Stumbled across this place scrolling Yelp for a post girls flag football game on a Saturday morning. I'm glad we did! It's tucked away off Indian School Road, but worth the effort to find it. We had a couple of ham & cheese croissants, a couple of chocolate chip cookies and specialty coffee, plus tea. Everything was fresh and delicious. Interesting in that they were out of ice though. In any case we enjoyed our visit and food. They have many specialty breads from olive loves, multi-grain, French and more. My husband and I were looking for a place to grab a light bite before an appointment that I had and landed here! I'm soo glad we did. We were expecting a pastry shop but when we walked in we realized it is a sourdough store! They hand make everything fresh in house! We decided to try a cinnamon roll and ham and cheese croissant which were both delicious. After discovering all the different breads they had we decided to take one home with us- jalapeño cheddar and boy was it fabulous! We used it for a grilled cheese one night and turkey sandwich another! The prices here are fair. There is seating if you want to eat there. I'm so grateful that the Proof team was open for Easter to serve such wonderful treats! I picked up some of my favorites: a jalapeño cheddar loaf and baguettes. Additionally I was tempted by the carrot cake croissants, Paska, and hot cross buns. The star of the show was the Paska, which was as beautiful in person as online. The texture was delicate with a light chew, and dotted with candied orange and cranberry! To put it lightly the Paska was promptly inhaled! I hope Paska becomes an Easter tradition at Proof. My only regret is that I didn't buy a second Paska. The croissants were excellent and reminded me of a spiced donut. Buttery, with a light glaze of sugar and carrot. I had read some of the reviews prior to coming here and there were a lot of complaints about prices. People who complain about the sourdough prices here have never made sourdough, and have no clue how much QUALITY ingredients cost. I was just in Miami trying out all the French bakeries and the pain au chocolat (chocolate croissant) HERE is cheaper/healthier and SOOOOO authentic! They literally grow their own grains! Start to finish! You guys did an incredible job and I'm so happy I found this place because it's hard to find nice places on the west side. I will DEFINITELY be back and recommend this place! Can't say enough about this bakery. Proof has the best sourdough in the Valley, and such a unique variety of offerings. This is my first time at the Litchfield location, I was in the area, and too far from the farmers market, so I ordered my sourdough online and picked it up in store. They always have tempting pastries in their case and some yummy local provisions as well, like honey and olive oil. The staff is always friendly and welcoming. I usually go to the original Mesa location. But this one did the trick today! I grabbed a baguette and a loaf of their sliced multigrain. My mom and I came across this shop when looking for a nearby place that sells pastries for a morning snack. The shop itself is so cute with quite the relaxing atmosphere. Proof Artisan Bread, where carbs are a religion and I am a devout follower. That Pain Au Chocolat though, it's the holy grail of pastries. And, don't even get me started on their cheddar jalapeno sourdough, it's the epitome of perfection. Oh, and their vanilla latte? Heaven in a cup. While they do sell some coffee options are limited. Do not come with expectations this is a coffee shop in any way. The MVP is the bread here. If you come hungry they have a great lunch option of their sourdough pizza, a drink and a chocolate cookie...which by the way is amazing! I have found my new favorite bakery! This shop in the West Valley of the Phoenix area also has a full café that I completely ignored on my first trip here, because I was so excited about the bread and pastries that are made with locally grown Rouge de Bordeaux wheat milled in-house at their Shea location. The ingredients here are so clean and so high-quality. Everything has the sourdough base. All ingredients are listed underneath each item. The bread is made with flour, water, Harriet & salt. For the Green Olive Boule set out for sampling on Sunday, they add the local Queen Creek green olives. I sampled this loaf and was amazed at the green olive aroma coming off of the samples. I loved the taste of the fresh sourdough, and could easily taste the green olives as well. It was a subtle sour and salty flavor. I immediately grabbed a loaf to take home. My daughter raved about how delicious her fruit pastry was and wanted to know where this bakery was so that she could go back. Luckily, they are close to home and work for her in Litchfield Park. The chocolate chip cookies are one of the best I've ever tried. They taste and smell home baked and are nice and big & thick. They are crispy on the outside but chewy in the middle. There are also pizzas available here made on the sourdough focaccia bread. These pizzas look so good and I really would love to come in for the lunch special one of these days. Every day lunch special includes: a slice of sourdough pizza, your choice of soda, milk, or water & classic chocolate chip cookie for $12. The service here is so friendly and helpful. I asked about eggs being in the pastries due to my egg yolk allergy and they were happy to discuss ingredients and options. I ordered five pastries and they let me know that if I got six pastries, I got a discount. I jumped all over that and ordered the fruit tart. It's Saturday