    Blue Matcha Latte
    Tray

Everything came out to around $35 for a loaf, 2 drinks, and a pastry, which honestly didn't feel too crazy considering the quality. The service was TOP TIER. They were super patient, sliced the sourdough loaf for us, and even had sourdough starters available which was really cool. The space inside is pretty small, but they do have outdoor seating. The vanilla oat latte (9.8/10) was AMAZING. They partner with La Colombe and somehow made one of the best vanilla lattes I've had. Slightly lighter espresso, but still super delicious and balanced. The blue matcha (4/10) looked beautiful but mostly just tasted like milk to me. The chocolate morning bun with candied orange (8.5/10) was really good. Crispy, chocolatey, and the orange filling actually worked really well without overpowering everything. The Spence sourdough loaf (8/10) had a nice crust with a soft fluffy inside. Solid classic sourdough.

PQB is a tiny lil bakery with no seating so it's really a grab n go type of place. However, the morning bun & lamington were phenomenal. The morning bun was perfectly crispy yet soft n chewy on the inside. The chocolate + orange flavors were both present with neither overpowering the other. There's chunks of candied orange and dark chocolate in the middle! Soooo good. I think I preferred this over the lamington, but the lamington was great as well. The cake was super moist and had the perfect amount of frosting and coconut. There was a nice tartness from the raspberry - the cake looks very sweet but is very well-balanced! The prices are better than most other gourmet bakeries in the city as well. Pro tip: if you sign up for One Off rewards, you get $5 off!

I feel ridiculous writing a negative review of a sandwich. But it's also rare that a simple lunch sandwich could feel as insulting as the one I bought at Publican today. So I feel obligated to take note. When I went in, they had two types of sandwiches, a vegetarian and turkey and bacon, made in these larger forms that are trimmed off to sell by the pound. I told the employee I did know how their setup worked, but I just wanted a regular sized sandwich; with a general idea of what a chicago sandwich would cost in a place like publican. She just looked at me like I was a dumb ass, didn't ask what sandwich I actually wanted, took out the turkey/bacon, cut a normal sandwich, then cut that in half (about egg McMuffin sized), weighed it, wrapped it, and rang it up without saying a word, in about 30 seconds. Cost? $23 with tax and tip. I'm not cheap, or expect big portions, but it was absurdly tiny, like for a child. So I'm grateful that she didn't she hand over the normal $50 adult version. But, sure, I appreciate small things of quality, but this ain't it -- clearly been sitting out for a while, the bread was soggy, it was mostly onion, and there was about 1 inch of bacon total. So, stick to their bread and pastries, go across the street for a dependable slice, and you won't feel compelled write dumb, petty reviews like this.

PQB is a very special place- along with an outstanding pastry selection, they're funneling some of the highest quality bread to the best restaurants in town. No matter what you order, you can be confident that anything on their menu is going to be absolutely delicious! The inside was cute, small, and down to business- there wasn't any seating, so this was a strictly takeout operation. The staff was very kind, patient, and efficient when I visited. I opted for the berry scone, double espresso chocolate cookie, veggie sandwich, and a loaf of their famous sourdough. Buttery, melt-in-your-mouth, and topped with crunchy sugar, the seasonal scone was everything a scone should be. The homemade blueberry compote topping was not at all too sweet. The cookie was fudge-y and brownie like in texture without being too dense, and the espresso flavor shined through perfectly. I loved how the sandwiches were priced by the pound, so you can order as much or little as you like. The veggie sandwich was zesty, herbaceous, and not too heavy. There was a lot going on in the best way, so I felt it was definitely worth the price. The bread loaves were pretty reasonably priced and you get a lot for your money. It was every bit as delicious as I hoped and made for the best toast at home. Truly the gift that kept on giving. This wasn't my first time visiting, and it won't be my last- if you haven't given PQB a chance yet, it's well worth making a trek out of the way! It might change your life a little bit.

Twice Baked Key Lime Pie Croissant ($7.50) , Maple Pecan Brioche ($6), Coconut and Grapefruit Sweet Danish ($6)
    Tabitha W.

Their Twice Baked Key Lime Pie Croissant caught my eye on social media, so I finally had my first visit to Publican Quality Bread. They have a small interior, but there is a long wooden bar outside that you can stand and eat at. It looks like they may have outdoor seating once it is warmer outside. I got the croissant ($7.50) as well as the Maple Pecan Brioche ($6), a Coconut and Grapefruit Sweet Danish ($6), and a loaf of the 1979 Multigrain bread ($10). A bit pricey but not too extreme. Everything was tasty and good quality.

Stopped in for a quick couple of pastries before running errands. Small inside but orders were quick. Friendly staff and plenty of bread and pastries to choose from. Can't forget the coffee too (la colombe). Went with chocolate croissant and a focaccia like pastry with roasted tomato's (forgot the name). Chocolate croissant was so flaky and rich where the focaccia was light and salty. Perfect sweet and salty combo.

