My time at this stand was a bit of a flyby since I was with a big group. The person working was very knowledgeable about their selection and made lots of suggestions for vegan options. The offerings here were not your typical run of the mill "special flavors" of pasta like Spinach or Sun Dried Tomato. Pappardelle's Pasta definitely stands out with their unique flavor combinations, not to mention, they offer vegan and gluten-free as well! Just to give you an idea, there was dark chocolate linguine, orange szechuan pepper pasta, artichoke lemon.... to name a few. The pasta that caught my eye was the Extreme Habanero Radiotore, complete with a warning about how spicy it is. The employee offered me a sample of the raw pasta and warned me of its spiciness. And spice it did deliver! My eyes watered and the pepper tickled my throat, all the way down my esophagus. I found my winner! Due to limited luggage space, I was only able to take how one tray of pasta. If that weren't the case, you can bet I would have brought lots more home! My phone had lousy reception here so I was unable to check-in on Yelp until I was outside under open sky. Be sure to Check-in if you're in the area because it gives you a 20% off coupon! We know how to cook without boiling everything to death, how to season food, and how to make a sauce or gravy (it's all in the roux-hoo-hoo, y'know). And as for customer service in Montana, if you buy something there you haven't had before, the kid behind the counter will explain the process patiently, perfectly and with a smile. And offer to come cook it for you. While still smiling, a mouth that looks like the entrance to an igloo. In Seattle, a city known for its amazingly polite freeze between strangers, finding someone who earns their wage by providing excellent customer service is like looking for the sailor on an aircraft carrier who shoves off a virgin and returns to port in the same condition. If you want to experience the rarity, the absolute pleasure, of exchanging money for pasta, head yourself to Pike Place Market and find Pappardelle's Pasta. It's exactly 45 paces from the main entrance to the market, opposite the fishmongers. It's also the tidiest, cleanest and most-organized of stalls in the market. That alone makes shopping there worth the trip through the skyscraper-lined caverns of Seattle worth the trip. Once there, you'll find pasta of almost every shape, composition and color imaginable, each one unique in its responsibility of attracting and carrying a specific sauce. If you're not certain which does what, the people behind the counter will happily assist (are they all from Montana?). This brings me to the subject of the review: stellar customer service. Young man Gozi had people gathered around the Pappardelle stall when I arrived. I kept my six feet away, waiting for them to make their selections. Then it was my turn. Gozi greeted me with a smile that, while not visible behind the mask, was obvious in his voice. He wasn't there to sell me anything; he was, if anything, a guide for people wanting to move their pasta experience beyond de Cecco and other national brands. All I wanted was something to hold a cheese sauce for my Thanksgiving side dish. Gozi presented all the best options, and recommended the Garlic Chive Seashells. From there, he pointed out the different shapes and colors of the Italian Pesto Blend. Sure. Two, please. Finally, the Lemon Parsley Mafaldine was staring me in the face, and was new to me. "It's our best-seller", says Gozi. "Who am I to impede tradition?", says me. With each selection, Gozi pulled pre-printed recipes for each pasta for me, and provided his own perceptions of them. What he has is magic, a "he-must-be-born-with-it" ability to treat every person he meets as he would people he'd see at the Thanksgiving table (on a normal year). Impeccable. Gozi, from which town in Montana did you come?! The transaction completed, I was given my receipt, and I offered my assessment of the entire seven minutes I was at Pappardelle's: "If I could bottle your enthusiasm and customer service skills and sell it in the stall next to this one, I'd be a billionaire." This time, a laugh, another radiant smile, and off I went to get a sauce from de Laurenti's, cheese from Beecher's and a crusty Italian baguette from Three Sisters Bakery. Sure, I could get any of those at the Fred Meyer store close to my home, and there's nothing wrong with the mass-marketed national brands. But the people at Pike Place Market, including Papparedelle's Pasta are The Little Folks we should be patronizing at every opportunity---particularly now, when they need us as much as we need them. Really, though, what I got today was my wallet seduced by incomparable customer service, and my personal commitment (if only to myself) to return in future. I was strolling through Pike Place Market and someone from Pappardelle's Pasta offered me a chocolate pasta to try- it was unique! Apparently you can cook the pasta and top it with whipped cream, strawberries, etc. I ended up buying half a pound of the rosemary garlic linguine, which is their most popular, for $6! When I lived in Florence, the best and fresh pasta was always the ones at the market that I can take home and cook myself. So it was nostalgic to be able to buy pasta from a stand. I cooked it al dente, used something similar to a vodka creme sauce, and cooked some shrimp, mushrooms, spinach and cherry tomatoes to go with it. Grated some Parmesan and it was delicious. Half a pound feeds two adults, but I definitely could've bought a whole pound for another meal later on. I love chocolate, and I love pasta, but chocolate pasta? I had to taste it to believe it. Ok, so I only tasted the raw and crunchy variety - but I was pleasantly surprised by the rich chocolatiness of it, and am assured that a heaping mound of dark chocolate linguine makes a nice bed for ice cream or hot fudge and peanut butter. I basically paced back and forth around this stand for about 15 minutes taking it all in. Luckily there are lots of tasty dipping sauces to sample while you're agonizing over your decision. Pappardelle's has basket after basket filled with pasta