and we realized almost too late we were running out of our stash of Hope's Artisan Sourdough bread. We hopped in the car to get here before they closed. We got there just in time! Phew. (Hope's is only open from Thursday to Saturday.) The line was long and they almost ran out of bread by the time we arrived. We ordered two loaves of sourdough a brownie and a lemon cookie. Ive been going to this place for quite some time and no matter what I get, its all so good. The price can be a little high but well worth it. The only reason why I've recently stopped is the customer service. No one says hi when you walk in and that's fine but I would go at least once a week to order a few desserts for my office and they always make a face like I'm obese and eating it all myself. Mind you, I'm not overweight and even if I was, that's none of their business. I'm helping them make money. I've tried to make conversation as I am aware they may be having a bad day and they barely acknowledge me. But it's every time I go. What a welcoming, warm, and beguiling local bakery and coffee shop! The absolute musts are the breads themselves, the Brioche Sourdough Buns, and the Rosemary Olive Oil Focaccia are bread heaven! I have been wanting to visit Hope's for a while and finally made the stop in. It's tucked away in a business plaza but the sign is easy to spot. First of all, the customer service rocks here and Stephanie was so friendly and helpful! I knew I wanted a fresh crusty sourdough and was going to let me eyes do the rest of the order. I went with a fresh hot loaf of the Italian seasoned sourdough which had so much flavor!! I asked them to slice it and they happily did! I also got a sourdough cinnamon roll, lemon blueberry muffin, pineapple coconut loaf and an iced white chocolate and caramel latte! They serve Peixoto coffee which is cool since I don't go out to the east side often to get to the actual shop. The sourdough cinnamon roll was really good. I didn't taste any sourness from the sourdough but it definitely was a great flavor and would get it again. The lemon blueberry muffin and pineapple coconut loaf were both moist and packed with flavor! Overall, an awesome place with AMAZING coffee as well! Very small bakery with limited sweets to choose from. Located in a shopping center so parking is no problem. They appear to cater more to quiches rather than desserts. They do offer cinnamon rolls that are delicious and zucchini bread that is so moist! We arrived later in the day close to closing time. So we were limited to what was left for the day. We saw chocolate chip cookies, brownies, artisan breads and muffins. Customer service was great. We were just a bit disappointed the were so limited on their selection of sweets. read more

This is a place of sweet carbohydrate temptation every which way you look. There's a lot squeezed into this small shop! I bought a pecan pie bread pudding, a mini pumpkin pie cheesecake, and a lemon blueberry muffin. Everything was fantastic. My husband raved about how good the muffin was. The bread pudding was my kind of bliss--just the right mix of solid bread chunks and custard, with lots of pecans. The little cheesecake was a treat, too--maybe three bites in size, and oh so good. I had the honor of being asked by Nick the Ower if I would like to try A slice of quiche. Of course, I said yes. And what a delight it turned out to be... Broccoli cheddar was my choice. I've been eating quiche since the book "real men don't eat quiche" came out... I've had my share of quiche and never has it tasted like this. The crust had the perfect light flaky consistency. The eggs were light and fluffy. The broccoli was cooked Al dente. Each bite I took was more delectable then the one before. I also, tried the zucchini muffin it was Again, made with love and the perfect consistency of flavors, so light and fluffy. The bakery is getting the homemade sourdough bread loaves ready for tomorrow's entourage of excited customers. Tomorrow they'll have regular sourdough, jalapeño cheese Multi grain and a few others. They open at 8 AM, I spent about 45 minutes at the bakery. I watched numerous joyful customers come in to purchase the sourdough bread, sadly, they had already sold out. Tomorrow they will have fresh loaves ready to buy and enjoy. I am so excited to find this bakery in our neighborhood. They've been open for three years and We just found them. This Yelp posting is unethical... the great reviews are of a bakery/cafe that existed prior to the place that's there now. The place before was a full service cafe that had an extensive menu... and even a completely different name/company owner. This new bread shop just hijacked the unclaimed Yelp posting and all the amazing reviews... they even kept up some of the photos of some of the food once offered at the previous cafe. The place that's there now just sells bread, will make you a poor cup of coffee, offer you super expensive honey in small containers, occasionally cream cheese, and that's it. Since new ownership has taken over (although the bread is still good) I have noticed a few things. Prices have increased and above market (look at Noble and much higher and they are the best in the state) and they run out of stock on several items before 10 am every day. Possibly trying an online pre-order as some other bakeries do and avoids waste. The last 3 x I've done in for baguettes they are sold out by 9:30. read more

While placing our order we got a sample of a cookie they claimed was "overcooked" it honestly was still a perfect cookie crisp on the outside and soft in the middle.
