For sure my favorite pizza place on the South Hill. We shared the balsamic Brussel sprouts and pi bites. Both were delicious. I think by this point, I've had almost every pizza on the menu. I've been to Republic Pi a couple of times, and overall, I like it. The pizzas on the menu are pretty good. The brick oven, thin crust, and a good variety of toppings are all things that help make a good pizza. However, there are some things that I find not so great. First, although, as I stated above, the pizzas are pretty good, they are VERY greasy. Since they use a brick oven, I'm not really sure why they find it necessary to use so much oil. Also, the pizzas need actual seasoning before they are brought out. Having crushed red pepper on the tables is not a substitute for seasoning the dish you are preparing--you don't omit seasoning your pasta or steak, so why would you do it with a pizza? The toppings simply needed to be enhanced by seasoning them--simple as that. Second, if so many patrons complain about your staff, why has this not been addressed yet? The owner/manager has responded to some reviewers by saying that they will retrain their staff accordingly, but it doesn't seem like that's been actually done, at least not effectively. Our waitress was too aloof, and just lacked basic professionalism. She never asked us if we wanted refills on our drinks, even though they were almost empty. Also, when one of my fellow diners tried to talk to her in order to compliment the crust, she totally ignored him. Consequently, it was really awkward and I felt so bad for him because he is a generally shy person and went out of his way to be kind and friendly, only to be met with complete ignorance in return. My daughter claimed they had the best cheese pizza she'd ever tasted, primarily because she asked them to use a light hand on their red sauce and they did so. I had the South Hi which I very much enjoyed and my nieces split their version of a margarita, although I don't remember what they called it. We sat outside and I also enjoyed a nice glass of rosé. If the 6 inch pizza is a sample of their bigger pizza, then wow. So yummy! The edamame is seasoned. I loved it! The Pi bites with dip was a generous portion. They are the rudest restaurant I have been to in forever. We called ahead and we were told they do not take reservations but, they knew we were coming so when we walked in the hostess told us we can not be in There and we need to leave! Before we even could explain why we were there. The rest of our party was already in there. She was extremely rude and told us to leave immediately. Then we all waited outside in parking lot for our table. Not sure how they even had our numbers to text us. Because they wouldn't even take time to talk to us. We were told that "Jesus Christ we are in the middle of a pandemic". There is a lot more to the story... we will never ever give a dime to this place. I've been very happy with the pizzas I've gotten here and would probably give them 5 stars for taste. I recently, however, went online to look at their menu so I could call in an order and then pick it up. I found they are playing the new game many restaurants are trying out and that is they don't post prices online. I'm left guessing what an item might cost or putting together an order, then calling and requesting prices, then being tied up on the phone as I adjust the order because, like everyone, I'm on a budget. It's Whack-a-mole with choosing, being told the price, re-choosing, add this, take away that.... it's exhausting. Honestly, one time was enough doing this. I'll skip them next time I want to do a take out order if they continue to not post their prices. There are other places close by that I'll call in an order too. Ones that post their prices online. Went to Republic Pi with family today for lunch. The pizza was wonderful, the salad not so much. We ordered The Republic pizza which was crazy good. They even made us another one because there was a small hole in the pizza dough (they made it at their own discretion)! The salad was somewhat plain, which was disappointing. We ended up getting the Wilson, 30th off grand, and Waikiki and of course the Dalton pizza which was by far the best one there!!! The location of this place is nice. There's a huge parking lot, and it's easy to get to up on the south hill! Finally a new place in the neighborhood! I've eaten here about four times since they opened last week and everything has been exceptional. From the beer to the pizza crust and everything in between. Well the food here is absolutely delicious! The drinks weren't my style but my husband thoroughly enjoyed his. My only minor complaints were the waitress told us the meatball appetizer would be 6 larger meatballs cut into halves, and what we received was 9 chunks of meat that may have been part of a meatball at one point, and while delicious, didn't make much for a 4 person table. Republic Pi is conveniently located in the Manito Neighborhood, making it a great lunch stop before walking around Manito Park and visiting the rose gardens. They serve some of their own unique artisan pizzas as well as some pizzas that are also popular at the Flying Goat. Cliff Park Brussel Sprouts- WOW! They take fire-roasted to a whole new level. I thought I was the only one who liked my roasted veggies black and charred, apparently I was wrong because that's how they serve them and they are a HUGE hit. They come with bacon bits... as if this appetizer could get any better. Wood Fired Pizzas are the best pizzas. Hands down. Cooking in a wood-fire grill allows the pizza to cook evenly and it adds that firey/smokey flavor to the crust. We tried the Manito with rossa sauce, fresh mozzarella, and basil. I am all about a classic, low maintenance pizza. This is the best way to judge if a pizza joint knows what they are doing. Order a classic, with light toppings and let the sauce, cheese, and crust do the talking. This was our first time at a Republic Pi although we've been to the Flying Goat several times. We ordered the Montrose Dumplings to start which were very good, not spectacular but good. For pizza, we had the Waikiki which was good but more sauce than toppings. Lastly, we ordered The Bluff which was delicious! The Brussels sprouts were on point! The service left something to be desired as did the people waiting for tables who were practically sitting on us in the bar but the food was delicious. Found this place randomly and we were not disappointed. Tucked away in a random parking lot is Republic Pi.welcoming entry with a good vibe are there to greet you. Fantastic wood fired pizza and beer! There is a great and extensive beer selection and I was happy to see my favorite beer from Georgetown here. You'd be hard-pressed to NOT be able to find a beer or cider to your taste. Looking at the pizza menu, literally every single pizza sounded SO GOOD. Lots of combinations of sauces and cheeses and meats and a couple with truffle oil!! After much debate, we decided on the #37 and the Wilson. 10/10 recommend both of them, though I imagine that you will also have a hard time deciding which of the delicious pizzas to get. Didn't get the chance to try to Pi Bites, but hopefully next time! We came on a Friday at 6 and got seated in 10 minutes, which is not bad at all.
