There's some good tables by the window if your able to score one of those. Order up: -pozole soup -Turkey club which usually comes w sweet potato fries but subbed with -Cobb salad The club had a yummers sauce that def made it. The salad however was the star. It was lightly dressed and the add ins were fresh and quality. Good bacon crumbles, cheese, dates and beets, etc. Def way better than your usual grab and go food at airport. I guess for airport food, it's pretty good. But the three dishes I've tried doesn't really impress outside the airport. The beet salad with salmon had just too much vinaigrette that it over powered everything. Luckily, I took the salmon off and that was pretty good. The French fries I got as a side was not very crispy and kind of soggy. I came back on my way back from my destination flight as Denver is my connecting hub and tried the ramen. It looked good, mainly the bacon part, but everything else with it was anything but traditional ramen. At least the soup was warm and the noodles tasted like ramen noodles. The other toppings didn't work for me and it was a bit salty. Should of known it would be since they added bacon but the bacon wasn't bad. Bacon is never bad. But on ramen? It was a first for me. Great experience and food for an airport restaurant! The server was efficient and honest on what to order. The lamb sliders were delicious, and my wife enjoyed her turkey burger. Fries were nice and crispy. They brought me sweet potato fries when I ordered regular ones, but were very quick to replace them. I did not care for the curry mustard for the fries, but my wife did. Had a few hours layover in Denver and this was a perfect spot to sit and have brunch! I got seated at a single-person table with enough room to fit my carry-on luggage under the table. My server, Natasha, was sweet and attentive. The vegan take on pozole was delicious and the serving size is decent for one person, it is pretty filling. I decided to indulge in a breakfast burrito too. I got the one with chorizo, but they do have a vegan version of it as well. It was a good sized burrito and was well filled. Root Down satisfies my need to eat well and be attended to, even when I'm in an airport. This is the place to eat if you like food and you're in Denver International Airport. But be advised: There can be a wait! This restaurant is busy. We waited about 30 minutes for a table. So if you're in a hurry, you might want to skip Root Down. But if you have a couple of hours to kill before your next flight, then you should definitely visit. When I travel, I just want nourishing foods like salad. Root Down has a great house salad. It comes with arugula and romaine lettuces, grape tomatoes, pickled red onion, watermelon radish and pepitas. It's tossed in ranch typically, but I asked for the dressing on the side. They offer their salads whole or in half portions. I got the half house salad with a small bowl of posole. Yes, they have pozole here, and it's great! So brothy and warm, with lots of hominy. There is a kids menu here at Root Down. My kids for the almond butter pancakes with a side of sweet potato fries (a confusing and carby combination, but OK), and the mac and cheese with fries. The mac and cheese is your typical elbow macaroni with white cheddar cheese sauce. My kids both loved their meals. They have a large local beer menu, with lots of local draft beers. I got a glass of the 4 Noses IPA, out of Broomfield, and it was very good. Also: When you visit Root Down, be prepared to have the Beastie Boys song in your head the whole time. read more

I've always loved the food at the restaurant. Was delighted to find that this DIA outpost offers gluten-free bread!! The gluten-free sandwiches aren't premade, so there's a bit of a wait while it's prepared from scratch. I had a roasted chicken sandwich, which came with sweet potato waffle fries. Both were delicious! The GF bun was huge, and not toasted. So it did fall apart. This isn't uncommon with untoasted GF bread, alas. It's a nice little to-go spot, with sandwiches, drinks, salads, and a water bottle filling station. Counter person was cheerful and friendly. It's not inexpensive--$20 plus tax and tip--but it was a generous sandwich. read more

