If you are looking for a neighborhood Cheers vibe where everybody knows your name, this is not the place. Inadequate staffing keeps the indoor dining closed. Online ordering is the only purchase option. However, the website is not easy to navigate for placing an order, even for my tech savvy dining partner. It took two of us to separately find menu items on our phones and place an order for a family of 4. Finding the menu sections and navigating back to the order page is not intuitive or user-friendly. There were others standing at the pickup window trying to figure out the ordering process as well. The site shows various electronic purchase options such as Apple or Google Pay when setting up personal information to place your order, however, when directed to the payment tab, only credit cards are accepted. Needs Improvement. Our pies were good, and better than a large national pizza chain. Still, they were not the higher quality pies found at local Austin pizzerias like De Sano, Back Space or Home Slice. Meats were flavorful although greasy on the pies, making the dough soggy in places. The chopped salad was a confusing name as it wasn't chopped or shredded enough to easily consume, and the disjointed ingredients seemed in no way to be complimentary to each other or to a pizza. It consisted of unremarkable layers - a pile of very roughly chopped, trough-size romaine too big to eat, chunks of mozzarella, topped with fried chick peas that were either soggy or burnt. Dressing was slightly sweet similar to Olive Garden's with no Italian herbs to be found. All in all, pretty tasteless. Beverage selections included beers and wines of various appealing labels. The dining area is nice enough, but regrettably not available, and a bit unwelcoming. Signs on all but one of the doors ban entry, and threats to diners for beverage "theft" rather than helping customers find needed assistance, displays a poor attitude at best and leaves one questioning if management actually is interested in having customers. So much for Southern hospitality. Diners have to find their own way around to locate beverage stations, disposable utensils and plates, and restrooms. Dining outside on the patio's picnic tables worked well for a perfect evening on a spring day. Unfortunately, Pieous will simply be a "to-go" establishment as soon as the Texas sun takes over the outdoors this summer. The walk-up window for order pickup is most similar to a concession stand at a ballpark although not nearly as friendly. A drive-through window would be a better option for this eatery if they are not going to be able to open the indoor dining. Pieous seems to be just that - a bit hypocritical when it comes to making quality food and a lack of sincerity and customer service when it comes to patrons. I visited with my wife and mother inlaw while driving back to Houston. This was highly recommended pizza from a relative so I was looking forward to it. First I like New York style pizza with a great firm crust. We ordered a medium with olives. I have never had a pizza with a crust this soggy and mushy, It fell apart so we had to eat it with a fork and it was still falling apart. Not seeing the hype - For the price paid there are far better places to indulge on. The House on Fire pizza came out super fast. IMO undercooked. Took a few bite and packed it up to take home and cook on my pizza stone. Was much better, but still not seeing the value. Definitely no fire to this one at all.. Oh my! I have driven by the old location many times and finally made the drive from Austin to come here. The setup of the new restaurant makes it good for groups, and keeps people moving along. The line snakes by, and the manager was offering to get people beer or wine, starting their order while they waited to order their food and pay for it all. When ordering dessert, you get a ticket voucher for redemption when you're ready. This way, the dessert stays cold and/or fresh until right when you want it. Brilliant! Onto the food... The cesar salad was huge and delicious. I love the cold crisp and garlicky taste. The Fat Queen pizza (meat lovers) was good, but tasted very "meaty"...almost a TAD unappetizing to me. But the crust and sauce was amazing. I think next time I'll stick to one meat and a bunch of veggies. The blueberry pie cheesecake was to die for: the best thing I ate of the night. Only downside is that it's really loud, and the outside area is great for families but oh my gosh is it filled with screeching kids and pre-teens running around unsupervised. We had a whole 5th grade cheerleading team running around playing tag with boys and footballs while we were eating. Pieous is like the Franklins of Neapolitan style Pizza. You wait in line for like an hour just to order, and then just a few minutes later you get your food. Pieous