The good: Service, ambience, wine menu, The not so good: cassoulet. Unfortunately dry almost glucky. Meat (bratwurst and duck confit on the side. Meat was good but the beans not. I'm not a connoisseur of cassoulet but 3 of us ordered it and the same response. Other: The pot roast dinner was enjoyed. Appetizers were mostly okay. The salmon appetizer was salty not enticing. The mussels ( a large serving) needed a deeper bowl for the broth. Desserts were good. Wine menu was decent and we enjoyed our choices at a reasonable price. They provided an extra treat for us at the end of the meal. We were relaxed and comfortable. Personally it's not my favorite menu but I'm not overly familiar with Alsace regional cuisine. read more

My original review will give you more depth, but I came back to double check my work, and everything checks out! This is a unique, fun, stylish, and relaxing place to have an engaging meal. This time around, the menu was a whole new seasonal adventure. The spatzle was reworked as an autumn dish. There was a new hearty pot roast, and a whey poached trout. Every item was made with care, and the strength of each dish was the push-and-pull between strong flavors, mixed with milder items to provide a little reprieve. For example, while the accompanying brussel sprouts and squash brought a strength of flavor/texture, the trout was a simple yet delicious delight. The seasonal changes to the menu were a power move, because it felt like Christmas Eve, a whole new set of gifts under the tree to fantasize about. The spirit of exploration alone got me excited to book my next reservation. Overall, come and enjoy what Ashland boasts as the only dedicated Alsatian restaurant on the west coast. read more

We let our son, who has a great palette, pick the restaurant based on the menu posted in the window. Unfortunately, both seafood options were sold out (at 6:45). He ordered the steak and it was tough and not well seasoned. The rest of the food was on par with that. Not too memorable. Service was bad. Food was worse. We arrived 5 minutes early for a 6 pm reservation. Restaurant wasn't full. We were seated and waited 15 minutes for a server to come over and take our order. We waited another 15 minutes before drinks arrived. Let's start with the glass of red wine: it wasn't cellar temp or even room temp. It was WARM, like the bottle had been sitting in the sun. It took one hour and 10 minutes for a shared smoked trout salad to arrive! The salad was drowning in an overly acidic dressing. Lettuce leaves were limp, the entire thing was mushy and one note. Three minutes into starting the salad our entrees were rushed over. The kitchen could not get their act together. The bavette steak (ordered medium rare) was charred on the outside, raw inside and missing the sauce. It was so tough the steak knife could barely cut it. The fries (cold) were clearly not made in house and came out of two different bags because some of the fries were thin, others were wedge. Completely lacking salt/seasoning. I sent it back. Because we were going to a show there was no time to redo (nor did I trust I'd get something edible.....) so no dinner for me. The second entree, "black cod in veloute", was warm fish served in a massive amount of cold soup. It was also lacking seasoning and the overall concept of the dish failed. The suggested "20% tip" amount on a $40 bill was $17 and change! Good thing I can do my own math. It's clear from other comments that this place is inconsistent at best. I would not recommend it. As is the case with many restaurants in Ashland, the food was expensive. Knowing there was a problem with our meal and experience (the server kept apologizing) I would expect the owner or manager to come out to talk with us. That didn't happen. read more

Newly arrived in 2025, this restaurant specializing in Alsatian cuisine is a welcome addition to the Ashland scene. Now the region of Alsace has its own rich history. An area of land on the border between current day France, Germany and Switzerland, Alsace has been an area plagued by territorial conflict since the 1600's and has ping-ponged between various national identities through no less than four wars, including WWI & WWII. But this isn't a history lesson, it's a Yelp review. Yet the historical context of being a regional football has led to a most interesting melange of cuisine that is neither purely French nor German, yet carrying the gastronomical heritage of both. This expresses itself in dishes like the regionally monikered "choucroute" which looks like a French word, but manifests as a sauerkraut with a variety of add-on options. For our dining experience, we went with the Sauerbraten (think pot roast, somewhat similar to pot au feu), and a beautifully rendered Cassoulet (a white bean stew, paired with duck and a bratwurst). We absolutely loved both dishes and give high marks for quality and flavor. I would personally recommend asking for a side of the house-made mustard to pair with the Sauerbraten, which just adds another flavor 'oomph' to the dish. Prior to the entrees, we were given an amuse bouche, and we also split their version of a warm beet salad. The beets appeared to have been prepared 3 ways in their presentation...a sort of beet relish, beet chunks, and thinly sliced beets as well. The combination and flavor enhanced with shallots and olives were wonderful. Service was excellent, with timely supporting cast and knowledgeable staff. Choice of sparkling or still water with no extra charge was a nice touch. At one point, Nous used to include service in their pricing, but that is no longer true, so just be aware of that change. We're really happy that Nous has arrived on the Ashland scene, and will be returning to explore more of their Alsatian menu. Maybe next time we'll save some room for dessert. read more

