The drinks are creative, well-balanced, and unlike anything you'll find at a typical cocktail bar. You can tell a lot of thought goes into every menu item. The standout for me was the Jameson shot with a pho broth back. It sounds unusual, but it works incredibly well. The warm, savory broth completely transforms the whiskey and makes for one of the most memorable bar experiences I've had. For a weekday dinner at 7 PM, my friend and I were lucky enough to grab a seat. Note, this is located inside the restaurant, upstairs. There are limited seats, so keep that in mind if you are planning to visit. We started off with cocktails, which were both great and had a nice kick to them. For appetizers, we began with the spring rolls that were light and paired with a fantastic peanut sauce. The salad was much larger than we anticipated, but it was full of flavor and balanced the meal really well. For our main, we ordered the pho cup which comes in an adorable cup noodle container. It is a great touch and makes it very easy to take leftovers to go since they provide lids for them. The bar provides a much darker, moodier atmosphere than the restaurant downstairs, though you do hear some of the noise from below when it gets busy. Phocific Standard Time (PST) is one of my favorite speakeasy-style bars in Seattle. Located inside and above Pho Bac, PST is a small, cozy bar to get Vietnamese inspired cocktails. As a Vietnamese girl, I love having a place with unique drinks and Vietnamese representation. The bartenders are also very friendly and fun to strike up a conversation with. The drinks take inspiration from many different Vietnamese foods instead of sticking to the basics. We got a variety of drinks, and they were all very good, some a little stronger than others. The surprise winner was "Khoa Was Here", a shot of Jameson with pho broth. The pho broth is super savory, and shocking goes well with the Jameson, making it a very smooth experience. As much as I love PST, it's not somewhere I visit often due to the size. It's a very tiny bar, holding only about 20 people max. They don't take reservations, so the wait can be long, as a lot of people like to take their time and relax. Parking in this area can also be difficult to find. But once I asked for recommendations saying I like a little less alcohol forward the next two drinks were great! The candied flower helps to tone down the strong drink but the flower is only slightly sweet and a bit more on the tart side. The menu is extensive for a speakeasy, offering great twists on classic Vietnamese ingredients. We tried the Nuoc Mat(Cooling Water), La Dua(Pandan), and Phin-tini. The Cooling Water was very refreshing and comes with 4 pieces of frozen Logan fruit. The Pandan was quite strong with a hint of the classic Pandan flavor. The Phin-Tini was perfect, a balance Vietnamese coffee flavor with Pandan dust. Out of all three, the Phin-tini has to be my favorite. We also ordered the Banh Bot Loc as a snack, it was delicious. I've been meaning to check out Phởcific Standard Time for years now, and finally got the chance to this month. Owned by the people of Phở Bắc and located upstairs inside the downtown location. My friends and I came around 9pm on a Friday, and only needed to wait about fifteen minutes. The space is small, it was inside the mezzanine away from the main restaurant. However, a very warm and intimate atmosphere with a dimly-lit setting. We sat at one of the tables by the shutter-windows, but you could definitely see the best vibes were at the bar section. The three of us ordered different drinks, the quynh bee/queen bee, dua dua/coconut, and the la dua/pandan. I ordered the pandan cocktail, which you could truly taste the flavour. It was super tasty and refreshing, I would describe it as florally/fragrant. I tried a bit of my friend's coconut cocktail which was also nice, little on the stronger side. There were so many signature cocktails to try, and they all sounded so good! Would love to try the food next time too. As a Vietnamese-American I truly appreciate being able to see the culture more reflected in different ways that's not just being a typical eatery. By seeing each drink inspired by the flavours of Vietnam it makes me feel grateful to have this space. My friends and I will most surely come back again soon! read more

I love everything about Phocific Standard Time except the name--like what cornball dad got the final say on that one? The concept is otherwise ingenious, a speakeasy-style bar built into a tiny upstairs space above a pho restaurant. It feels like a smart second-generation venture built on the sturdy foundation of immigrant hustle. The bar is walk-in only, with seats for about 20 people, so expect to wait a while if you're going on a peak night. We managed to get in on a Saturday with a party of six because our hotel was basically next door, and I put us down on the waitlist on our way back from dinner. It was over an hour before I got the text saying our seats were available. The space was fantastic, attractive and contemporary with a cool loft vibe. It felt a little like being up in a treehouse or on a rooftop patio, even if the view was of Pho Bac's exposed ceiling. We took over one side of the bar and had a couple of leisurely rounds. The bartenders were great, friendly and very skillful. The drinks were delicious and innovative, made with a lot of Vietnamese ingredients I'd never encountered in cocktails. On the bright, citrusy side, I loved both the Queen Bee and the Firefly. The Queen Bee was a juicy, refreshing drink made with Sông Cái gin, jasmine honey, lemon, and cinnamon flower. The Firefly was bold and flavorful, colored a vibrant green, with Singani 63 brandy, lime, rau răm leaf, Luzhou Laojiao baijiu, cucumber bitters, and black lava salt. The one cocktail I didn't care for came from the boozier side of the menu, the Hey Darling with Sông Cái floral gin, bitter melon infusion, sakura, and aperitif. I like bitter flavors, but this was incredibly bitter, garnished with raw bitter melon. I guess there's a reason bitter melon isn't usually eaten raw. That taste took over my mouth for several minutes. I did enjoy the Tofu Martini, a smooth, strong cocktail made with tofu-infused gin, sesame oil-washed rice wine, ginger, and MSG. I ended my night with the Khoa Was Here, a must for anyone visiting PST. This was a shot of Jameson washed with pho fat, served with a pho broth back. A brilliant, warming treat. I'd highly recommend PST, especially if you happen to be visiting Seattle and staying in the Denny Triangle. We had a lovely time at this bar.