is focused on simplicity and quality of fresh ingredients (only real food served here!). They have a small indoor area for seating, and a nice covered patio that is dog friendly. Inside you can sit at the bar and watch all the pizza masters creating their masterpieces and throwing it into the oven. Outside is much nicer as you don't get the loud noise coming from those eating inside, and chatting away in the long line that twists and turns like those waiting for a Disneyland ride. Once you survive the line, you give your order at the register, and you receive a number. Go find a table, grab your plastic cutlery and paper plate, and your food will be promptly delivered (in no time at all). They have their own sourdough mix they use for their fresh baked in house bread and crust. There is no gluten free crust available. However, there are wheat free options on the menu like their meat plates, and fresh in house made mozzarella platter. They also have an extensive dessert menu to choose from. What you see, they make, slice, and dice up themselves. They also have a good beer and wine selection (bottle or by glass). Also, they have Maine Root sodas available and complimentary sparkling water. My husband tried the Smoky Italian pizza, and they created a pastrami plate with mozzarella for me. My husband loved the pizza. The sausage on the pizza was incredible. One of the better pizzas he has had in Austin. The Pastrami though I think was even better. It reminded me of Texas brisket. You can order it moist or lean. I of course got it moist. It was full of flavor and melted in my mouth. AMAZING Pastrami Brisket. The mozzarella was also good. To finish it off I ordered an affogato. I thought it would be the typical small cup of espresso with a dollop of ice cream. NO, it was a large cup of their all natural vanilla soft serve ice cream with coffee poured over. It was a shareable size. The ice cream was fresh, delicious, and tasty. The coffee was also good. I could come back for just one of those. The staff were incredibly friendly. They even brought water for our dogs. It was worth the wait. Pieous has no website, and doesn't answer their phone. You can order online via their facebook page for pick up. The pizza here is great! It goes in a VERY hot oven for something like 90 seconds so there isn't usually a super long wait for your food even when it's busy (which it usually is). The Pastrami is also very good, if you're into pastrami. read more

As I made the long (well, long for Austin) drive out to Pieous, I really had no idea what I was in for. I mean, the reviews were glowing, but what was in the pot at the proverbial end of the rainbow? Gold. Pure food gold was there. Lemme tell ya a little something about what I encountered at Pieous. An open space, a daunting menu of awesome and right there on the counter, chocolate chip cookies as big as your head. Or rather, bigger than your head. I was half tempted to take a pic comparing my head to that chocolate chip cookie but then I was worried that my head might be the same size and that's a rabbit hole I prefer to avoid. I hemmed and hawed, mired in indecision. A sandwich or a pizza or a salad? So I went for both a pizza AND a sandwich (who needs salad?), rationalizing that I would keep them for another meal. Another two meals and a snack, as it turns out. So first my pastrami sandwich emerged, dense with smoked meat, a smear of mustard and hole-y sourdough. My first bite was oh-so-perfect. Add the pickle slice and fuggedaboutit. Each bite a savory, chewy masterpiece. The second half was only saved from my oral clutches by the realization that I had to save room for my pizza. Lemme stop here and mention that the starter they're using for this dough is, oh, 20 years old. It's made the trip cross country and is now responsible for the best sourdough 'round these parts. I watched Josh assemble what was soon to be a piece of pizza heaven. Stretching the dough, adding the thin layer of sauce, the fresh (hand pulled!!) mozzarella, the soppressata, the spicy onions, the peppers. Masterpiece created, he popped it in the oven for just enough time to cook it perfectly. Heaven in a bite. It was all things I want in a pizza. Usually you have to doctor it up (yes, even at Austin's pizza haven, Homeslice) but this pizza was perfect from tip to crust. Really 4.5 Stars. BLUF: ie... Bottom Line Up Front. The best pizza, or wine, whatever, is the one YOU like the best, not someone else. If you will take that into consideration;.... I have thought long and hard about this review. I lived in Naples for several years and worked in Italy among a zillion other countries. When a restaurant is several hundred years old, they are doing right. Neapolitans argue over the "best" pizza amongst themselves. There is no correct answer. Traditionally, a