My personal favorite reataurant in Ashland. I ordered the gulai which was a delicious vegetable dish and I added beans to the dish. And I also ordered the fingerling potatoes which had hearty artichoke hearts included. Both dishes were really perfectly done, and very healthy dishes. Ok top of the food and waitress being nice their was a man playing guitar in the restaurant and he played the most relaxing peaceful tunes. Sunday Brunch was excellent. We were seated right away, and the staff were friendly and attentive. The Schnitzel Benedict was outstanding -- perfectly runny egg, flavorful hollandaise, and a delicious pretzel base. The Tarte Flambée is a must try as well. The homemade sausage, goat cheese, and vibrant berry sauce create a perfect harmony of flavors. Their coffee - flat white and espresso macchiato were smooth and well-balanced. They welcomed me back with friendly hellos and smiles. We stayed a long time for the Sunday night game night!! We played cribbage, Monopoly and sushi go. They kept us happy with pretzels, waters and the delicious Alasation Food. The chef came out to check on the food and told us he made the kids Mac and cheese super cheesy for them. It was delicious. I had the chicken thigh and beans from the kids menu and it was amazing. I thought it was just a bite but it was a full meal! I also had the salmon with celeriac puree and roe. Mouth watering. Every time I visit Ashland, I have come by since they opened and there's more delicious food! The menu rotates seasonally so it's amazing to try Chef Charlie's food! We even got a tour of the kitchen at the end. Highly recommend for a quiet dinner, date night or night out with kids. The restaurant itself is such a beautiful sight for the eyes. The moment we walked in, the ambiance set the tone for the evening warm, inviting, and beautifully detailed, from the table settings to the soft lighting and flowers that made each space feel personal and cared for. The Foie Gras Partager was indulgent and balanced, the Moules Marinières brought richness and brightness in harmony, and the Coho Saumon Poêlé was a true showcase of precision and flavor. We ended with the Grand Marnier Soufflé, light and fragrant, a perfect finish to an exceptional meal. Brand-new elevated classy restaurant in Ashland! This will be an in-depth review so the too long; didn't read version is a phenomenal and unique collection of drinks and food that you won't find elsewhere and is worth the try! If you don't recognize a dish, the staff is very knowledgeable and explain exactly what's in it. We were told the menu may be seasonal so we look forward to seeing what new items come and go and as they are currently only open for dinners, they are potentially evaluating lunch options - so TBD, but exciting! Nous is an Alsatian cuisine dining, which from a quick google search, is from the Alsace region of France that has strong German heritage and influence which matches the food presented. This restaurant breathed new life into this location with a pop of pastel colors inside. Opened just a couple weeks ago, they boast experienced Chefs and managers. While there are some small kinks, it is far more well-refined than you would expect for a newly opened restaurant and they have set themselves a high bar that I have faith they'll reach. BEVERAGES: As far as the drinks, they have great signature cocktails a solid collection of local wine and beer: some local to Ashland and the Rogue Valley, and some "local" to the Alsace region that this cuisine hails from. Some of our cocktail favorites where "The Alsatian swizzle" which was an herb based effervescent cocktail, and the "Hotel d'Alsace" which was a whisky base but cut with countreau creating an extremely smooth drink. We also tried the Leon Beyer Pinot Noir from Alsace, France and the "Weihenstephaner" which was a Bavarian beer. Both were excellent. And while it may be simple, they were very on-top of keeping our waters filled which is always nice. FOOD: The appetizers and entrees were the star of the show: the flavors were mesmerizing and the most important thing is they are so niche and unique that you cannot really compare it with any other venue around. With beautiful aesthetics came beautiful pairings, each dish having multiple flavor profiles but each melding well together. Working backwards, for the main courses: The crown is pigeon was lightly "gamey" while the texture was closer to a rare beef or duck than something like chicken. Both fish dishes (trout and black cod) looked incredible. We ended up getting the Trout with an Asparagus cream and it was amazing! On the appetizers, do not be mistaken as they appear on the menu as "L'entree" which roughly means dish prior to the main course, but to the unassuming eye they may thing it's the "entree" from that selection, the pine nut and Brie flatbread is delectable and melts in your mouth after having been warmed in their fire oven. Last but certainly not least the pretzel had phenomenal dips such as a very creamy cheese and horse radish, something unfortunately far too rare these days! Only critique we had is the desserts were very unique but maybe too explorative when you want something simpler to end the night. The pine nut brittle that gets delivered with the check however was so tasty, I practically wish I could order a whole sheet to take home! I'll start off with the highlights: ambiance, especially the outdoor seating area, was excellent. Front of house staff were welcoming and very friendly, including our server. We were offered a choice of sparkling or still, which was a nice touch, not having to pay for bubbly water, which I prefer. Cocktails and mocktails were delicious. The highlight? The fig liqueur at the end of the meal. We were disappointed in several things, though. Our orders took forever, and our server was very aware, apologized several times. What we ordered should have been quick, and the restaurant was nearly empty, so not sure what was going on. Seated at 6, pretzel appetizer about 30 minutes later and seared tuna and a schnitzel nearly an hour later. A table seated after us was brought an amuse bouche that we didn't get until our server realized the error and brought it over, but suggested it was because of the unexpected wait for our pretzel appetizer. The pretzel was quite salty and a bit hard for my taste, but sides that accompanied it were well made. I ordered the seared Albacore tuna starter for my main. Thought it is described as seared to order, it def was not. It also did not have the texture of fresh fish at all. It was supposed to be coated in coriander and fennel, but those flavors didn't come through. The celery root slaw over-powered the tuna, was tough to chew and very over-sauced. There were little blobs of apple sauce dolopped around. This was tasty but odd with all the other flavors. All together it was gross and I sadly sent the dish back. We got a side of spaetzle, which should be buttery, pasta-like, and simple...but all we could taste was nutmeg. Maybe this is Alsatian specific, but it was not for me. Server was incredibly apologetic, and removed several items on our bill, without being asked. Thankful for that, but I don't think we will try this again. We wandered in late and had an extraordinary experience here. Seated at the bar, in this lovely space, we had personalized service from the bartender, Kae, who was EPIC, so friendly and attentive to my quest to find a delicious N/A cocktail! Then the chef/owner came out to greet us and told us the story of how he created a dessert, The Ashland, a spice cake sitting on a perfect pool of coconut cream, that I just had to try! It was unbelievably delicious and complete with a candle for my birthday! We wished we'd had more time in Ashland to come back for dinner and definitely will, next time we are in town. read more

