After my experience, I think the statements are a bit exaggerated, although I do give it high marks. The name Grindstone cowboy is a nice play on words. First, they are a coffeeshop with a bar and deli type items, so grindstone fits well with the title. Grindstone Cowboy is a nice play on Rhinestone Cowboy, the song by Glen Campbell in the 1970s. The western feel of the restaurant complements the name. There is also a vintage store attached to the restaurant/bar for those who happen to like a little shopping with their meal. I had the BLT and she had the chicken salad sandwich. I will say I am not a huge fan of chicken salad, but I could eat this one (would not be tops on my list, but I could do it). The BLT was very nice. I added avocado and don't regret that decision. I thought the bread and bacon choice was on point. A heirloom tomato would have popped this up another notch. Overall, enjoyed it. I do feel the pricing is a bit high for a small town diner. Perhaps it is as popular as the social media post suggested? I did pay in cash to avoid the 4% credit card fee. Would I return? I would not go out of my way to get back here, but if I was passing through, I would certainly consider another go if I was in the mood for a sandwich.

I met Madilynn McReynolds at the counter whose smile lights up the room and was very welcoming. She told me they have been open for about 5 months and the smoker sits behind the restaurant. I can see where the name of the place comes from, it's about as big as an alley so seating is limited. I decided to go with the Cowboy Sampler and the sausage, brisket, and chicken option plus some beans and potato salad. The brisket is on point with a subtle smoke flavor, very tender, moist, and a nicely seasoned bark. The chicken was tender with a light smoke and the sausage had a nice pork flavor, not overly seasoned, and the casing was firm. I really enjoyed the potato salad, very different flavor as it included chunks and pieces of green olives, sadly I wasn't a fan of the beans. They also make their own BBQ sauce, a sweet & smoky flavor and really compliments the meat. I also met the McReynolds family...was a pleasure to talk BBQ with Jeremy and Crystal, wonderful folks who are intent on providing a good experience for their customers. The signage is a little easy to miss, but I walked in to two friendly people eager to serve me lunch. They have a fairly large selection of hot and cold sandwiches, and a slightly more gourmet feel to the items and menu boards. I was torn between the chicken, bacon, ranch sandwich and the #1 combination sub, which comes with a variety of meats. I was encouraged to try the #1, so that's what I went with. They were happy to accommodate my modifications to the sandwich (no onions or tomatoes, please). I grabbed chips and a drink from the mini-fridge to complete my meal. The bathroom in the back is a little cramped and hard to find but clean and gets the job done. My sandwich was made fresh for me and brought to my table. I liked the crusty bread; it stood up well to the sandwich. The meats and cheese were sliced thinly and I could taste the different elements. For me, I think I would have preferred some greenery other than the shredded cabbage; the texture just wasn't my favorite. The pepper on top was also a little heavy and aromatic for my preferences. Nothing worth sending it back over, just a few small details. Overall, I appreciate the effort to create a sandwich shop like this one. I would return to try another sandwich in the future.