pizza is not made at home due to the space and the ovens that are required. Also, the ingredients are minimal as the crust is so important. Pizza's are not cut into squares or triangles as eating them with your hands is the same type of sin as cutting your spaghetti. You are considered an uncouth slob. HOWEVER, the younger generation is more and more eating a part that is larger and cut to hold in their hands (when their mother or grandmother is not around of course). A traditional Neapolitan pizza (you can google the requirements) is simply placed on a large plate, uncut in front of you. It is not covered with ingredients as it is only 1 of several possible courses in the meal. You first attack the very center with a knife and fork and ideally should be soft enough to twirl around the fork. Eating outward, the dough becomes more and more solid, but should always be where you can cut a small piece and fold over a flap onto the fork. Lastly comes the crust, which is eaten in bites while carrying on conversations about soccer or what will be the next course or wine. This softness in the very center can be off-putting to those who have been told a thin crust is an Italian pizza. These can be obtained from places that sell to American tourists, but they are not recommended. Also, when arriving in Naples, if you have a friend that lives there, they may warn you NOT to have a pizza for at least 2 weeks so your body can adjust to the massive amounts but wonderful olive oil. If you don't, you may be sick that evening. What is available in NYC and the area is Italian pizza, but it is not like what you find in Italy. One of the basic reasons is that the ingredients are not the same as the FDA does not allow the import of many of the items, right down to the flour, without additives. That is why you can get something called Italian bread in the USA, but it does not compare to the bread in Naples. Hey, but it is still good! Now the famous NYC slice, which I like, is starting to make inroads into Italy. However, it is eaten, not folded over with the ingredients on the inside, but the outside. Impossible? No. As pizza is eaten normally with a knife and fork, it is more like an inside-out calzone. If you just want the amount of a slice, particularly one you are going to eat in you hand (with paper around it), the pizza is quite small. Italians routinely dress much more formally and they do not want to get it one their suits or dresses. Now, in my opinion, and the opinion of the Lady of the house, Pieous did an excellent job. The dough was soft-soft in the center and spot on. We had two types of pizza as we can't agree on which is better, Margarita or one with four ingredients. We also got the Tiramisu. It was very good, I would get it again, but it needed a touch more of booze and/or coffee to hit a home run. The staff was wonderful and the place was spotless. Will we be back? Yes, absolutely! We loved it! Was it the best I we have ever had? No. But in the USA, I would rank it in the top 5 we have eaten. I place this in a totally different category than the NYC slice, which I love to eat and people watch. If you have not been to NYC, and dove into the food, that is a sad thing. If you take it home, I recommend having the oven hot with a pizza stone already in there waiting, and warm it up for a couple of minutes. Any longer and you may end up with a very tough outer crust and the underneath trending toward an American thin crust. I hope this helps. This is just our opinion. What is correct is what you like. And when the sweet owner, Paige, also brought us brownie bites and cookies, I think every one of us woulda walked on water thru hell to eat them. I understand this guy's enthusiasm. We all have that gem of a local place in our 'hood that we want to see succeed. It would be akin to me buying everyone at Soto a round of Flaming Salmon or at Spin (God Rest Its Soul) a round of Larb Sake. So much Yelp love in and out of the Austin Yelp threads. I just had to drive from N. Austin to see what the buzz was about. So glad I did. So glad I did. So glad I did. Oooops, did I repeat myself? The long drive paid off! I didn't partake in the adult beverages only because I wanted my taste buds to get the full flavor of the food. Without the influence of Hops and Grains and such. Of course I tried the Pastrami sandwich. It was every bit as good as other Yelper's have stated in their reviews. The house smoked Pastrami was piled a mile high on top of grain mustard and sandwiched between some delicious sourdough. I had to smash it down a bit to manage my first bite. My response was something like "Oh Lord, this is Pastrami". Their Pastrami is an award winner. My only complaint is I should've had them melt some of their house made mozzarella on it. We also got the Smoky Italian. Now that's