If Yelp allowed me to rate municipalities I'd rate the City of Waco a 1/5, but Union Hall and Roni's Mac Bar may have been the best part of it. My Girlfriend and I were traveling between Austin and Dallas and wanted lunch in route. "Hey," my Girlfriend said, "There's this Tik Tok famous Mac & Cheese place in Waco, you wanna stop there?" I agreed, and next thing we knew we were driving through the shockingly empty streets of the 22nd largest city in Texas. I am not exaggerating when I say I do not think we glimpsed one Waco-ite (Wacoan? Wacobi?) until we made eye contact with the nice girl behind the counter of Roni's Mac Bar in Union Hall. While most ghost towns in movies contain a saloon and a brothel, this one apparently had a build-your-own Mac & Cheese Bowl bar. Roni's videos on Tik Tok have up to 23,000,000 views, so I was expecting at least 1/100,000ths of those people to be at the actual establishment. This wasn't the case. We were the only folks present for lunch that Sunday, but I gotta hand it to Roni's-- their Mac & Cheese platter DID live up to the Tik Tok expectations. It was like the Chipotle of Mac & Cheese. All the ingredients I chose tasted delicious, the girl and guy behind the counter were super nice, and it came out SO fast. They were advertising franchise opportunities, and if I were 10 years older with a net-worth 10x greater I'd seriously consider investing. We were so excited to eat here because mac n cheese is my companion's favorite food in the world. We liked some of it and some aspects were like just ok. We both got bowls (options are either a bowl of pasta or a sandwich of pasta). The noodles are elbow and we liked that. We prefer elbow over cavatappi like many places serve. The bowls are too big. Neither of us could finish them and threw away significant amounts of food which felt wasteful especially given this was rather expensive. There is no meatless option. So for the vegetarian this is a bit of a problem. Neither is there a tofu substitute. You are paying for meat. My companion combined cheeses cheddar and pepper jack. That combo was the bomb and tasted fabulous. We highly recommend it. He also got Italian sausage and said it was bad. Again disappointing given the price. I loaded up on veggies and topped mine with hot honey and my favorite mac and cheese topping: breadcrumbs. I love me some breadcrumbs on my mac n cheese. Unfortunately they forgot my breadcrumbs so it was a bit of a letdown. (Pic added to show breadcrumbs was mos def on the list on the receipt). We asked for tap water and they charged us $1.49 each but didn't tell us they charged for water. That was a bit odd. Our server must have been brand new. That is the only explanation reasonable for their behavior. So overall, it's a great concept, and still maybe needs some refinement. read more

I was super excited to try this place, I've passed by it lots of time visiting Union Hall and decided today was the day to get some Mac and cheese! This place exploded in popularity on TikTok so I was pretty hopeful about the entire experience. Ordering was super easy and fast on the kiosk, there's plenty of options and sides to choose from. Your base can either be a noodles or a grilled cheese, then you pick your cheese, protein, add ins, and sauces. I really like that they have gluten free options! They offer sides such as Caesar salad, cheesy broccoli, cheesy bread, or desserts like cookies or cheesecake. I ordered the Mac and cheese bowl with brisket, Gouda, bread crumbs, barbecue sauce, and garlic Parmesan. My order came out pretty quickly, and overall it wasn't too expensive. However, I wasn't blown away by the Mac and cheese bowl, it lacked any sort of flavor. The brisket was quite tasty, but there was barely any in the bowl. Very disappointing. I drove from Frisco to Waco on my birthday just to try this Mac and Cheese and it absolutely exceeded every expectation! It was absolutely delicious in every way, and the flavors were so complimentary that I thought I created the best meal by myself, but it turns out my wife loved her combination as well so it seems like you can't mess up at all here with whatever you choose. The cashier let us know what to get and was very helpful. Customer service was definitely a 10/10. I will have to say the max and cheese wasn't my favorite. The viral BYO Mac and Cheese joint is a little overhyped but still good! There are lots of combinations you can choose from from cheese to topping to drizzles. They even have gluten free noodles. I think the toppings get pretty dried out when it goes though the toaster. The service is fast and friendly despite the line so don't be discouraged if you were really wanting to try it. I stumbled upon Roni's when I was exploring downtown Waco and decided to check out Union Hall, a food court near the Hippodrome. The service was fast and friendly, and it turns out the lady helping me is training to be a manager up here in the mid-cities area (North Richland Hills). We had a nice chat while my order was prepared - it took maybe ten minutes, and then I received a text that my order was ready. The Texas Barbecue Mac and Cheese was hot, fresh, and tasty. There was plenty of meat, cheese, and sauce - the portion was enormous and delicious! They had options to order and pay ahead, as well. This sadly wasn't worth the hype and all the excitement that their FB reels drummed up for me. We made the trek out from Georgetown and while I was initially excited to "do up" my bowl there didn't seem to be nearly as many options as their reels highlighted. While the brisket and bbq sauce was a nice touch, I ultimately feel like I paid a pretty penny for meh food. Luckily I signed up for their loyalty program and got $5 off, but next trip I'll definitely be trying something else. read more

The only hand washing happened in intermittent 5-second sprinkle baptisms of the fingers, dried with the front of the apron, alternating with touching the food AND the edge of the trash can to move it out of the way. not going to lie i was so excited to try this place because i had seen it all over tik tok but it did not live up to the hype at all. starting off from the start i appreciate that they have different cheeses and toppings but since the options are limited its hard to choose a combo that will actually flow together. so i got a cheddar cheese bowl with chicken and onions topped with buffalo and ranch because i thought it'd mimic buffalo chicken. after about 10 minutes my bowl was ready. amongst opening the bowl it looked very yummy and i was ecstatic to dig into it. once i took my first bite the excitement quickly faded. the cheese was cold and not thoroughly mixed throughout the noodles which threw off the flavor for the rest of the bowl. i thought it had been maybe my tastebuds were off but my mom had tried it as well and said the same thing and had added that the noodles tasted just wet and soggy. upon this discovery i thought maybe the bowl i ordered was just a fluke and had went up to the staff to express my concern. i politely told the girl what was wrong with the bowl and if i could get a remake or a refund and she very quickly cut me off and said we don't do that here with no apology. i was very hurt because they seem very welcoming and friendly on TikTok but in person it just felt like the opposite, others around me were even asking about their TikTok and they just seem annoyed. after learning i practically wasted my money on mac and cheese i went to a place in the food hall that was next to roni's and the workers kept pointing and talking about me while i was waiting in line for the other place. it made me so uncomfortable that they took this approach and made me feel unwelcome in the entire food hall. this was my first time in waco and at union food hall but if i went back to waco id have to skip on ronis after how unwelcome i felt. read more
