For sauces, I get spicy miso and eel sauce to balance everything out since the spicy miso is more salty and flavorful. What I really like about Uroko is that they hand-mix your protein in a bowl with your sauces, which helps distribute the flavors throughout the protein. My only note about Uroko is that, in my experience, the rice sometimes has chunks of mushy rice. I think this could be because the rice pot isn't stirred frequently enough. Some other poke places I go to mix their rice before preparing each bowl, which helps keep the texture more consistent. Overall, I would highly recommend Uroko if you're in the area.
