If you're reading this wondering whether to get Proof Handmade Bagels, the answer is a resounding YES! These are the best bagels in OC, thick and chewy and everything you could possibly want in a bagel! I'm updating my review because I tried their French Onion bagel and OMG it was AMAZING! It tastes just like French Onion soup but in bagel form. Sure, it's a little pricey at $4.50 but it's totally worth it! My daughter bit into their French Toast bagel and said, "YUM!" She was half-tempted to eat it with maple syrup because it tasted just like its namesake. Another winner! Their blueberry bagel is good, but not the flavor bomb that these two are. Their plain bagels are also perfect too! Definitely order ahead so you can skip the line and ensure that you get the bagels you want! Plus if you preorder, they have a buy five, get one free deal (at least at the time of this review they do). Proof always sells out so preorder! You won't be disappointed!

Rosa and Rich, you've changed my weekend AMs for the better! Proof Bagels have touched down to the Irvine Farmers Market scene, and I can frantically run two blocks from my apt every Sunday morning to get my bagel fix in now. (I've been following Rich's bagel development from its Reddit days and haven't gotten the chance to try them for myself until the Irvine landing.) These bagels are the plumpest, fluffiest, and most well decorated bagels I've had since... probably ever. Proof is worth the AM detour, and if you're worried about the bagels selling out (which they do), use their website and order ahead! Ordering ahead allows you to skip the ordering line and guarantees you your chosen bagels.

I came across Proof Handmade Bagels at the OC Great Park Farmer's Market, and they were delicious! They are Asian-owned and very friendly and welcoming. I got an everything bagel in the morning and it stayed fresh all day, and was still soft when I ate it in the afternoon with cream cheese. Yum! I can't wait to get more bagels from these guys. They are located at the Great Park Farmer's Market, which has recently moved to Stonegate Elementary at 100 Honors, Irvine, CA 92620, every Sunday from 10am -2pm. Happy eating!

Finally--a real bagel in California without having to travel all the way to New York! Look at this beauty: perfectly crispy on the outside and wonderfully chewy on the inside. The cream cheeses are to die for--we got the scallion and the salmon, and both were incredibly flavorful and delicious. I'm so glad we finally have something this good locally. Thank you so much Proof for sharing your delicious bagels with us!

OMG these bagels are so good. I tried their French Onion, French Toast, and their Rosemary and Sea Salt and they were all so chewy and delicious. You have a customer for life now! And the owners are so nice and provided amazing customer service at the farmers market. I definitely recommend you pre-order as they will have your order ready for you so you can just pick up! They sell out fast so this is a great way to make sure you get your bagels. Their specialty cream cheese is also very good and tastes so fresh.

These handmade bagels are AMAZING! If you are in the OC they travel to different farmer's markets. I pre-ordered and picked mine up in Irvine. We are a bagel loving family and these are so soft and fresh tasting! @proofbagels - so yum!

I'm not one to review many places, but these bagels take the cake!! I've been far and wide across the nation eating bagels, and this is one of the best I've eaten so far. I've tried their blueberry, everything, french onion, french toast, jalapeño asiago, and sea salt bagels. Every single bagel is delicious, crispy, (but also amazingly) chewy, and perfectly fluffy! They also sell amazing cream cheese options, including smoked salmon and chive cream cheese. I always order online (find them on IG @proofbagels) and am greeted with a smile every time I come pick up. It's part of my biweekly ritual, and I love sharing with my coworkers at the hospital too who love their bagels!

A big fan of this brand since day one at the market. For all you bread lovers out there, you NEED to try proofbagels! Bagels - THE BEST!!! All bagels are prepped days in advance and freshly baked right before each market. These are hands down some of the best East Coast-style bagels you'll find on the West Coast. The quality is unmatched. Cream Cheese - In house made cream cheese is a must try. From the classic scallion cream cheese to other special flavors. Ever since they introduced the pre-order/pick up system, the lines have become much easier to all customers and they move very quickly Really grateful for this preorder/pick up system!! Let me give you a PRO TIP here... I HIGHLY RECOMMEND ordering from their online website because their products often sell out at every market. Plus, it makes the whole process smoother. Your bagels and cream cheese are pre packaged and guaranteed to be ready for pick up. The two owners, Richard and Rosa, are always there, working hard to make sure everything runs smoothly. They've been continuously improving the menu and operations since day one. Their kindness and dedication are evident, and they always greet you with genuine smiles while serving up the most delicious products. GO VISIT !!!