We had dinner at Nous for a special occasion, and they delivered! Highlights: service is warm and professional, lighting and music are a good vibe, and the menu meets my personal criterion for a special occasion restaurant - lots of dishes that are interesting and complicated enough that I would never make them at home! Trout, steak, leeks and flambee all cooked perfectly. A couple things that could be done even better- a little more description on the menu would be welcome. For example, I didn't realize that the leeks would be served cold. Also, a smaller, more curated wine list might be easier to navigate and a better match with the menu. Maybe that happens over time as favorites emerge? In any event- it's already a wonderful addition to Ashland, and I'm looking forward to visiting again as they continue to evolve and refine. read more

It was deconstructed with the duck confit and bratwurst on the side, creating a unique and totally delicious culinary experience. My husband and I have been here three times and tried different things each time. Every menu item has been stunningly delicious, truly. The dishes have each let their ingredients shine through while being uplifted by the seasonings and other components. The staff are so so friendly and you can feel that they're happy to be here. Ok this is our third trip to Nous. I did not disappoint. We came for a a couple cocktails and something light food. My wife had a little bit of an upset tummy and every time she has their homemade schnapps it totally fixes the problem. Julie one of the owners mixed up this custom drink for her with the schnapps in it totally made her tummy ache go away. I had the Rosey Peach. So good! We ordered the confit Oregon Albacore salad it was incredible the fish melted in your mouth. I asked Chef Charlie if he could do a chef's special salad he brought out this to die for salad he just whipped up see the picture in this post. We had a wine flight of three German Whites that were so good. Finished it off with the Poppy seed pants cotta. Also incredible. read more

