The batter's crispy, toppings and sauce are solid, no issues there. I pretty much order these every time. Today though, the fish had a pretty noticeable muddy/earthy taste. It's not a seasoning thing. It's more like the kind of flavor you get from certain farmed or freshwater fish, and it came through in every bite. Because of that, I'm probably going to skip the fish tacos for now. These used to be a winner for me, but I can't stand that (new to me) off flavor. Have eaten here many times. This time I received my order ready texts went to go pick up my food and waited another 15m for it to be ready. When I asked how much longer kindly she was rude and said there were multiple tickets in front of mine. So I explained oh I was going off my text saying my order was ready 20m ago. Then getting my order home I was missing one side of the rice and all 5 tacos made incorrectly so I had a ton of kid temper tantrums after. The Truck Stops Here Semi-newish (ca.2021) Mexican restaurant located in a building that used to house a thrift store (Junk Drawer) and has no built-in kitchen, ergo the food truck outside. Despite the less than ideal cooking situation, they actually churn out a surprising amount of restaurant-quality food and drink. The Good: *Not a huge shared parking lot, but it was plentiful. No street parking IFO the restaurant fwiw. *Catering available *Friendly service *Dog-friendly covered outdoor seating. *Not only do they have Dog-friendly seating, but they also have a special pup menu. *Complimentary chips and salsa were fantastic! Maybe just a touch too salty, but in this case I'd rather it be over than under. *Banana Horchata was a delicious a nice flavor combo. *Had to try their famous fish taco and it was 100% worth the extra calories. The fish was fried perfectly and the fresh ingredients and Chipotle cream sauce on top was fantastic. *Quesa-Birria Tacos were also delicious and not overly greasy. Not the best I've had, but they got the job done. *Carissa enjoyed her Blue Fajita Tacos very much. That girl loves her peppas. The Meh: *While very friendly, the service was not the speediest as our server was basically a one-woman show doing everything but the cooking. Fortunately, we had nothing to do and all-day to do it. Love this place! The food is delicious and the atmosphere is so nice! They have flowers and lights outside and nice cultural decor. Some of the servers are really nice, some not so much. Their dinner is five stars but I didn't like breakfast the last time I had it. I definitely recommend their lunch and dinner. We ordered: - Fish taco: crunchy and flakey. They give a good amount of fish and I love the chipotle sauce it comes with. - Carnitas taco: some of the best carnitas, juicy and flavorful, not a fan of the tortillas but the meat makes up for it - Rice and beans are classic, nothing fancy but delicious - Chips and salsa: homemade chips are so good! And the salsa is delicious, nothing too spicy but has a nice kick - Burritos: huge, flavorful, good. Doesn't come with salsa so we used the salsa from the chips - elote: on the cob, so flavorful and looks pretty - horchata: this is sometimes good sometimes not, it can have a strong flavor that lingers I also got their chilaquiles which were ok. I've had better. It didn't have much flavor and the avocados it came with were rock hard. Overall, definitely recommend for lunch or dinner. I don't understand how this place gets consistently highly rated. Food is mediocre at best but not fresh tasting at all. I came here three times total since 2022. First time in 2022 I was impressed. Second time was a bit sketched out in 2023 and recently in 2026 can confirm it's more of the same. Recent experience got a chicken burrito. The cooked chicken did not taste fresh but several days old. The rice and beans had hint of shrimp flavor for some reason. Overall just not good. The salsa that came with chips however was enjoyable. Service was abysmal. One person working both kitchen and front of house running between serving patrons and cooking food back in the truck. I feel bad for that guy. He was doing his best and I don't fault him. Considering the situation he was in I would rate service pretty good but a restaurant should not subject its staff to such conditions during a dinner time rush. So 5 stars for the server 2 stars for service at the restaurant. Once again this is billed as a restaurant not a food truck. The atmosphere is nice. There appears to be a coffee bar and a bar. It looks festive. However I then question why is there a bar if they don't serve alcohol? Ok so it's a non alcoholic bar offering juices and smoothies supposedly. Why is the drink menu so loaded with so many options but nothing is made fresh apparently (no fresh lemonade...what is fresh)? Finally there are advertisements for milk tea etc. a kitchen sink of a menu trying to be a jack of all trades but turning out as a master of none coming from single individual staff cooking out of a food truck. I'm sorry to be harsh but the place seems overrated and may need better management if this is how it's run every day. Staff was friendly but kept in mind if its busy they may take a little longer to check in with your party. Food was good, I got the garlic shrimp. I didn't have any leftovers and I usually do. You have really cute outdoor seating as well as modern indoor seating which is great. We ended up placing a Grubhub order here and glad we did. We got to try: * Al Pastor Quesadilla - if you are looking for cheesy goodness, this is a good option. The meat was really well marinated and every bite was yummy. * Super Burrito w/ Chicken - the size of this burrito was huge and it was stuffed with much goodness. I wish it had a little more chicken in it, but the flavors went well together. Overall service was fast, and we got the food when we arrived, piping hot. Delicious every time! They appear to make their own chips. Their salsa is delicious with complex flavors and the right amount of heat. My dining companion had the beef crispy tacos and loved them. I sometimes order the churros and they're some of the better ones I've had. Cute little Mexican place in this tiny plaza. Love the patio seating that will be even better when the weather gets warmer. There is also plenty of indoor seating. The woman who was serving by herself was friendly and efficient. Interesting thing is that they cook in their food truck that's parked next to their patio. The food is nothing special but if you're craving Mexican food it's an option in this area. The chips tasted fresh and crispy, the salsa was good. Pictures and positive reviews of the fish tacos were what first drew me to Patio Del Copal, and I'm happy to report that they didn't disappoint. They pile their tacos high, and it was some of the best fried fish that I've had the pleasure of eating. The batter was perfectly crispy and flavorful without being overly thick, and they certainly didn't skimp on the fish. Another highlight was the complimentary chips and salsa they provided as part of the dine-in service. Both parts were delicious, and seemed to be made in-house. I had to stop myself from eating the whole basket while I waited for my entrée to come. They have a fascinating setup I really haven't seen before where even though it is a full service restaurant with a warm and colorful indoor dining area, all the food is actually made in a food truck kitchen parked just out front. Their menu also has some interesting items beyond what you may find at your local taqueria, so I'm definitely going to have to come back and be a little adventurous.
