I have been here twice now and am a big fan. The bagels are sourdough-based, which gives them a unique flavor and texture that is perfect for bagel sandwiches. I love their Dodger and its sandwich counter part, both of which use smoked salmon instead of the more common lox. Came here over the weekend, and can definitely report back that this is one of the spots you'd go to after a workout for a nice filling bite. The line isn't super long, but the wait is long, especially on a weekend at 11am. We waited about 45 minutes before we got to the front to order. I kinda wish they had a menu for you to look at while you waited, so that you knew what to order when you got to the front. I got the fully loaded lox open faced bagel, with the everything bagel and an iced tea. It came out to around ~$25 for the entire thing, which seems steep, but then you see how loaded the bagel is and it makes sense. They don't really have an indoor eating space, but they have a small beautiful patio with self-serve water. After ordering, they give you a number and a team member brings out the food to you. Food came out super quick, maybe within 5-10 minutes. The bagel itself was delicious! When they said loaded, they mean it. It came with smoked salmon, cucumbers, capers, sprouts (like microgreens stuff), dill, and pickled red onions. Everything was stacked on there like a mountain, and yes, it did taste amazing. I was able to finish half of my bagel, and ended up taking the other half home for later, which after sitting in my fridge for a few hours, still tasted great! For it being in Costa Mesa, parking actually wasn't an issue, and it was super easy to find a spot in the shared parking lot. Had a nice freshness and a slight sweetness with the oil on top. The MF wasn't really for me. So I'm always excited when a new bagel place opens up which was why I have been wanting to try Boil & Bake and wow did it live up to high expectations! Located in the shopping center off of Redhill and Bristol (in the shopping center with Starbucks, UPS Store, McDonalds, the new Sweetgreens drive thru, Chipotle, etc.) it is located in the back of the center and actually has a really nice location because they build a very large private outdoor patio that is connected to the side of the restaurant. There is also some indoor seating as well. There's plenty of free parking so I was able to park, walk in and order. My test of a good bagel store is I order a plain bagel. That's it. No spread, not toasted...I just get a plain bagel and eat it whole like an apple - because if they can make a good bagel that tastes outstanding without anything on it then you know that if they put spread and toppings on it that it will taste even more delicious! The plain bagels at Boil & Bake are 10/10 both in taste and texture. First the texture is perfect and lives up to its namesake: boils and bake as the bagels have the shiny slightly chewy outer texture with a soft fluffy doughy interior = the ideal bagel texture! Then the taste of the plain bagel here at Boil and bake really exceeded expectations because it is complex! I mean it's still a plain bagel but I tasted notes of sourdough with just the slightest hint of something like onion powder. The bagel, while still being plain, was complex tasting and delicious! I would eat it every day! Then when you take their delicious bagels and then order one of their super creative fun sandwiches and it perfection. What is also awesome is that they have 5 different variations on the typical bagel and lox - some having lemon, some with Salted Cucumber & Radish, some with dill, some with Scallion & Chive cream cheese....I love all the different variations on the classic bagel & lox! I'm totally going to be a regular at Boil & Bake! My friend and I split 2 bagels. 1 of the bagels was the works. This bagel was unexpectantly on the hard side. The salmon and other ingredients that we got with this bagel were good. The cheese and jalapeno bagel was nice and soft and seemed fresher. However the sausage in this sandwich seemed undercooked and red inside. The waiter replaced the bagel but the sausage still seemed pinkish. He explained that this sausage may still have some pink even though it is cooked. Because it does have pork, my friend and I were not conlmfortable with eating the reddish pink parts so we picked it away.