The ambiance was bar-ish type but we sat by the windows, which had a nicer atmosphere and view. The service was good. The hostess was friendly. And the server was kind and efficient. Denver International is smart--because there's so much to do in the Mile High City, they put a couple of local favorites right in the airport for you to try before you head home. We knew this and tabled Root Down and Voodoo Donuts for that occasion. Root Down has a seasonal menu with locally sourced, field-to-fork items--this assures freshness. What a break from the usual rut in the vast majority of airports.  (The idea that one can forget themselves in an airport is a revelation in, and of, itself!) Located in Terminal C, they are open from 6 AM to 10 PM and offer an all-day menu, as well as breakfast from 6 AM to noon. Fair warning, their menu does change. The items we enjoyed on our trip may not be the same next time. And Root Down at DIA is not the same as the one on 33rd Ave--make sure to check ahead and if you have concerns, call ahead. For us, we had to try items that really spoke to us. To start off, a Beet Down signature cocktail--gin, Aperol, beet shrub, lemon, and mint. Can't say I've ever had beet in my cocktail before, but the deep notes went well. I could see this drink working on the Italian Riviera, sipping it in the shade and watching the lights come off the Mediterranean. We went for the Banh Mi Turkey Burger--made with savory Thai and Indonesian accents--sambal cream cheese (!?), jalapeño, pickled carrot, cucumber, Thai herbs, Sriracha mayo, with sweet potato fries.  It may not translate for IG-worthy, but look beyond that - the ingredient list is well layered in every bite.  You are fulfilled with the turkey patty, but then it mixes well with all of the accompanying accents. Then, a revelation, their Rockfish Tom Kha--bamboo rice, carrot, snap peas, scallion, radish, and chili oil. Something like this can't be easily replicated or found--the rockfish was cooked to perfection, then lightly laid across the Tom Kha, a traditional Thai soup that is creamy and savory. This dish recalled the best of a regal South-East Asian aristocracy. A dish served to royalty. I can taste its mixture of rice milk, coconut, oils, radish--it's easy to get spoiled in life. Lauded as one of the best restaurants in Denver, we'd have to agree--there's something special that Edible Beats (the restaurateur) is doing here.  Denver International Airport is not just a transit hub, but a destination to savor the local culinary scene. I believe this is the best food I've ever had in an airport. I stopped here on my way home from a business trip and was very impressed. The staff was great, the wait-time was short (with quick-service) and the food flavors were excellent. I tried the Colorado Lamb Sliders and Jalapeño Cornbread and they were both extremely tasty. It was warm and comforting with a lot of fermented veggies which are great for gut health. I ate at the bar but the bartenders were not very welcoming or receptive. The service was bad. Quick and friendly service, decent airport eats with sit down service in a busy terminal. FYI, a wait of 5-15 min for a table during busy times, or find a seat at the bar. Overall, 4.0 rating for enjoyable experience, but expect to pay $16-20 for a sandwich and ~$9-10 for craft pint. Ordered their Beef Burger and a House Salad. Burger was cooked to order and tasty, served with fries and hit the spot with a cold IPA! House salad wasn't special, but good portion of greens mix; you can add protein if desired for add'l cost. When your at the airport and you are Gluten intolerant it is very difficult to find places to eat. Root down does have those options for travelers. I went her twice on my trip a couple weeks ago. Both times were ok. I felt the staff was rushed and not interested the first time and the second time was a better experience. The food is okay rather blah nothing to write home about. It served it's purpose. First time I got the burger with gluten free bun an sweet potato fries and it was flavorless. The second time was a bit better but I don't even remember the main dish, I did get the curry soup it was just okay. More flavor and spices might have made the meal more enjoyable to me. Very cool restaurant ambiance for an airport experience. I will say that the menu choices were very good and interesting combos but again just a bit more spice or savory or salt or something. read more

He had a beer and breakfast, but I couldn't sit still. I just had to tempt fate and see the vast foodless nothing located around the airport. Too old and irrelevant to even attempt to understand Colorado mountain woman fashion by shopping for clothes I don't need; I ended up flying home after a four hour delay foodless. With variety of sandwiches, burgers, salads and soups. you could add salmon, crispy chicken, or others to your meal as well. They do offer gluten free meals too. I love Highlands location and the delayed flight was a sign to head straight to the Root Down at the airport. Maybe it was an "off" night but it was a huge disappointment. I understand that it would still be the "airport food" and didn't expect much but sadly everything was almost below average - might as well eat at a true fast food place. I think it would be an ok spot just to hang out and to have some drinks and appetizers but I wouldn't recommend it for a full meal.
