They open at 10:30, and when we arrived at 11:00, not only was there a line but the gentleman came out to tell us they were running low on brisket and the ribs. That's how delicious and tasty their bbq is. We were in line for 30 minutes, but was well worth the wait. The brisket was bbq just right but the ribs stole the show‼. The ribs did not need nothing no sauce, nothing. They were cooked to perfection. We also ordered rice and beans and potatoe salad. But just come and fill your stomach with the bbq. They also gift us with free beer, just for standing in line. It's Coors and Tecate, but my husband still enjoyed them. Nice picnic tables outside for seating just add to the fun ambiance. This was my second attempt (first was a fail becuse I wasn't following their IG account). We got there at 9:55am and parked on the main road in front of Bells. There was already a line starting, we were 5th in line. They even offered complimentary beverages while you wait which was cool. There are tables to sit and eat and the guys working were so friendly and made it a great experience. 2lb Brisket - 5 Star - Melt in your mouth, full of flavor and an amazing texture between the hearty meat and perfectly rendered fat. 1lb Ribs - 5 Star - Pull off the bone, well seasoned and next level when covered in the provided BBQ sauce. I don't normally eat the cartilage, but I did on these. 1lb Pork Shoulder - 4 Star - Shredded goodness with a clean porky flavor at the forefront of every bite, also paired great with the BBQ sauce. This was my daughter favorite. 1 Sauasge - 4 Star - Nicely spiced, good snap and near perfect combo of meat and fat. The wife loved it more then I did. 6pk Tortillas - 5 Star - Made with beef tallow and when heated up these barely last 5 minutes. Rice - Side Dish - 3 Star - really well done red rice but nothing especially unique about it. The meat came with a load of cut white onions, charred jalapenos (ours were crazy spicy) and a large portion of cilantro. Our total was around $150.00. We have lived in town for YEARS. The only reason we haven't been to Predite so far was conflict of schedule to their hours. We have only heard the best things. Today we were walking home and smelled an incredible aroma of burger. Now that they are at the permanent location behind Bodega. The line can be long on weekends when they serve their full complement of BBQ-but the wait is well worth it. The vibe is easy-going, you can order and imbibe drinks as you wait in line. Once you order at window #1 the food is delivered quickly to window #2 and you can easily find a table in either of the two courtyard seating areas. They serve by far the best brisket I have had west of Seguin, Texas! We have lived in Austin and in Athens, GA (so that makes me an expert!) and am well-acquainted with both Southern and Texas-style BBQ. The brisket at Priedite is excellent. Moist, well smoked and they use high quality meat. The Spare Ribs are solid and well cooked. Their sausage is also very very good - I don't know if they make it in-house or where they buy from but the sausage is well prepared and it is tasty! The sides, especially Pinquito beans and the Fennel slaw are outstanding! Now for the small, hopefully positive criticisms. #1 Drinks: I'm not sure Priedite has much to say about the offerings as they seem to be tenants of the "Bodega." That said, aside from water, we could find no non-alcoholic options (Priedite had cokes and bottled water for sale at their window to be fair), but the Bodega does not offer anything non-alcoholic that we could find, aside from water and a non-alcoholic beer at either of their drinks stations. It's 2025. There is a huge variety of juices, sodas and flavored liquids they could be offering for sale. #2 Pulled Pork: Well cooked, maybe too well cooked on the day we ate there (8/2/2025). It had a little too much "boiled and stringy" consistency. Too much pulling I guess! There should be some chunks of pork but our order was a small pile of stringy meat. Also, it was not very flavorful. They could do better with this dish and honor that pig!! #3: Offering a variety, or at least 2 different sauces would be optimal. Don't mean to sound snobby but there advantages to different sauces for different types of meat (e.g. like a mustard for the sausage). Just sayin'. That said, Priedite is excellent as a hangout (bring your dominoes and cards to play at your dining spot while your "best friend" stands in line!) and their food is remarkably great! read more

Priedite has the pop-up vibe that would appeal to barbecue aficionados and even purists. I find it interesting that they are right behind the Michelin-starred Bell's. Long lines and wait times are a given, but their employees offer those waiting in line free bottled/canned drinks which I found quite thoughtful and so cool! We tried their beef ribs and sausage special, and regrettably were not big fans of their rub which was very salty. If they dialed down the spices/rub, they would have allowed us to actually enjoy the ribs and sausages. Service is top-notch, but the saltiness of their ribs and sausage, have regrettably brought down their overall rating to 3 stars. Over-hyped. Meh. read more

Priedite is phenomenal central Texas style BBQ with a California central coast influence. The food is fantastic and true to style; they have a custom built offset smoker powered by oak, they focus on a few proteins and keep the flavors simple. The brisket - the best I've had in California. It's well seasoned, has a robust bark and the fat is rendered to perfection. The ribs - tender pork spare ribs that come off the bone, but not too easily. The sausage - the most flavorful protein they serve, the spicy jack cheese sausages have a firm consistency, easy bite and are bursting with moisture. What I love is how they serve the BBQ with house-made tortilla (made with beef tallow), fresh onion, cilantro and grilled whole jalapeños. It's a welcome change from the classic Texas style of white bread. They have a nice east Texas style BBQ sauce (sweet/tangy) and a killer fermented habanero hot sauce at each table. In response to two less than stellar reviews: 1. They don't cook to order and they aren't serving leftovers. If you show up hours after they open and are upset that they don't have the full menu options, you only have yourself to blame. This is akin to giving a restaurant bad review if it rained the day you visited or you got a flat tire on the drive there. 2. Someone mentioned that their food was "too salty". That same review stated that they ate the "beef rib"s...which isn't something that Priedite even cooks. Their ribs are pork spare ribs. If you can't tell the difference between beef and pork then I most certainly don't trust your palate for seasoning. This place is the real deal! Don't change a thing. read more

Oh yes. If Los Alamos hasn't been on your map before, then it sure needs to be because Priedite BBQ is fire. Most folks whiz by Los Alamos, a quiet, small town off the 101, while en route to destinations further north or south. But Priedite is another fantastic reason why you should turn off the offramp and spend a few hours visiting the town. Located in the back of Bodega Wine, Priedite is a mostly weekend pop-up operation. There are several covered picnic tables with decent shade. Lines on a Saturday at 12:30pm can be long - around 1hr to 1hr 30 minutes so get there early or late would be my recommendation. It's easy to grab a glass of chilled wine from Bodega while perusing the tight menu for the 100th time. The reason why one would visit Priedite is the fantastic BBQ. Namely, the brisket. If you are a fan of Central Texas style brisket, then you are coming to the right place. You can order a 1 or 2 meat combo plate with 1-2 sides or you can order by the pound. I like ordering by the pound because you get the different areas of brisket - lean, fatty, burnt ends. They are all delicious. Nice smoke ring, juicy as heck. The sides are not to be missed. Priedite offers tallow tortillas (fantastic) where you can make your own brisket tacos topped with cilantro, lime, jalapeno. Dill pickles, fennel salad, potato salad provide a nice contrast with the acidity. I like that the potato salad isn't heavy and drenched in mayonnaise as well. The ribs were great as were the ranchera sausages, but the brisket is worth writing home about. And ordering extra to bring some home. Or to your picnic the next day. We ate ours by the beach with slabs of Bob's Well bread, cheese, grapes, and favorite beverages and it was like falling in love all over again.
