The view is absolutely breathtaking. It feels as though you've left Castle Rock and stepped into a private villa in the French or Italian countryside. Every detail of the property is beautifully designed, and the scenery is stunning. After finishing our drinks, we headed to The Brinkerhoff for dinner and enjoyed some of the best food I've had since moving to Colorado from California. Everything was exceptional. Our server there was also fantastic and extremely knowledgeable about the menu. I'm so glad we followed her recommendations because they truly elevated our dining experience. My only negative feedback would be regarding the hostess at The Brinkerhoff that evening. She seemed annoyed that guests were arriving and came across as unfriendly, which felt out of place for a restaurant of this caliber. It wasn't the warmest first impression. That said, this interaction alone does not warrant a lower rating because once we got past the hostess stand, every other member of the staff was incredible. Other people were sat around us, so we waited to ask for the happy hour menu. We ordered the chef's choice charcuterie, a cocktail, and a glass of wine. The drinks and board were yum, but not quite a wine bar as there were very limited option by the glass. Also, we had to ask for plates and silverware where this is a basic item. While deciding on dinner, we were approached a couple times by the 2 servers in the section. One was friendly, the other, not so much, rather indifferent and made us feel a little uncomfortable and not very welcome. This kind of set the tone for the rest of our night. We ordered the "family share" chateaubriand. We realize this is an expensive cut, but the portion is definitely not a sharing cut, around 4 oz. It is closer to a single entree. When it arrived, the plate was cold, like the meat was lukewarm and the cauliflower was ice cold. Again, we had to ask for silverware and plates for this "family style shareable" plate. We brought the cauliflower temperature up with the server and got new cauliflower after we were done with the rest of the meal. Also, I sat with an empty wine glass and no one stopped to ask if I needed another glass. When the servers did stop by, it was a short interaction and we never even had a chance to ask before they were already walking away. We saw so many people come in and out that they must be doing something right, but for us, our experience was mediocre. If our meal would have been the correct temperature (it was well prepared, just cold) and better execution on the service, we may have had a better experience.
