This is one of those places you almost don't want to tell people about... but it's too good not to share. Pablo's - A South American Taste is tucked away on the outskirts of Olde Town Slidell, and from the outside, you'd never guess what's inside. It looks unassuming--almost like a forgotten storefront--but once you walk in, WOW. Modern, stylish, great music, and such a welcoming vibe. The food was exceptional--rich flavors, beautifully executed, and incredibly satisfying. The drinks were just as impressive, creative and perfectly balanced. Every detail felt elevated. The service truly sealed the deal. Gisella was amazing--attentive, kind, and genuinely invested in making sure we had an incredible experience. You can feel the pride and passion here. Parking tip for first-timers: park on the side street since there's little to no parking directly out front. Don't let that deter you--this place is 100% worth the effort. I can't say enough good stuff about the meal we had there this evening. Our waitress Gisella was so friendly and sweet. They had a very large party that took up most of the restaurant, yet we never felt ignored. We started with the octopus which was cooked perfectly and so well seasoned. All 3 of our entries were as good as the next. We all ended up eating out of each other's plates cause we loved everything so much. Worth the drive from New Orleans for sure. Don't sleep on this one. Pablo's has a great menu, very varied. The fettuccine I had was so good. The interior is decorated nicely. They make good use of the small space. There is also outdoor seating in the back. Every time I've been the service has been excellent. read more

PABLO'S - a terrific Peruvian restaurant in Slidell Old Town!! We went there for lunch and shared an order of delicious Lamb Sliders (2) and an order of Street Tacos (4). The Sliders came with the best fried-to-perfection fries we've had in a long time - crispy on the outside, soft on the inside and perfectly salted. The Tacos are made with handmade corn tortillas and a choice of two proteins. We chose Lomo Saltado (beef) and Aji de Gallina (chicken) - phenomenal flavors in each one! What a cute place! The restaurant had about maybe 20 tables inside and outside altogether. The outside looks so fun, with a great vibe. Parking is a little tricky as you must park on Cousin or Carey St and enter by the rear of the restaurant thru the patio area. Signage in the back is not real big so it may be hard to see. I had the flank steak with a green pesto type sauce over fettuccine and it was good. My friend had the Loma Saltado and it was very good, the beef very tender. Only negative was that I wish they served iced tea. Lunch crowd was steady from noon til we left at 1:30 but no wait for tables..yet Kaylee our server was very attentive too. I love this restaurant. It's clean, friendly and absolutely delicious. The kitchen is completely open as one walks in.

I don't know much about Slidell Louisiana, but I didn't have an extremely good Peruvian restaurant on my radar at all. I'm down here for work but I may need to return for the sole purpose of coming back and trying more of the menu. Fresh ceviche, bistec a lo pobre, I don't have any notes on what could've made my visit better. Saw someone who said if this restaurant was in New Orleans you'd be hard pressed to get a reservation, and I agree. Do yourself a favor and come to Pablo's. read more

Pablo's is quite the gem in Slidell. Try as many dishes as you can, but do not miss the Ají de Gallina! It is delicious. The arroz con pollo is amazing as well. The owner was very kind, and the staff friendly. We drove from Baton Rouge to check it out, and it was worth the drive. Other dishes we tried were the Causa and ceviche.
