The broth is below the noodles. It always arrive steaming hot. Flavorful - and they are generous with their pork belly. The tonkotsu was superb and again, maybe I've been lucky but my noodles are always fresh. I know because I order FRESH RAMEN and never ever use those instant noodles. Bottom line, the broth, ramen, meats / vegetables are flavorful at Kotsu Ramen. PLUS i get a beautiful bag that I can use for groceries or when I bring lunch from home.
