way did this taste like a healthier version of a dessert. Flavor was delicious. Texture was perfect. Now when I went here about a month ago I was surprised by the high price but my wife is learning how to make similiar items herself and the ingredients cost a fortune. Regular flour is $4.99 yet Keto friendly flour is like $20. So it's expensive but it's due to the ingredients they have to use to keep the carbs low. I can't wait to return and try more goodies. My wife can't eat sugar anymore so this is a great way to still eat a tasty treat. They use monkfruit as the sweetener so nothing artificial. I also bought a jar of their Thai style fermented cauliflower. I loved it. Crunchy and loaded with flavor. Only reason I can't give this place 5 stars is the shelf products. My wife bought a "Rhea" candy bar by Choc Zero. It was so old the chocolate was ashy white and it was hard as a rock. It was also drastically marked up in price. So that pissed her off. But, the good thing is she discovered choc zero and now orders direct from the Fullerton, CA company. EFFING AMAZING sugar free candy that also uses monk fruit as sweetener. If you can't have sugar or are on a Keto diet you must give this place a shot. They change their bakery items weekly and they taste truly fantastic. I discovered fermentality through another store selling their sweets. This place is phenomenal. Their keto sweet have the perfect macros, usually somewhere around 300 cal, 20-30g fat, and low net carbs. But what is more amazing is how they taste. Texture and flavor are better than most non-keto bakeries, and it's gluten free! The must haves imo are the almond ricotta cake, and the pizza bagel. But don't sleep on anything else. The flavors change often, so you don't want to miss out. And then the f fermented products are great also. My boyfriend got the Thai kraut and he eats its with eggs or in his tuna salad almost everyday. He also gets the celiriakraut(spelling) that he loves! read more

Very Tasty! Stopped by out of curiosity because I have a diabetic in the family. No sugar was used in the lovely pumpkin cupcake/blossom little guy.... sweetened with Monk fruit. I also tried a Raspberry Almond Ricotta something or other, it was SCRUMPTIOUS! I could've scarfed 18 of them! It was like a delicious cloud of soft almond cookie with fruit. There were items in the refrigerator as well, like kimchi and other fermented veggies that looked interesting, but I was too chicken to try. I'll think about it for next time ;) This place was a bit on the pricey side...reason for the 4 stars, not sure I could visit often. I am working on weight loss with keto for health reasons. I had been losing 2-3 pounds a week, but was having cravings for cake. I love cake. Instead of messing up the weight loss process, I stopped here and got a Mocha Loaf Cake slice and a raspberry muffin. Each were 4-5 net carbs. The Mocha Loaf case was so good that it cured my cake craving - but did not throw me out of ketosis or spike my (pre-diabetic) sugar levels! Best of all, I did not gain but continued to lose at the slow but steady rate despite having enjoyed this case - half one day and half the next! I love that I found this clever keto baker so near home, and that the treat was so lovely and satisfying. I have to go back and try another of the fancy pastries because this one satisfied like a real fattening one might. The muffin was good, but not special. I had it for breakfast. But that Mocha Loaf cake, was made with ChocZero chocolate products according to the nice lady, which is quality and tastes really nice. If you are on keto, and need a little cake therapy without getting thrown out of ketosis or messing with your sugar levels, give it a try. read more
