This place is definitely a fusion, and I noticed both the tonkotsu and house special had a Vietnamese fusion to it. For those of you who have had hủ tiếu, I would say the Tonkotsu is a creamier cousin. House special had a bit of a Tom yum kick to it, loved it! My only complaints were the waiters did not come by frequently to resupply water, and the area wasn't the most bike friendly-- not too big of a bother. You just have to park your bikes elsewhere because the space offered is fairly small. We arrived during peak dinner hour, but the restaurant was very spacious and clean; there was absolutely no wait time, and we were delivered our food promptly. My family came here on a weekday for lunch for a graduation party. There was only one other party there besides us. Service: 3/5 We made reservations for our group of 14 and when we got there, the tables were not set up. I understand that they were still in a soft opening phase, but their service was incredibly slow. I know we had a large party, but took about 40 minutes to get all the food out. Some members of the party finished their whole meal before others got their food. I also wanted to share that they might be understaffed and we feel bad for the waitress. She was the only person in the front and she was taking order, refilling broth, bringing out our foods, and answering the phone. If they had a full restaurant, I don't know how they could have managed this with just one server. Food: 3/5 The food was decent. My point of reference is Boiling Point, and I think BP is better. Their hotpot was flavorful and the dipping sauce for the meat was good. Their steak however was almost inedible (see photo). The steak was 60% chewy fat. We had two people in our party order the steak, one was decent, the other was terrible so they need to be more consistent with their cuts. They ended up comping the fatty steak so we're grateful for that. My advice would be to not order a steak at the hotpot specializing restaurant. Lastly, I just wanted to mention that this place had a Yelp check-in for a free drink. The check-in was active on Yelp and did not have an expiration or anything. They have a variety of different food on their menu. I got to try their shabu and the beef garlic noodles. The beef was so so tender and soft! TDLR: Experiences were progressively worse due to service - will not be returning. 1st visit: Husband and I went because he was craving hot pot and I ramen. We got curry hot pot and miso ramen. I say the ramen was 5/10; it hits the spot in terms of cravings but it wasn't very deep in flavor - would not order ramen again from here based on that. Service was slow but tolerable. 2nd visit: In short, I was physically hurt by a server. I understand and overheard the servers telling other tables that they were understaffed. (I think they were down at least 1 staff member, comparing to last visit.) However, in the server's rush, he pushed into a chair, which resulted in sandwiching my arm in between two arm rests of their metal chairs. There was a lot of pressure and my bicep area was hurting for a good couple hours afterwards. In addition, because the chair was angled to push down on my arm, everything on the chair (umbrella and menu) fell.