PROOF took me from "not knowing or caring about bagels" to "yeah, I'm a bagel fanatic" in about two weeks. they're that awesome.

I usually grab a breakfast bagel sandwich and it never misses. Bread is fresh, not stale, not overly toasted. Perfect balance. Eggs cooked right. Cheese melted clean. Meat seasoned how it's supposed to be. It's simple food done at a high level, and that's what matters. Then the donut holes... different level. Warm, soft, not greasy. Just enough sweetness. You grab one and end up finishing the whole bag without even thinking. That's how you know they're dangerous. Fresh squeezed orange juice too. Not from a carton. Not watered down. Real citrus, real flavor. It actually tastes alive. The energy in there early morning is solid. No chaos. No lazy service. Just people working and moving with purpose. That's my type of environment. This is the kind of spot that sets the tone for the whole day. You start your morning here, you're already up one. Easy 9 out of 10. Consistent. Early. Certified.

Came in, I didn't realize two people were just fixing their coffee. She didn't bother to say "good morning or I'll be with you in a moment" walked to the back and had someone else come out and take my order. He was nice and had great customer service but interactions with the front of house was not it. She then walks out with a tray of donuts and greets other customers walking in. And this isn't the first time, I've had a sour experience with her. I would come back, however I feel like I'm not a customer she likes to help. That alone makes me want to take my business elsewhere.

Online Ordering System Needs Attention…read more I'm leaving this review because this has now happened multiple times and it's clearly not a one-off issue. Every time I place an order through the online ordering system, it provides a specific pickup time. However, when I arrive at that time, the order is almost never ready. Instead, I'm told it will be another 10-30 minutes. At that point, the pickup time in the system becomes meaningless and defeats the entire purpose of ordering ahead. To be fair, the bagels themselves are good, which is the reason I've continued coming back. But the online ordering timing is consistently inaccurate and needs attention. From what I can see, it often feels like the order isn't even started until I arrive. The staff is clearly busy, but the workflow and prioritization of online orders doesn't seem to be managed well. The team often appears rushed and working reactively rather than following a clear process. This feels like a management and operations issue rather than a problem with the employees themselves. If the kitchen is running behind, the system should reflect realistic pickup times so customers can plan accordingly. I'm hoping management sees this feedback and looks into the process. The food is good, but the ordering system and execution need improvement. If this gets addressed, I'd gladly update my review.

I sat there waiting for my bagel but they never called my name (they kept repeating Tajin). On top of that, the staff calling out the names was so quiet you could barely hear him. I went up to the counter to get an update on my bagel, and they asked for my name and order. They realized they put in the wrong name, didn't apologize, and gave me the cold bagel that was sitting there, without offering to reheat or remake it. I had expected the business to be in a more high volume area, however a benefit of their corner spot was that the parking lot had plenty of spaces. There's no indoor seating, but outdoor tables were set up along the north and east perimeters of the building. I was by myself at this latest visit, and it was close to the end of the day so the inventory was quite depleted. There was no line at all which was not a surprise. The famous Strawberry Croissants and prepackaged items were on refrigerated display to the left when you walked in. As the service counter rounded a corner, there were more fresh baked goods on display before you reached a register. Across from the registers were shelves containing bags of fresh bread products. I bought a Strawberry Croissant, a Sticky Bun, a Ham and Cheese Croissant, and an Apple Croissant. The quality of the pastry dough was very good, and I could see why the Strawberry Croissant was a favorite with the customers. The croissants were light and flakey, and the powdered sugar added a delicate topping to the strawberry version. If I were to rate on just the Strawberry Croissant, then it would be five stars. My overall rating was downgraded because of the customer traffic flow. The lines can be optimized so that if you wanted to buy a six-pack of the Strawberry Croissants and/or anything prepackaged, then a separate queue should be arranged for those customers. The cafeteria trays were of limited use if you were not getting a large number of items. As you advanced in the queue, other products had to be requested from a worker behind the counter and then those were not placed on the tray. Ultimately, I think they can configure the operation to more efficiently handle the higher volume periods of the day.