I REALLY REALLY want to give NOUS more stars. We REALLY wanted this to be a great restaurant and we were so excited to give it our business. We are hoping that they get better over time, that their prices come down a bit, and that their food gets tastier and more exciting. We were a party of six for a 64th birthday...long-time Ashland residents who are well travelled. What we liked was the music (old time 40s), the color scheme (pink and sea-foam...easy on the eyes), and that we were welcomed in with a positive vibe. It was great to have the choice of sparkling or still water every time the "bus boy" came around. The staff members were smiling and friendly. Unfortunately, once we sat down, it went down hill. There was a lot to be desired. There seemed to be a server change with our table, so drinks took quite a long time. The server who was with us most of the time was on the management team (I saw from her photo online), but she didn't know what some of the words meant on the menu. It was not an easy menu to decipher and - as another reviewer says on this page - it seemed out of touch with Ashland. Maybe add the English translation to the menu when there are words in German? We ordered cocktails, foie gras, schnitzel, pigeon...plus the pretzel, soup, and dessert. Every dish was average. They were "ok," but not for the price we were paying. $48 for a VERY small portion of pigeon which was raw inside, was surprising. Market price for 4 ounces of foie gras - half of which was pureed - was disappointing. Cocktails that tasted watered down left us feeling lack-luster. When we asked for bread & butter, we were told that there was no bread & butter, but we could order a pretzel instead. The pretzel was actually nice...warm and large. But the way it was described (simply a "pretzel") could have been more appealing. Additionally, it came with a cheese sauce that had zero taste...it would be REALLY easy to make a yummier cheese sauce. (I would recommend that the restaurant also offers bread & butter for the customers.) The desserts were disappointing...not a lot of flavor. Our "soufflé" which our server described as coming out "puffy and high above the plate, which she would then pop" was completely flattened in a super tiny container. We were all staring at it trying to see it. Despite it being flat, she tried to cut into it with her knife (like you would do with a soufflé to pop it). It was very odd and uncomfortable. It was like she was trying to act like this was how it was done...but it wasn't at all how she described it or how we have experienced soufflé. She then poured cream on it but she drown the miniature barely-to-be-seen soufflé. We used some of the cream to make our other dessert taste better. But it didn't work. In the end, we had a huge bill for small portions of food that were bland and a little confusing. We also all felt resentment about the 20% automatic tip (no matter the size of your party). Not only are we a group that often gives 25%-30%, but we don't want to be forced to give 20% when we are served raw pigeon and the food is uninspired. It feels very controlling - especially for Ashland. And yet, speaking up about it can feel uncomfortable. You don't want to make the brand new restaurant team feel horrible. At that point, you just want to leave and not return. I feel a little bad for writing this review. I know there are human beings who will be reading this and working hard to bring a new restaurant to Ashland. I know that running restaurants are long hours and often labors of love. I get that. But there are also six human beings who spent their hard-earned money last night, chose NOUS for a 64th birthday celebration, and it wasn't a good experience. I am hoping that these are growing pains and NOUS gets a lot better. (We did notice that other tables were getting more attention than we were and we wondered if the others were friends of the staff and/or management.) Maybe we will return a year from now after they get their feet wet a bit more - if they are still in business. We hope that they will be in business - offering surveys and and being open to frank and direct feedback will help...it would behoove their team to invite input from their customers. It feels like there is a lot of potential and all the ingredients for NOUS to succeed. They could start with eliminating the 20% automatic tip, making the cheese sauce zestier, cooking the pigeon fully...while adding another few ounces to the plate, not pureeing the foie gras, offering bread & butter, changing up the desserts all together, and lowering the prices so they can make a buck, but not gouge the customer. We wish them luck and hope that they succeed. read more

Nous was such a fun surprise. We loved the bright cheery ambiance and hand-painted bird mural and especially the inspired menu. Our party of four each loved their main courses including dishes that featured cod, layered trout, Schnitzel with fried chicken, and a pea-based spaelka. We also had a delicious appetizer of a chicken-and-cream sausage wrapped in chicken thigh (the chef apparently makes all types of creative sausages with various meats and fruits). Don't be discouraged by the somewhat confusing menu--just ask the lovely waitress to explain anything that catches your fancy. For non-drinkers we enjoyed a lemon-orange shrub. The wine list focuses on unusual European wines and were relatively pricy. Would have been nice to have a house wine option. They topped off our feast with some hazelnut and pine nut brittle. A 20 percent tip and local tax was included in the price which worked for us. This is a new place in town and worth supporting. Wish it was in our hometown. read more
