Lechon, I must say was also a fine example of how seriously the chefs take their selection of ingredients - as I looked closer, it had the classic 5 layers (shown in my photo). Usually, this is the prime factor in the perfect roast pork - providing juicy layers of pork meat. Overall, this has been the best (new) meal we've had in a LONG time.