in every color and variety you could imagine - and several you would never have imagined on your own. I've mentioned the chocolate - but how about orange pasta, or lime? Dessert pastas are not the only specialty, though. You can find noodles derived from just about every veggie and spice, not to mention the intriguingly black Calamari flavor. There are pastas in just about every shape, from long, flat, wide lasagna and fettucine to teeny tiny orzo. This store in Pike Place Market has better pasta than anything I've been able to find elsewhere. They had always insisted on offering me their free samples when I was walking by, but it was only after buying their goods that I realized how much I'd been missing out on. Apparently, they have over 100 flavors. Chocolate is one of them, so I guess they don't mind going for the unusual. I just asked for three of the best ones, and in very little time I had a Southwestern Blend, Rosemary Garlic Linguine, and Garlic Chive Pappardelle. I presume that they're bigger experts on pasta than I am, so I trusted them. They were five dollars each, and there's no tax. I haven't tried it myself, but it's 20% off if you show them that you've checked in to the place on Yelp, so there's a way to save a dollar! Honestly, I was planning on just cooking the pasta for lunch for myself. I had assumed that each bag would last for one meal for some reason. But each variety of pasta came with its own set of instructions, and they say "Serves 6." I was amazed that for such low prices, you could feed such large groups of people. I guess that's what I get for not paying attention. Instead of feeding just myself, I was able to feed my whole family and then some! The quantity is unmistakable, but the pasta is also significantly better than the generic kinds at grocery stores. Of course, that also depends on how well you cook the pasta, but following the instructions was not difficult. It turned out to be extremely rewarding as it was quite good, and we had all these leftovers despite initially expecting that one bag of pasta would only be enough for one person. Wow! That habanero pasta is incredibly hot! It was too spicy for me so I mixed it with some plain pasta to diffuse it. I saved it in the fridge to eat the next day. The atomic fire from the habanero pasta was so strong it infected the plain pasta overnight. That's right! The habanero pasta made the plain pasta go nuclear! Of what I tried, my taste buds were extremely wowed. My absolute favorites were the Thai peanut sauce and truffle oil. I've never tried truffle oil before, but the deep flavor of truffle after sampling the oil was absolutely heaven (especially since I love mushrooms). I'm also pretty picky about my peanut sauces, but their Thai peanut sauce did not disappoint. Their chocolate noodle was very interesting to try. I could definitely detect the distinctive chocolate flavor, but I'm not a huge fan of pasta, so I had to pass on buying it. While at Pikes Market, a pasta stand caught my eye. I stopped and inquired if they had any gluten free varieties and they had one that was a "Trumpet Pasta". The vendor described it and the type of flour it was made from. It sounded good so I decided what they heck, I'm on vacation, I will bring some home. It was a bit out of my price range at $12/lb. but so are most things at Pikes Market. So I got 1/2 a lb. which is about 3 servings. It cooked up nice just as the vendor described and I am happy to say it is quite delicious. It was not soggy or over cooked, it really holds up nice. The blend of GF flours they use was a great choice. I made a shrimp with kale and a cream sauce with the pasta. I will most definitely remember them on my next trip up to Seattle. While the man who was actually trying to help me and explain why eggs maybe were not needed...this other "employee" jumps in and starts spouting off that eggs aren't needed to make pasta and his tone of voice is basically I need to get over it...he just had his hands in his sweatshirt looking in a completely different direction and began lecturing. My advice to him..."MIND YOUR OWN BUSINESS" and if you feel that you need to be a know all---do it with your own customers and stop butting into other people's conversations. I did buy some pasta it was so/so...it wasn't bad but I have had better. But I would NEVER come back here to just buy pasta...I live literally a few minutes from here...I would only come back if I had out of town visitors who had a dying need to go to the Market. Another top-of-the line specialty food store with more of the best pasta you'll find in the Seattle area. Located in the Pike Place Market, these guys really know their stuff. I especially love the Myers lemon olive oil and the -- you guessed it -- pappardelle pasta, which I used to make a Fresh Salmon pappardelle with a heavy cream sauce and the aforementioned Myers lemon olive oil. DO NOT TRY TO USE THE CHECK IN DEAL This is the email I sent their headquarters in Denver. Today (8/24) I visited your store located in Seattle's Pike Place Market. I "checked in" via Yelp! and recieved a 20% off check in deal. When I presented it to your employees, their response was "we never signed up for that" and refused to honor it. Then when I paid, the employee made a snide remark saying: "I don't understand why someone needs 20% off when it's only $5.00??." It was very rude and though I can afford the full $5.00, when something is offered, the appropriate reaction would be to honor it and avoid rude remarks to your customers. I love coming here to buy pasta! Any reason to pick up some gifts, white elephants or a special occasion dinner, and I come here! First of all the oil samples are SO good. I would buy all of them if I had space on my counter at home. They make amazing gifts, and they're great to keep at home for yourself. It just adds that quality touch to the food or appetizers that makes it golden. The pasta is also so delicious. They have pre packaged smaller portions that make great gifts. They also will package up larger portions. I've never had a pasta that wasn't amazing. I've had the linguini and lemon orzo myself, but I've gifted quite a few flavors too.
