Bun Bo 533 is tucked away in the corner of a smaller plaza. There's plenty of parking. This spot is hidden, but I'm glad I found it. The interior is big and aesthetically pleasing. They have nice flower decorations all around. They have tables for longer groups which is nice. They have a lot of the menu and I got to try their spring roll and bun bo hue. The spring roll tasted nice and fresh. The bun bo hue comes with a veggie plate and shrimp paste. The soup was stacked with pork and brisket. The broth was nice and hot. I enjoyed the flavor. It warmed me up. There was only one other table eating besides us. Once we got all our food, we weren't checked on at all. Their food is good so I'm hoping they get more customers. I'll definitely be coming back for my future soup noodle craving. read more

Welcome to Day 5 of OC Food Journals, where I try a new place every day so you don't have to. Today's stop was Bun Bo 533, a recently opened Vietnamese restaurant that I was excited to try. Unfortunately, after visiting, my first thought was that this place might have opened a little too soon. When I went in April 2026, there were still construction materials around, and part of the restaurant didn't even feel fully finished yet. It gave the impression that they were still trying to get everything together while already serving customers. I always want to give new restaurants a fair chance because opening a new business is not easy, but the food itself also needed some work. I tried their bún bò Huế, and unfortunately, it was probably one of the weakest versions I've had in Orange County. The biggest issue was the lack of flavor. It honestly felt like I was eating noodles with water. I added a lot of mắm and other sauces hoping to bring the dish back to life, but even after trying to adjust it, it still didn't come together. The bún thịt nướng had a similar issue. The majority of the flavor came from the sweet fish sauce they provided on the side. Without that sauce, the dish was extremely bland. There are so many places around OC that serve this dish well, so this was a disappointing experience. If you're craving bún bò Huế, I would personally spend my money elsewhere. Places like Ngự Bình or even Fusion Corner on Beach Boulevard, which surprisingly has a good version, would be better options in my opinion. I do think Bun Bo 533 has room to improve. New restaurants need time to adjust, and hopefully they can revisit their recipes and bring more flavor into their dishes. However, considering the price wasn't especially cheap, I think there are better choices around Orange County for the same amount of money. The restaurant has potential, but between the unfinished space and the lack of flavor in the food, I wouldn't recommend it right now. Hopefully they can improve because Vietnamese food has so much room for great flavors, and I'd like to see them find their footing. read more

Found this place on Yelp. It's a new owner and business and I like that they're not in little Saigon. Bun Bo hue was just ok. 3.5. It lacked a little bit of taste / flavor. I called in to order after their grand soft opening, excited to try their Bun Bo and Vietnamese crepes--only to be told, "Well, we don't have Vietnamese crapes now because no one in the kitchen knows how to make it." Odd choice to put it on the menu if you can't serve it, right? Still, I decided to give them another shot in person a bit later and went in to try their Bún Bò Huế and Bánh Canh. The restaurant was nearly empty, but it took forever just to get someone's attention to even sit down. With only a couple of other small tables occupied, it seemed like one person was juggling the entire floor. By the time someone finally took our order, I had to rush through my meal because it had already eaten up most of my lunch break--about 35 minutes waiting and still no food. When the food did arrive, it was subpar. The broth was bland, the meat was tough and not stewed long enough, and some cuts were chewy and cut against the grain. My friend and I both agreed it was disappointing. The extra star is for the fact that I can see they are trying. The restaurant looks clean and nice, good ambience. The server lady seemed very apologetic and earnest. I just feel like they spent a lot of money on the aesthetic and not enough money on hiring staff for the basic level of operation needed for a restaurant. No excess oil, no heaviness -- just disciplined flavor and balanced lemongrass. Veggies were fresh and crisp, which is the fastest way to measure whether a Vietnamese kitchen takes itself seriously. Noodles had the right bite. Portion size was generous without feeling sloppy. The pork feet were a standout. That said, the meat was very inconsistent. Some pieces were tender, but others were chewy. My bowl also had two pieces of meat that were very dark and had a sour taste, which really put me off. The large size costs $18, (already discount 15%) which is a bit high compared to other places. This place was an absolute disaster from start to finish. We stood at the entrance for nearly 5 minutes before anyone even acknowledged us, and when they finally did, they told us to "sit anywhere," but every table was still covered in trash and leftover food from previous customers. We verified our order twice with the server, and it still came out wrong after a long wait. The utensils were dirty, and we even noticed they reuse the veggies that are sent out to other tables, which is extremely unsanitary. They didn't even have satay for the Bun Bo. What kind of Bun Bo place doesn't have satay? When it came time to pay, they overcharged us for 4 large bowls when we only ordered 3 small and 1 large, and even then, all the bowls were the same size. When we asked which was which, the staff couldn't tell us. Between the filthy tables, incorrect food, slow and rude service, and shady billing, this place is a total scam. New spot close to home that I've been eager to try. They finally opened a few days ago so I decided to stop in after work and ordered the medium bun bo hue with only meat and cha. The cha is a combination of shrimp & pork and the meat is good quality. They offer medium and large sized bowls, but the medium was plenty with lots of noodles. The price is good, $12 for medium, $15 for large. The service is friendly and the establishment is cozy & clean. I would recommend this place and will be back to try other dishes. My kids and I were really excited to try this place because we always go to Ding tea and keep waiting for its opening. We went on a Thursday after school pickup 3pm. The restaurant was dead with a couple of people waiting for to go. We walked in stood there for 10 mins with no acknowledgment by the older man waiter. My kids were confused. He was helping a togo customer and when he was done he just went back to his reception area and didn't even come to us. It was soo uncomfortable standing there. Wanted to leave but kids were hungry. Even the togo people felt sorry for us, they kept looking at us. Finally after what seemed like forever standing, he comes over and asked if we are ordering togo. I was like, noo we want a table. He then said it will take 35 mins to get your food. I was in shock. He pointed to the people in the restaurant and said they are all waiting 35 mins to get food. C'mon you are a bum Bo restaurant, it shouldn't take 35 mins to get a bowl of bun Bo. Absolutely ridiculous and unacceptable. We left and went to Ghien Bun Bo, it took literally 3 mins for us to get our food. And it was delicious. When you open a new restaurant, you have to be equipped and ready. You have to train your staff properly. I'm sorry, we will never return. read more
