I live nearby and after almost a year of being under new ownership, I finally stopped by for some pho. The (I believe it was) owner received my order and was so kind and friendly. He asked me if I had tried their pho before and when I told him it was my first time under the new ownership, he assured me it was the best pho in all of Portland. I could not agree anymore. I mean, it's aight! It's decent and hits the spot. Pricing is appropriate for the area. Nothing I'd rave about but the ambiance is fresh and elevated. Their menu was in English, which I had a hard time adjusting to but the waitress helped our party with the order. Service was a little weird, but I'll leave that out of this review. My table got spring rolls and 3 bowls of pho (2 beef, 1 house special bun bo hue). TIP: Mostly, I came here to warn anyone that orders the Bun Bo Hue (spicy beef noodles) that it is VERY spicy. To be fair, the server did clarify with me if I knew it was spicy beef noodles to which I said, yeah? (because it said that on the menu) She asked me how spicy i'd want it, so I said "mild is perfect" to play it safe. But holy cow, this mild was... intense. I didn't think it'd be more intense than a jalapeno, but I think it is. It was certainly a strong way to start a mild and they don't play around here I guess. I couldn't take more than 10 or so bites, so my old immigrant asian parents ate it and even they had to put up a good fight.... We came on a Monday and the lady who helped us was absolutely sweet! As for the pho, this was probably the BEST pho I've ever had in any pho restaurants in Oregon. It is truly a hidden gem IMO! The meat portions was given more than what you paid for and it was so soft and tender. If you like your meat to have a bit of fat in your eye round steak this would be your favorite spot! The broth was really delicious. You can tell it was going to be phenomenal when I see the oils inside the broth and can smell the richness of the spices. So good! Was craving việt food and it surpassed my expectations! We got the House Special Pho and the rice plate with grilled short ribs. My parents are usually pretty picky about their pho but they loved the pho here! The short ribs and the portion size were also great! We also loved the environment. Our server and the owner were very friendly and checked in to make sure everything was tasting good and to see if we needed anything else. I had the short rib plate like always and the rice was the normal amount.The salad was a quarter of what is used to be and the same for the short ribs. Yeaaaah Pho 503! Nice job, I was hungry and now I'm not. The good: Portion is great! I had 3 different cuts of steak in the bowl I ordered, and there was goodness in every bite. Fresh add-ins on the side, too, including jalapeño which is such a bonus. Great customer service, friendly and attentive, but not overbearing even though I'm the only one here. Why 4 stars? First, the broth. I loooove a good pho broth mainly for the aromatics and the unctuous mouth feel and this was a little flat on both. It wasn't bad!!! But I'm one of those now, sorry. And finally, with dine-in only and being on break I opted for a counter seat and the counter was dirty. Bummer. 4 very full stars from me! If you're in the neighborhood and want some good soup there's no reason not to try Pho 503. I'll come back next time I'm around and try and eat my way to another star. I work at PSU and drive-by Pho 503 many times. I decided to come in for lunch one day and had some Pho (aka beef noodle soup) and it was delightfully good. As many of you know the main ingredient that makes pho great is the broth, Pho 503 broth ranks up there with my wife home cooking. The noodles were fresh and the meats were flavorful. I came back next week and tried their House Special Egg Noodle dish, the sauce was rich and savory. I ordered a to-go order for my wife for dinner also. Today I had the spicy noodles (bun bo hue) and it was tasty with plenty of meat and fresh herbs. Overall I give it two thumbs up for Pho 503 and will try their rice plate sometimes in the future. I've been coming back here almost once a week. It continues to be amazing. Not only is their pho great, they also have great vermicelli dishes, spring rolls, soups, and other great dishes! I came back to Yelp to recommend getting the coconut prawns as an appetizer. They are crispy and crunchy on the outside and have succulent THICC prawns on the inside.