We were back in town visiting family again when they told us about this new bakery that just opened a few blocks away. Publican Quality Bread. We walked over and had a hard time picking just a few of the fresh baked pastries. We settled on an almond croissant, my personal favorite, the kouign-amann and their seasonal strawberry cream cheese pastry. They change the fruit with the season. We loved all of the pastries. Their kouign-amann was lighter and crispier than the one from my favorite place back home. Also instead of the top being more caramelized, the bottom was more caramelized. Still delicious! The surprise was the strawberry cream cheese. That pastry was crispy, creamy and sweet. Almost addicting. They also have a nice selection of fresh baked breads too that we definitely have plans to try on our next visit to Publican Quality Bread.

In my opinion bast bakery in Chicago. I may not be from Chicago but I go anywhere and everywhere for food eats. One thing I take pride in is my love of baked goods lol. This place bakes with love, care, and appreciate for the art. Thisbis probably why they got a James Beard. The people/ service here are great and if they ran out of something your looking for? They will tell you the next time they'll have it. Come early because the stuff goes quick. I wish I could share pictures of the my loot but I ate it all. I couldn't help myself lmaoo.

Jambon beurre and chocolate orange morning brioche
    Lucy S.

I got a jambon beurre and a chocolate orange morning brioche. I couldn't help taking a bite out of the sandwich before taking a photo. Despite only having a few ingredients, it was super flavorful and the bread was crusty on the outside and chewy on the inside without being tough. The price seems a bit steep at $13 for a sandwich but if you're a light eater, it'll last two meals. I normally don't like chocolate and orange together, but they actually worked really well here and the chocolate flavor was quite prominent. I would definitely come back for the sandwich!

Fantastic sourdough breads. They are delicious and of great quality. I especially loved and recommend the olive loaf!

    Pastries!

I can only speak for their pastries because the one time I went, I went too early and didn't know they don't sell bread until 9am daily. Bummer. But the pastries were really good. I got an almond croissant, quiche, chorizo danish and another savory pastry. The savory pastries stood out the most to me!!

I've been a customer of almost 10 years and have been obsessed since they first opened their doors at a different location. I literally live an hour away without traffic and even longer with traffic, but I make sure to stop by or send someone else to get it for me at least once a month or more. I love the amazing cakes that are so delicious and unique but on top of that, it is Asian owned, LGBTQ supporting, etc. A lot has changed since their little storefront with no seating. The bakery is now a full on cafe and I'm so happy to see how much they've grown and how successful they are. And while it is glorious, I will say I miss the sweet neighborhood charm and great customer service it used to have. Getting in touch with the bakery through phone or text can be tough and to be honest, sometimes one of the people working there is kind of...very mean. It had me questioning if I should keep coming back. I just love this bakery so much though and being raised by parents that had a small food business, I can't help but want to support. I had a particularly difficult last minute request for the bakery a few weeks ago and I was reminded why this place is so great. It had been YEARS since I made this specific request, which was an order for a slice of cake for every flavor and a cupcake for every flavor. This is a BIG and time consuming request, especially if it's last minute. Unfortunately I come to the city whenever the traffic isn't atrocious, so it's always last minute. Dom absolutely pulled through though. Even though there were other employees there (I saw two others but one disappeared and then another male was kind of walking around the cafe and such), Dom took this giant request and fulfilled it himself. The other gentleman (not the mean person previously mentioned) was actually who I made the request to, but he told Dom to do it. I was kind of confused why they didn't do it together but idk, maybe the other guy isn't allowed to handle food? Who knows. Regardless, this request obviously took a long time and the line was getting longer; people were getting a little restless but Dom stayed calm but was swift. I swear he was moving faster than most people in the industry could with a cake knife like that. He was not impatient or rude to me at all. He was just there to do his job as fast and well as possible. It's so rare to see that type of work ethic. He is also so obviously proud of the bakery and the food they serve which makes you feel good about being a patron there. So although I continue to have an unpleasant experience with one particular employee there, Dom keeps my love for this bakery alive. He reminds me of what this bakery was like when they first opened their doors. I hope Dom is cherished there and I bet he is considering his work ethic. I will continue to support this bakery and I recommend everyone else to support as well. It may not be that small little shop anymore but Dom is a reminder of the heart of the place.

