Simple, fresh, delicious, and very pretty atop its shell. We ordered an appetizer, a different scallop dish, Pan Seared Diver Scallops. (Parsnip-potato puree, brown butter ponzu, capers). So good. Succulent, perfectly cooked and devilishly satisfying with its rich, savory flavor. We enjoyed the one dish that have been on their menu since the beginning, Koshihikari Rice. (short-grain Japanese rice, overnight chicken dashi, shrimp, uni, blue crab, cage-free egg yolk.) Wow. So much happening here, and yet it's a complete package. All the ingredients meld together sumptuously. It akin to Paella, or perhaps to a stuffed Risotto, although the Koshihikari Rice was very much its own dish.