a pizza worth writing home about! Think thin crust, but not quite flat bread. More like a cousin. It was baked in a wood fired oven and topped with crushed tomatoes, house smoked Italian sausage, spicy onions and simply fabulous fresh made mozzarella! That pizza was amazing. I've only bragged so about one other pizza in my life, and, that can be found at Stonedeck Pizza Pub in Deep Ellum, Texas. I managed one half of the sandwich and 1 1/2 slices of pizza. My body went into uncontrollable spasms. My right leg stuck out straight and started twitching. I couldn't control myself. I knew right then and there that this was one of the best finds in town. We packaged up our left overs, snagged one of those humongous fresh chocolate chip cookies and headed back to the North side. Despite my aversion to flagrant sacrilege, I found myself worshipful as we entered Pieous and took our seats. It was a fluke that we ended up here. As we meandered out towards Fredericksburg for a Sunday of exploration and shopping, I'd been charged with finding us a place to eat "breakfast" at nearly 1:00. After all of my ideas were rudely shot down as "too expensive" or too inconvenient, I decided my feelings were horribly hurt and started sulking that girly "he'll notice and feel really really bad if I make my eyes look super sad and misty" pout. Staring forlornly out the window, trying to perfect the quivering bottom lip, I noticed Pieous and without thinking said "Oh, that's where Pieous is." Boom. He busted a U-turn in the middle of 290 and pulled in. Feminine Manipulation: Success. Either that or he knew that if he fed me and gave me wine, I'd get over myself and stop being annoying. But either way, this was better than any breakfast / brunch we would have had, anyway. The quaint cuteness of Pieous from outside is unspeakable. The patio beckons you to order a few pints and commune with friends. The stacks of firewood out front, the piled up bags of flour, everything screams "rustic cozy yummy'. Inside the walls are adorned with religious puns (in the vein of the name, itself) in the form of ornately crafted chalk art. The dough recipe is displayed as pictures of flour, salt, water and ... other stuff. Almost every surface of the wall is chalkboard paint, and in their divine knowledge they left a corner vacant for the doodles of children. Really, it's heartwarming at first sight, the whole joint. The great stone oven is front and center behind the bar, and off to the right you'll order at the counter and the'll send you to your table with a number. We had the Pastrami Sandwich and the Smoky Italian Pizza. The immediate response to both was "Oh my god." There's not much to elaborate. It was one of the best pizzas I've ever had. I'm used to a firmer crust, but the flavor, the purity, the softness of it with a slight char were all unbeatable. The fresh Mozzarella is made in house daily, the marinara sauce is understated and classic, the sausage slightly spicy, the onions perfectly, sweetly caramelized. The Pastrami Sandwich is the best I've ever had. The bread, itself is heartachingly good. This will be our pizza night destination for years to come. read more

Pieous pastrami is the absolute real deal. Until today, I have never known what pastrami could be. I've eaten pastrami at various delis around the country, including at Katz's in NYC (not to be confused with the one in Austin that closed for good half a decade ago). None of those places served up pastrami even close to as good as what Pieous offers up. I would rate the pastrami here on equal footing with some of the best BBQ brisket in TX, with it's delicious peppery bark surrounding some divinely tender beef. Either the pastrami plate or the sandwich is a must if you come here even if that's not generally your thing. The Pieous pizzas are also excellent and worth some praise. We ordered a Margherita which features mozzarella made fresh in-house. The dough was really good too, thin and chewy-soft. Can't go wrong ordering one of their pizzas either. We didn't have room for dessert this time though the pies, brownies, and face sized cookies were pretty tempting. Just another reason to come back. read more