Thankfully they still had their famous breakfast sandwiches by the time I ordered (even though they normally stop selling them at noon). Got a couple drinks- Ube Latte and the Corn Maiz Tea Latte. I'll preface by saying that the Corn Maiz drink was my favorite thing I got from Kasama. It has a strong corn flavor that blends perfectly with the milk tea. This is a 10/10 no notes. Ube latte was also tasty. For food I ordered a ton of things: -Longanisa Egg and Cheese Sandwich w a hash brown: was surprisingly just okay IMO. Egg is very uniquely fluffy, more like a steamed egg than a scramble! The rest of the sandwich was tasty but nothing special. -Filipino Breakfast Platter w both meats: the Tocino is delish! IMO the better of the two breakfast meats. Garlic rice is good, but i always love garlic rice. -Italian Beef Eggrolls: so crispy and delicious with the gardeneira dipping sauce! Weekends only item- be sure to try! -Lumpia: so crispy and flavorful, they really fry things well here. -Matcha Pandan Eclair: the choux was pipped on top, and was so fluffy and delicious. The crispy rice inside the shell added a fun texture. This was my favorite pastry! -Truffle Croissant: lamination was good, flavors were a bit weird. Was overly sweet from the rock sugar + honey, so much that it overpowered the truffle IMO which is hard to do. -Guava and cheese ensaymada: very fluffy brioche with yummy filling. This was good, really wanted to try the ube one but they were out :( -Ube and Huckleberry basque cake: very rich! Was suggested this instead of the ube ensaymada and it was definitely more huckleberry than ube. Tasty though. Overall this spot was good and certain things (corn maiz drink, pandan eclair, Italian beef eggrolls) were worth the wait while others are overhyped. I would definitely order ahead next time for take out or sit inside- cute indoor and outdoor seating options!

I bought 3 and my friend got 2. Calamansi cream + pistachio paste danish was my favorite. The Calamansi cream was the perfect texture and density with a fragrant citrus note. When I took a sip of coffee afterwards it made my coffee taste like I was drinking fresh orange juice. The pistachio is more cake like inside than full paste and isn't too sweet. Flaky dough, soft pistachio center and creamy top with a sharp citrus cut. Peach + raspberry Melba danish. The peaches were soft. I'm not familiar with a Melba dessert but the center of this was almond paste which is not my favorite but if you like almond and tart danish it would hit the spot. Raspberry espresso cream cheese cinnamon roll was a fun fruity twist to a cinnamon roll. Couldn't really tell there was espresso though. Blueberry lime cheesecake danish. I also liked this one because of the lime. It really cuts through the heaviness. The fruits on top were also fresh. They also have one day old blind boxes. I grabbed a 6 piece day old box to go and it was actually 6 different pasteries, half sweet and half savory! It only repeated 1 of the pasteries I had originally tried so I'm excited to try more, especially the savory ones. It's an amazing deal if you just want to try a variety of flavors. Tried the Hot dog danish - really good! Upscale pigs in a blanket vibes. The tiny fried are seasoned perfectly and add a fun crunch. I went on a weekday and there was still a good selection of pastries left around 11am. The staff was super nice and helpful as I struggled to make a decision. They shared that the strawberry milk croissant was their bestseller, so I opted for that. It was filled with fresh strawberry mascarpone and fresh strawberry puree. Despite the croissant's decadent appearance, it was not at all too sweet. I'm not typically the biggest croissant fan (I know, I know, no one is perfect) but this pastry blew me away. The filling was super generous without overpowering the delicate dough, which was baked to crispy perfection. Let's get the logistics out the way: yes if you show up when they open at 9, there will be a line, but it moves quickly! I'm usually out with my order by 9:25! I have a huge sweet tooth and let me tell you the savory pastries are my favorite. I will not visit without getting at least one miso mushroom pastry. I absolutely hate eggs and the jalapeño popper pastry is so good, I barely noticed the egg in it until I'd eaten half of it This place is the TRUTH. Every pastry is flaky, every bun is fluffy and the flavor combinations are so unique. Let me stop typing so I can go stand in line!

The cake tasting was a wonderful experience, giving us plenty of delicious options to choose from while helping us create the perfect cake for our special day. Throughout the entire process, their communication was outstanding. They kept us informed every step of the way and worked directly with our wedding venue, "Firehouse Chicago", to coordinate the delivery and logistics. Everything was handled seamlessly, and our cake arrived exactly as planned without a single issue. Planning a wedding can be overwhelming, but Bittersweet's professionalism, organization, and proactive approach gave us one less thing to worry about. Their attention to detail and commitment to excellent customer service truly stood out. One feature we especially love is that they keep the recipe and design of your wedding cake on file. Every anniversary, they can recreate your wedding cake or a cake in any size you choose. We've continued this tradition, and each anniversary cake has been just as delicious as the original while bringing back wonderful memories of our wedding day. If you're looking for a bakery that is responsive, dependable, and delivers an outstanding product, I highly recommend Bittersweet Bakery for your wedding cake or any bakery needs. They responded promptly to our questions and requests, unlike some businesses that never replied to estimate inquiries. Their customer service and quality were truly exceptional. A heartfelt thank you to Samuel who conducted the Cake Tasting and the entire staff at Bittersweet Bakery for helping make our dream wedding a reality. We will always be grateful and look forward to celebrating many more anniversaries with your incredible cakes.