I will worship at the altar of Pieous everytime I'm out this way on 290. Pieous is trendy and yet cozy. Greasy and yet wholesome. The best of all worlds really! Everyone orders personal pizzas, which is good news for me because I have a tomato-and-mushroom-hater boyfriend (terrible, I know!) and seats themselves. The pizza is delicious and has that great wood-fire taste to it. The sauce tastes fresh and tomato-y and not spaghetti-sauce-from-a-jar-y. I highly recommend the mushroom pizza with pepperoni- they definitely didn't skimp on either. If their cute restaurant/patio and pizza wasn't good enough, they have THE BEST blueberry cheesecake. Came here for dinner on Friday and had a great experience. Started off with a pint of Sculpin IPA and decided to try both a pizza and their famous pastrami sandwich. I ordered the 'juicy' pastrami and it was fantastic. Super tender, flavorful and with the homemade bread and mustard, it was definitely worth driving out for. Not to mention it was great left over the next day too. I also got the House on Fire pizza with crushed tomatoes fresh mozzarella, calabrese peppers, hot sopressata, spicy onions and crushed chili. The dough is fantastic and soft and chewy with lots of slight charred spots underneath that give it an awesome bitter and sweet flavor and the toppings were equally as fresh as the dough. A nice level of spice and an all around awesome pizza. I also tried my wife's order which was the mushroom and it was just as tasty and fresh. We then split an order of the blueberry pie which I was a big fan of too. Lots of blueberries, not overly sweet at all, fresh tasting, and with an oat crumble topping. Top 5 in town for pizza, and what really puts this place over the top is the great service. From the cashier, to the owner, and waiters, all were very friendly and appreciative. Not to mention, the decor of the place is really cool, and if you sit at the bar, you've got an awesome view of the hypnotic wood fired oven. read more

I used to enjoy Pieous frequently when they were a relatively new place and always enjoyed it. However, since trying to eat healthier, I haven't been in many years. I decided to treat myself to Pieous this past weekend and was really disappointed. I understand they are only doing take out, but if that is the route you are going to go, you should ensure take out quality. The pizzas I got just weren't fresh. Like other reviews, the crust was SO chewy, parts of the crust were burnt and charred, and then the middle of the pizza was soggy. Just all around disappointing especially when you take into account that these pizzas aren't cheap. Giving 2 stars only because the flavor of the toppings wasn't terrible, but I will never indulge on pizza from Pieous again. read more

The pastrami is legit. It's a shame that they didn't solve the long line problem with their new location. There is plenty of room for 3, 4, 5 or even 6 registers now... I really don't understand why they funnel everyone through one slow line to order. No one in the line looked happy to be standing there for 35 minutes! read more

Updates: Had a better experience this time at Pieous because the pizza wasn't burnt on the bottom. Last time that burnt bottom REALLY interfered with the flavor. Maybe they've got the baking times down better this time. Crust this time was thin & a bit fluffy but chewy & the perfect amount of char & pretty much delicious. Definitely want to try the pastrami arugula pizza & bacon jam next time. Some ppl at the table ordered it & LOVED it... and that's what I like to try anyways (gave into the husband's meat-loving request this time & got the Fat queen-- it was good. lots of meat, but also way too salty for my tastebuds). 5 stars: Pastrami Cheesecake Pizza as long as it's not burnt Prices: Pizza $10-14 Pastrami prices have now INCREASED in price $11-13 [boo :( ] Desserts $5 for cookie & plain cheesecake; $7 for blueberry cheesecake (friends also raved about the banana cream pie) I've come to the conclusion that I like the plain cheesecake best- and would order that over the cookie. Finally took the time to make the drive out and try Pieous. I used to live out this way and believe me, finding good food out here is challenging- to say the least. I am always skeptical of new joints out here due to my extensive list of previous bland experiences. Wow...... Finally! A place out here besides the Salt Lick that is getting it right and then some. You could put this place right in Austin, heck Portland, Chicago, New York. for that matter - and it would hold its own. But out here.... the sky is the limit as there is no competition for miles. One of the best pizza's I have ever had in Central Texas or anywhere else. We had the Rocket with tasty razor thin prosciutto. Brick oven fired dough was amazing. Washed it all down with one of several great local beers on tap. And to go home we snagged a fresh baked beautiful Sourdough loaf made from 20 year old yeast. My goodness am I in San Fran?! Nope - Pieious, the best culinary addition to this part of hill country since old man Thurman decided to start selling his BBQ to the public back in 1967 Driftwood. PS. Have to vent a little here. Don't be swayed by the hipster elite yelpers that are trying to show how cool they are by finding nit picky ways to dock a place stars - most of these spoiled snobs on their own couldn't cook a consistent hot dog or get out of bed before noon, let alone run a restaurant.
